Hello Market Shoppers!
Hanna may bring rain for the market on Saturday, but you will see smiles on all of the farmers' faces. We have had an incredibly dry summer and the rain will help all of the fall crops and the pastures too. Remember, we are a RAIN OR SHINE market. Some of the producers may opt to stay home, but most of them will be there. This week we are featuring a recipe for a Tomato Blue Cheese Tart - it is delicious and worth the effort to make.
If the weather holds, music this week will be by Joe Willson.
We encourage you to BYOB - bring your own bag -- and if you do, you can enter a raffle to win Market Dollars that you can spend with any vendor. Starting this Saturday, each week that you BYOB to the market, stop by the market table and fill out a raffle. Each week we will draw a winner and hand over the market money!
Finally, please remember not to park in the Family Dollar parking lot
-- they've had police officers there ticketing market shoppers lately.
There is plenty of free parking available in the Justice Center lot,
just across the alley from the Family Dollar lot. We realize that some shoppers may have conditions that make it hard for them to walk from the Justice Center lot, so we have designated 2 disabled spots close to the market.

Forks Farm John and Todd Hopkins |
Forks Farm will return on Sep 20.
Our farm philosophy:
Local, fresh, healthy and sustainable. Our goal is to be your local
source for fresh, clean, pastured poultry, eggs, beef, lamb, and pork
of the highest quality using sustainable farming methods that
contribute to the health of our customers, community and environment.
Pasture-raised with no drugs.
Our animals grow to maturity on pasture without the heavy grain feeding
found in feedlots and confinement facilities today. Pasture raising
provides our animals a low-stress, high-quality life, improves the
soil, and helps maintain the landscape. We don't believe artificial
fertilizers, pesticides, herbicides, growth promotants, hormones and
antibiotics belong in our food chain, so we don't use them.
Best nutrition for us.
Foods raised from naturally-enriched soils and forages without chemical
inputs taste better, keep longer, and are more nutritious than the food
products you can buy at the grocery store. Our pasture foods are lower
in saturated fats, calories, and cholesterol, and are higher in
essential fatty acids and vitamins.
Forks Farm will be at the market on selected Saturdays beginning at the end of June.

Recipe of the Week
|
Heirloom Tomato & Blue Cheese Tart
Makes 6 to 8 servings
1 sheet frozen puff pastry, thawed according to package directions or 1 basic pie crust
6 ounces Birchrun Hills blue cheese, at room temperature (or 3 ounces blue cheese and 3 ounces Shellbark Hollow goat cheese)
1/2 to 2 tablespoons whole milk or half-and-half
2 to 3 medium-size heirloom or other tomatoes
1/2 teaspoon freshly ground black pepper
1 teaspoon extra virgin olive oil
1. Preheat the oven to 400. On a floured surface,
roll out the puff pastry into a circle a scant 1/4-inch thick and about
10 ½ inches in diameter. Transfer it to a 9-inch tart pan. Pat into the
bottom and sides and trim the edge so it's even with the rim. Put it in
the freezer to chill for 15 minutes.
2. In a small bowl, using a fork, crumble the
cheese and mash together with the milk or half-and-half, starting with
1/2 tablespoon, until the consistency is spreadable but still has some
lumps of cheese. Set aside.
3. Slice tomatoes about 1/4-inch thick. Arrange on paper towels and blot to remove most of juices; set aside.
4. Remove pastry from freezer. Bake until light golden brown, about 20 minutes. Remove from oven and let cool about 15 minutes.
5. Spread the cheese mixture evenly over the bottom
of the pastry. Cover with the tomato slices in a tightly packed single
layer. Sprinkle with the pepper and drizzle with the olive
oil.
6. Bake until the crust is deep golden brown and
the tomatoes have collapsed, about 10 minutes. Transfer to a rack and
let stand for 20-30 minutes before serving.
7. To serve, gently slide a knife around the edges
to release any pastry that might be sticking, then remove the bottom
and place the tart on a serving plate. Cut into wedges and serve warm.
