Raimat Albar Chard The Raimat has a lovely fruit-freshness highlighted with orange blossoms, tree fruit, melon, honey and lime leaf. Clean in the mouth with a creamy texture and soft acidity, bolder on the mid-palate with a rounded, lingering finish touched with almond.

 Porta Di Mola "Yellow Cello", Campania Italy, 2005
 

YellowCello A beautiful and exotic wine that is work seeking! Made from a grape that was revered by the Greeks and Romans--called Falanghina--this wine is a bit of an anomoly. Rich and quite unctuous as opposed to its more usual crisp style with honied, earthy (truffled) and mineral aromas with mandarin orange,ripe melon and beeswax notes. On the palate it is lush and smooth--almost oily with soft, exotic spice and clean on the finish. Dry and fresh but with the perception of ripe fruit sweetness.

 Angove's Nine Vines Viognier, South Australia, 2006
 

angoves viognier 06 Light straw in colour with exotic citrus, white peach, minerals, and warm spice aromas with tropical floral notes. Slick and seductive on the palate showing lime oil and hints of licorice and white pepper.
Refreshing and voluptuous--a deadly good combination!

 How Cheesy...
 Formaggio Ubriaco

Ubriaco cheese This is a hard cows milk cheese from (generally from Northern Italy) that has been brushed or immersed in red wine. Generally it's aged 6-10 months. One would expect it to have a wine-ish hue seeping in from the rind but it has a lovely creamy flesh with a distinctly purple rind with just the faintest hint of wine-colour soaking in underneath. It has a briny aroma similar to parmesan with fruity, nutty and smoky nuances with a very pleasing and distinct wine-y flavour. The texture is very firm and crumbly suited to an aged cheese. Ubriaco means "tipsy" or "drunk" in Italian and another interesting version called Ubriaco al Prosecco is brushed with Prosecco must (skins and leftovers from winemaking) giving it a delicate floral fruitiness.
Yuuuummmy!
Sounds like a perfect pairing to me.
Wine Pairing: A lush Italian red wine made from Cabernet, Merlot, Raboso or Nebbiolo or a Valpolicella or Amarone would be nice.
