Hello Market Shoppers!
The fall weather is finally here and we have a jam-packed schedule for October: Second Saturday on October 11th, Native American Day on October 18th and Oktoberfest on October 25th- be sure to mark your calendars!
Tomorrow may not be a festival, but we will have great fall goodies like fresh apple cider, apples, and lots of greens and fall vegetables, not to mention our regular delicious pasture-raised meats. Fall is a great time for roasts. We have a chuck roast recipe at the end of this email. This week in the children's area we will be doing leaf rubbings and learning a little about trees. Lil Red's Kettle Corn will be with us too. Be sure to stop by.

What a week we have had- such unsettled economic times and contaminated Chinese formula. In times like these, "Think globally act locally" seems particularly relevant. There is little we can do to make sweeping change in the world, but we can take small, significant steps to nurture our own local economy that reflects our values of healthy food and healthy communities. As we enter a period of probable economic slow down, how can we make the most of our food dollars while still eating healthful, local food? Here are a few suggestions. 1. Use the tops of those beautiful beets and turnips. We have a few recipes to help at the end of this email to help. 2. Buy cheaper cuts of meat and slow roast them until they are fork tender and delicious. 3. Buy a whole chicken. You can get 2 meals for a family from a single chicken. With just a little effort (and a sharp knife) you can cut breasts off of a whole chicken for a stirfry or other recipe, then use the remaining carcass to make stock. You will have lots of meat on the thighs, leg and back for a hearty chicken soup or a chicken pot pie.
We encourage you to BYOB - bring your own bag -- and if you do, you can enter a raffle to win Market Dollars that you can spend with any vendor. Starting this Saturday, each week that you BYOB to the market, stop by the market table and fill out a raffle. Each week we will draw a winner and hand over the market money!
Finally, please remember not to park in the Family Dollar parking lot -- they've had police officers there ticketing market shoppers lately. There is plenty of free parking available in the Justice Center lot, just across the alley from the Family Dollar lot. We realize that some shoppers may have conditions that make it hard for them to walk from the Justice Center lot, so we have designated 2 disabled spots close to the market.

Barbara Shelly brings organic poultry, sausages, broths, chilis and eggs to market. Her chickens and turkeys are raised in an open pasture without the use of antibiotics or any other chemicals. In addition to grass, the chickens and turkeys are fed organic grains, vitamins and minerals. All the sausages are made with sea salt, unrefined sugar and organic seasonings.

Stargazers Vineyard and Winery are owned and operated by Alice and John
Weygandt. The vinifera vineyard, planted in 1979, is located just north
of Unionville, in Newlin Township, Chester County, PA. The winery was
built into the hillside in 1996. Following the European model of
growing, the grapes are grown and made into wine by the owners of the
vineyard. Stargazers uses Integrated Pest Management and sustainable
practices in the vineyard and the winery.Stargazer's will be at the market on selected Saturdays.

Ike and Lisa Kerschner grow high quality fruit that is normally not
available commercially. They grow 50+ varieties of modern and heritage
apples, seven types of Asian pears, 30+ kinds of peaches, and 30+
varieties of plums, as well as European pears, nectarines and cherries.

two goats he received as a Father's Day gift. As his herd grew, so did
his hobby of cheese making, leading to the birth of the farm. Shellbark
Hollow Farm is a family-operated business in Chester County, PA where
our herd of Nubian goats are fed a special dies which helps produce a
high quality milk.
We offer a variety of goat milk products including fresh chevre,
sharp chevre I and II, eight flavored chevre spreads, yogurt, kefir,

Recipes of the Week

|
Wine Braised Chuck Roast with Onions
This tender chuck roast makes two meals. Most
of the meat is sliced and served with onion gravy, accompanied by egg
noodles, and the rest gets shredded and saved for a warm beef salad.
You might want to round out the first meal with a green salad or sautéed spinach.
Active time: 40 min Start to finish: 4 3/4 hr
Servings: Makes 4 servings (with leftovers) or 6 servings (without leftovers).
4 lb boneless beef chuck roast
2 teaspoons salt
3/4 teaspoon black pepper
2 tablespoons vegetable oil
2 lb onions (4 to 6 medium), halved lengthwise and thinly sliced
2 large garlic cloves, finely chopped
1 tablespoon tomato paste
1 teaspoon chopped fresh thyme or 1/4 teaspoon dried, crumbled
1 teaspoon chopped fresh rosemary or 1/4 teaspoon dried, crumbled
1 1/2 cups dry white wine
1 cup water
Accompaniment: 1/2 lb egg noodles, boiled until al dente
Garnish: chopped fresh flat-leaf parsley
Put oven rack in middle position and preheat oven to 325°F.
Pat beef dry and rub all over with 1 1/2 teaspoons salt and 1/2
teaspoon pepper. Heat oil in an ovenproof 5-quart wide heavy pot over
moderately high heat until hot but not smoking and brown beef on all
sides, about 15 minutes total. Transfer beef to a plate.
Add onions to pot and sauté over moderately high heat, stirring
frequently, until pale golden, about 10 minutes. Add garlic, tomato
paste, thyme, rosemary, and remaining 1/2 teaspoon salt and 1/4
teaspoon pepper and cook, stirring, 2 minutes. Add wine and water and
bring to a boil. Return beef to pot, then cover tightly and braise in
oven, turning once after 1 hour, until beef is very tender, 2 1/2 to 3
hours total.
Let beef stand, uncovered, in onion sauce about 30 minutes.
If reserving some meat for beef salad,
cut off one third of roast, and, when cool enough to handle, shred and
toss with 3/4 cup onion sauce. Cool completely, uncovered, then chill
in an airtight container. While shredded beef cools, preheat
oven to 350°F and transfer remaining beef to a cutting board and cut
into 1/2-inch-thick slices. Season with salt and pepper and return beef
to sauce. Reheat, covered, 20 minutes.
Cooks' note:
Beef can be braised, sliced, and shredded, then returned separately to
sauce 5 days ahead. Cool completely, uncovered, then chill, covered.
Reheat sliced beef and onion sauce in pot, covered, or an ovenproof
serving dish covered with foil in a 350°F oven about 30 minutes.
