Hello Market Shoppers!
In celebration of the beginning of the fall, tomorrow we will have our annual Fibers Festival featuring local spinners and wool products. Angels Wool Farm will return with their delightful angora rabbits. This is a great event for children and families and children will have a chance to try their hand at spinning wool! We will have several other local spinners with lots of wool products. The weather may be a little damp, but we will set up extra tents so that everyone can enjoy the day and stay dry!
Music this week will be by the foot stomping Joe Hillman band- be sure to wear your dancing shoes to the market!
What a week we have had- such unsettled economic times and contaminated Chinese formula. In times like these, "Think globally act locally" seems particularly relevant. There is little we can do to make sweeping change in the world, but we can take small, significant steps to nurture our own local economy that reflects our values of healthy food and healthy communities. As we enter a period of probable economic slow down, how can we make the most of our food dollars while still eating healthful, local food? Here are a few suggestions. 1. Use the tops of those beautiful beets and turnips. We have a few recipes to help at the end of this email to help. 2. Buy cheaper cuts of meat and slow roast them until they are fork tender and delicious. 3. Buy a whole chicken. You can get 2 meals for a family from a single chicken. With just a little effort (and a sharp knife) you can cut breasts off of a whole chicken for a stirfry or other recipe, then use the remaining carcass to make stock. You will have lots of meat on the thighs, leg and back for a hearty chicken soup or a chicken pot pie.
We encourage you to BYOB - bring your own bag -- and if you do, you can enter a raffle to win Market Dollars that you can spend with any vendor. Starting this Saturday, each week that you BYOB to the market, stop by the market table and fill out a raffle. Each week we will draw a winner and hand over the market money!
Finally, please remember not to park in the Family Dollar parking lot -- they've had police officers there ticketing market shoppers lately. There is plenty of free parking available in the Justice Center lot, just across the alley from the Family Dollar lot. We realize that some shoppers may have conditions that make it hard for them to walk from the Justice Center lot, so we have designated 2 disabled spots close to the market.

Barbara Shelly brings organic poultry, sausages, broths, chilis and eggs to market. Her chickens and turkeys are raised in an open pasture without the use of antibiotics or any other chemicals. In addition to grass, the chickens and turkeys are fed organic grains, vitamins and minerals. All the sausages are made with sea salt, unrefined sugar and organic seasonings.

Stargazers Vineyard Brian & Jennifer Dickerson |
Stargazers Vineyard and Winery are owned and operated by Alice and John
Weygandt. The vinifera vineyard, planted in 1979, is located just north
of Unionville, in Newlin Township, Chester County, PA. The winery was
built into the hillside in 1996. Following the European model of
growing, the grapes are grown and made into wine by the owners of the
vineyard. Stargazers uses Integrated Pest Management and sustainable
practices in the vineyard and the winery.Stargazer's will be at the market on selected Saturdays.

North Star Orchard Ike and Lisa Kerchner |
Ike and Lisa Kerschner grow high quality fruit that is normally not
available commercially. They grow 50+ varieties of modern and heritage
apples, seven types of Asian pears, 30+ kinds of peaches, and 30+
varieties of plums, as well as European pears, nectarines and cherries.
In 2007, Ike and Lisa expanded to grow vegetables as well. Click here to read Lisa's essay on being a farmer - recently published in Newsweek! Recipes of the Week

Beet Top "Spanakopita" Roll
1 medium onion, finely diced Beet tops from one bunch of beets- chopped finely 6 tablespoons of butter 1 teaspoon dill 1/4 lb feta or goat cheese 4 sheets of phyllo dough (defrosetd)
Saute onion in 2 tablespoons of butter until the onions are soft. Add the beet tops and saute until totally wilted. Add the dill and remove the pan from the stove. When the mixture has cooled, crumble the cheese into it, and set aside.
Melt the remaining 4 tablespoons of butter. Place one sheet of phyllo dough on a work surface. Brush melted butter on the phyllo sheet and then place another sheet on top of the first. Brush with butter and repeat until all 4 sheets are stacked.
Spread the beet top mixture on the phyllo dough and then roll the phyllo into a cylinder.
Place the cylinder on a cookie sheet and bake for 30 minutes at 375 for about 20 minutes or until the phyllo is golden brown.
Process all of the ingredients in a food processor or blender until the hazelnuts arefinely ground. With the machine running, pour the olive oil in in a steady stream. The sauce can be stored in the refrigerator for up to one week. Bring it to room temperature before serving.
Wilted Greens with Garlic and Anchovies
1/4 cup extra-virgin olive oil 3 anchovy fillets, rinsed 4 cloves garlic, thinly sliced 1 head escarole or 1 head or bunch other sturdy leafy green, such as dandelions or turnip greens, cut crosswise into 1/2-inch-wide ribbons, washed and spun dry Salt and freshly ground black pepper 1/2 lemon
Heat a 10- to 12-inch sauté pan over medium-high heat until hot. Add the olive oil, anchovies, and garlic and cook just until the garlic is light golden brown, about 30 seconds. Add the greens and cook, stirring constantly, until wilted, about 5 minutes. Season with salt and pepper, squeeze the lemon juice over, and serve. Reprinted with permission from Molto Italiano Ecco.

Lynn and Carol operate a produce, hay, grain, and hog farm 85 miles
northwest of Phoenixville. Lynn was raised on the farm and has been the
owner/farmer for over 30 years. A small orchard compliments the
vegetables and berries grown on the farm. Lynn brings a variety of
delicious fruits including melons and grapes in addition to traditional
vegetables, and maple syrup. Hoagland Farm will be at the market selected Saturdays.

Peter Demchur started Shellbark Hollow Farm ten years ago with just
two goats he received as a Father's Day gift. As his herd grew, so did
his hobby of cheese making, leading to the birth of the farm. Shellbark
Hollow Farm is a family-operated business in Chester County, PA where
our herd of Nubian goats are fed a special dies which helps produce a
high quality milk.
We offer a variety of goat milk products including fresh chevre,
sharp chevre I and II, eight flavored chevre spreads, yogurt, kefir,
ricotta, honey biscuits and milk.
