| Hello Market Shoppers!
We had a smaller than usual winter market on January 10th due to the snow, but many shoppers braved the weather and returned home with good food our farmers brought. On January 24th we will plan to have a full winter market with lots of delicious items. Remember, the winter markets are from 10am to 11am.
During the winter markets, farmers choose their own method of selling; some bring only pre-ordered items while others bring a variety of products for sale on a first-come-first-served basis. In the sections below you can find all of the product and order information for each producer.
Here are a few exciting items that we will have this week in addition to our regular buffalo, pork, poultry, veal, cheese, coffee, baked items, & fudge :

There are a few exciting events coming up for anyone interested in sustainable agriculture and farming.
On January 20th, from 7 to 9pm The Chester County Chapter of the Weston A Prce Foundation will have a special meeting presentation titled, Nourishing the Whole Family and Raising Healthy Children at the Kimberton Arts Building in Kimberton. There is more information about the meeting at the end of this email.
On January 24th, there will be a celebration of local sustainable agriculture at the Down to Exhibit at the Chester County Historical Society in West Chester. There will be a panel discussion about our local food system from 5 to 7pm, followed by a "Mugs and Music" concert with a farmers' market favorite band, Hoots and Hellmouth. Proceeds of the event benefit Chester County Buy Fresh Buy Local. Again, there is more information about the event at the end of this email.
Don't forget to read this email to see what is available, make your list, contact the farmers to place your orders, and then come to our regular location between 10 am and 11 am on Saturday to pick up your delicious, local food. You might even see your neighbors and market friends!

Sorry we missed all of you at the last market. Weather unpredictability is just one of the many reasons why it is very important for you to Pre-Order during these winter markets. Please keep in mind that we do not have our own bakery or store front. We rent a kitchen to bake for the market. When we don't get pre-orders we have no way of knowing if we will be able to cover our costs. That makes it extra scary for us to commit to coming to the market when bad weather is predicted. Kindly email your order to us by the close of business day on Wednesday. That will give us enough time to shop for what we need. We bake on Fridays and have no way checking our email or buying any ingredients that are needed after Thursday by noon. Pasture-raised with no drugs. Our animals grow to maturity on pasture without the heavy grain feeding found in feedlots and confinement facilities today. Pasture raising provides our animals a low-stress, high-quality life, improves the soil, and helps maintain the landscape. We don't believe artificial fertilizers, pesticides, herbicides, growth promotants, hormones and antibiotics belong in our food chain, so we don't use them.
Best nutrition for us. Foods raised from naturally-enriched soils and forages without chemical inputs taste better, keep longer, and are more nutritious than the food products you can buy at the grocery store. Our pasture foods are lower in saturated fats, calories, and cholesterol, and are higher in essential fatty acids and vitamins.

Artisans Gallery & Café has entered into a series of partnerships with local suppliers and vendors to offer a variety of products which will benefit both the economy and support local and global charities.
One Village Coffee has roasted a wide variety of sustainable & certified specialty coffees exclusively for Artisans Gallery & Café. A percentage of the revenue generated from the purchase and roasting of these coffees will be used to support the following charitable initiatives;
- Work with coffee farmers in Nigeria to build 8 wells that will enable crop irrigation and supply clean drinking water for their communities.
- Assist The MAMA Project's 2008 Deworming Campaign in Honduras by providing vitamins and education in healthy living for 8 new children every day.
- Provide the means for 80 children to attend educational centers in Cairo, Egypt through our partnership with Stephen's Children. These educational centers offer health programs, meals, and schooling for those living in the garbage dumps of Cairo.

This veal is from the Miller's male dairy calves that Sue's son raises. It is currently on the menu at Restaurant Alba in Malvern, where the chef has said it is the est tasting veal he has had!

the highlands of Birchrunville, Chester County. Sue Miller and her
family caringly handcraft raw milk cheese from the milk of their
Holstein cows.

Recipe of the Week

2 medium onions, finely chopped
4 celery ribs, finely chopped or 1 celeriac bulb
2 medium carrots, finely chopped
5 garlic cloves, thinly sliced
1/4 cup extra-virgin olive oil
1/4 pound bacon, ground by butcher or thinly sliced and pulsed in food processor until finely chopped
1 pound ground veal
1 pound ground pork (not lean)
1 (6-ounce) can tomato paste
1 cup whole milk
1 cup dry white wine
1 cup water
1 teaspoon fresh thyme leaves
1 1/4 teaspoons kosher salt
1/2 teaspoon black pepper
. Cook onions, celery, carrot, and garlic in oil in a 6- to 8-quart
heavy pot over moderate heat, stirring occasionally, until softened,
about 5 minutes.
Add bacon, veal, and
pork and cook over moderately high heat, stirring and breaking up
lumps, until no longer pink, about 6 minutes.
Stir in tomato paste, milk,
wine, water, and thyme and gently simmer, covered, until sauce is
thickened, 1 to 1 1/2 hours. Add salt and pepper and remove from heat.

Join us as we explore: · The intricate relationship between nutrition, health and child development · How children can be well fed but malnourished and the key nutrients for brain development · How to keep your family healthy through the winter · How to do all of these things without spending hours in the kitchen or breaking your budget!
Demos of food preparation and ample samples will be available for tasting, as will recipes for kid friendly, nutrient dense foods!
Annmarie Butera is an early intervention educator. She has worked with children with special needs and their families for the past 16 years. In 2001, she became a chef, graduating from the Institute of Culinary Arts in NYC where she learned the important, often overlooked connection between nutrition and optimal health. For the past years, she has been working with families educating them about proper nutrition for their children, especially those children experiencing problems with immune function (ranging from chronic allergies to autism). She runs cooking classes for parents and children who are trying to eat more healthfully. Kimberton Arts Building 2208 Kimberton Rd. A
panel of local food system experts will lead a discussion about the
opportunities within Chester County, which 100 years ago was known as
"the bread basket of Philadelphia." Chester County is rich in wealth
and prime agricultural soils, yet only a small percentage of our food
comes from local sources. This panel will examine how we can overcome
the barriers that prevent us from having access to a greater abundance
of fresh, local produce.
