Everyone in the Benton Park neighborhood of St. Louis is excited to have a new wine bar neighbor, Ernesto's! 
 
Sommelier Brian Hobbs honed his skills in Brooklyn, NY before coming home to St. Louis to manage Ernesto's.  You'll most likely find Brian behind the bar, always helpful and knowledgeable.  The wine list will be ever changing with rotating specials and exciting glass pours not found anywhere else in the city.  He welcomes requests and says he'll open any wine in the house for a purchase of two glasses.  This is an excellent deal for the adventurous wine lover who doesn't need a full bottle.
 
The love of wine is evident at Ernesto's and we are proud to have several of our wines call it home.  Current selections include Andrea Felici Verdicchio, Terre Domini Prosecco, Vinchio Vaglio Serra "Vigne Rare" Moscato and "Il Griso" Roero Arneis.  With Ernesto's as our neighbor you will often find Nathan and I in the fresh new space, and you can order any of our wines through them!  Cheers to Ernesto's!
What's In a Vintage?  
How important is the year of a wine?
 
VintageConsumer questions about the term 'vintage' are quite common.  Because of the way 'vintage wine' is used in reference to Port, many think it denotes some level of quality.  However, in most of the wine world vintage is simply the year posted on the bottle, indicating that all (or most) of the wine was made from grapes harvested in that year. 
 
Vintage can be important in wine selection, especially when talking about regions that have substantially varying climates from year to year.  The climate in Sicily for instance, is very steady from year to year, so vintages are not as important in Sicilian wine as they are in say Tuscany or Piedmont where temperature and rainfall can vary more. 
 
Ionia Atlantic is fortunate to work with small producers who are focused on quality and consistency above all else.  In a 'bad' year, our wine producers cut back on the quantity of wine produced and make the best with what they have. 
 
When a vintage receives a bad rating in the media, that often means discounts for the consumer.  After the press talked about the terrible weather for grape growing in Tuscany in 2002, we had to discount our Brunello di Montalcino so deeply we might as well have been bathing in it.  In reality, our Casisano Colombaio and Marchesato degli Aleramici Brunello 2002 are quite nice right out of the bottle.  They may not have the staying power of a 2001, but they also don't (or shouldn't) cost what a 2001 does either.  For this reason, knowing your vintages can be quite helpful in a restaurant setting.  Print our handy pocket size vintage guide to give you confidence in your Italian wine purchases!

Grapes Unlimited of San Antonio, Texas was founded in 2002 by Velizar Iliev. The company was created with only one goal; to bring the most unique and exotic fine wines from around the globe to the Lone Star State.

Velizar Iliev, a native Bulgarian, began his athletic career in Bulgaria at the age of 7.  Velizar moved to the U.S. in 1991, and by 1997 he was competing as a U.S. pentathlete. He competed for the United States in the Modern Pentathlon at the 2000 Olympic Games in Sydney, Australia and has brought a number of awards from national and international competitions home to San Antonio.  Velizar is a two time World Champion, Pan American Games Champion and two time National Champion.  We think Velizar and Grapes Unlimited will be a World Champion Seller of Italian wine as well!

We are pleased to welcome Texas and Grapes Unlimited to our ever growing list of states. Grapes Unlimited distributes statewide and we can't wait for our Texan friends to find Ionia Atlantic wine on their shelves!



Recipe & Wine Pairing  
Pasta Semplice (for 2)
 
2 large ripe home grown/heirloom/flavorful tomatoes - diced, in their juice
¼ medium onion, finely chopped
2-4 cloves garlic, minced
1 dried whole chili
handful of fresh basil, finely torn
olive oil, as needed
salt
pepper
 
Heat the oil over medium heat, breaking the whole chili in half and allowing it to heat in the oil.  As the oil comes up to heat, toss in the diced onion and garlic, and sauté until translucent.  Turn the heat off and add the tomatoes and basil.  Toss all ingredients until well mixed.  Set aside for a day for the flavors to meld, removing the chili pepper pieces before cooking.  Just before tossing with cooked pasta (recipe below), heat through and add salt and pepper to taste.  
 
 
Fresh Tagliatelle (for 2)
Note: a pasta roller or "pasta bike" is necessary for this recipe
 
3 cups flour (all purpose is fine)
2 fresh eggs (we use local, free range, vegetarian fed)
 
Simply dump the flour onto a clean working surface or into a large bowl and make a well in the center of the flour.  Beat the eggs thoroughly with a fork or whisk, and pour into the center of the well.  Work the flour into the beaten eggs slowly, thickening the mixture until it can be worked with your hands.  Continue working the mixture with your hands to make a dough that is just dry enough to pass through your pasta roller without sticking.  Quarter the dough and pass through the pasta roller, working from the thickest to the finest setting, making long strips.  You will most likely need to halve the strip when you reach the finer settings, making two strips per quarter. Use extra flour to make the dough passable if necessary.  Lay the strips out and cut into ¼ inch strips.  Submerge the pasta into adequately salted, rapidly boiling water for about 1 minute, depending on the thickness of the pasta (the fine settings take about 1 minute, in my experience).  If you dry the pasta, it will take more time.  labels
