Labor Day weekend is just around the corner complete with holiday picnics and barbecues.  What better place is there to stock up on great things to grill than at the farmers' market?  Of course naturally raised meats are great for the grill, but so are corn and peaches!  Look for our great grilling recipes at the end of this email.

Also next week, volunteers will be at the market selling tickets to PASTA 4 PACS Spaghetti Dinner. This event supports a great, local organization. More information here.

We have started using ghee in our gluten free items.  Ghee is a product found in Indian cooking.  Basically it is clarified butter, which means the butter is melted and separated from the milk solids.  With all the milk solids  removed it becomes 100% casein free.  This is our first attempt at commercially baking with ghee.  Please be patient while we tweak our recipes and as always, give us your feedback.  Ghee is very expensive.  Right now we are using organic ghee, which is more than 3 times the price of the butter we use.  We will have to raise our prices accordingly on products with ghee.  Ghee butter cream has a very lovely yellow hue to it.
 
I tried a new approach to the blueberry pies last week - add grated apples.  The hope is the pectin in the apples will help gel the liquid.  I have also switched from thickening blueberries pies with tapioca flour instead of spelt flour to make them less starchy.  I don't want the pies to be gooey clumps nor do I want them to run all over your plate.  We are striving for a happy medium.
 
We get a lot of requests for Vegan products.   Personally I feel that there are a lot of Vegan alternatives out there but not so many delicious gluten/casein free items, particularly fun things for children on special diets.  We will continue to make our Vegan Chocolate Chip cookies.  However, our secondary focus is going to be on gluten/casein free baking, not Vegan.  I prefer to eat and to bake with items that are closer to the way they appear in nature.  I usually do not make what I will not eat. I do NOT like Earth Balance or spreads that have to be whipped into butter looking substances.  We use Earth Balance to  make our Vegan Chocolate Chip cookies because I want to have at least one Vegan alternative, especially for Vegan children, but those cookies are going to be the exception, not the rule.
 
We are going to  keep our primary focus on conventional baked goods made with unconventional goodness!   Our secondary focus will be on gluten/casein free items.  My heart goes out to all gluten and casein allergy sufferers.  I hope I can bring some sweetness to your life!

Stargazers Vineyard and Winery are owned and operated by Alice and John Weygandt. The vinifera vineyard, planted in 1979, is located just north of Unionville, in Newlin Township, Chester County, PA. The winery was built into the hillside in 1996. Following the European model of growing, the grapes are grown and made into wine by the owners of the vineyard. We don't believe artificial fertilizers, pesticides, herbicides, growth promotants, hormones and antibiotics belong in our food chain, so we don't use them.

Best nutrition for us. Foods raised from naturally-enriched soils and forages without chemical inputs taste better, keep longer, and are more nutritious than the food products you can buy at the grocery store. Our pasture foods are lower in saturated fats, calories, and cholesterol, and are higher in essential fatty acids and vitamins.

Recipe of the Week

Grilled Corn on the Cob

Heat an outdoor grill or a stovetop grill to high. Peel back husks of corn, but do not remove. Remove all silk from corn and coat corn with cooking spray. Sprinkle corn with salt and smooth husks back into place. Rub each husk with water and place directly on grill. Grill, turning occasionally, until kernels soften and husks blacken, 10 to 12 minutes. Pull back husks and serve corn with butter.

Grilled Peaches with Fresh Raspberry Sauce

Bon App�tit | August 2007

Top with scoops of vanilla ice cream and a couple of shortbread cookies if you like.

Makes 6 servings.

 ingredients
2 1/4 cups (lightly packed) fresh raspberries (about 13 ounces)
3 tablespoons water
3 tablespoons sugar
1 tablespoon fresh lemon juice
3 tablespoons unsalted butter
1 1/2 tablespoons (packed) dark brown sugar
6 medium-size ripe but firm peaches, halved, pitted
 
preparation
Puree 2 1/4 cups fresh raspberries along with 3 tablespoons water in food processor until puree is smooth. Strain raspberry puree through fine-mesh strainer, pressing on solids to release as much liquid as possible; discard solids in strainer. Stir in 3 tablespoons sugar and 1 tablespoon fresh lemon juice until blended. DO AHEAD Fresh raspberry sauce can be made 1 day ahead. Cover and refrigerate.

Prepare barbecue (medium heat). Melt butter with brown sugar in heavy small skillet over medium heat. Remove skillet from heat. Brush peach halves all over with melted butter mixture. Grill until tender, about 8 minutes, turning occasionally. Serve with sauce.
