The Wonderful World of Brachetto 
 
San Pancrazio BrachettoThe red Brachetto grape of Piemonte is causing quite a stir at Ionia Atlantic.  We liken Brachetto to a red version of the ever popular Moscato.  From the same region in Italy, both Brachetto and Moscato offer an irresistible sweetness.  Though Brachetto can be a still wine, both of our offerings are made as frizzante.   
 
Brachetto is light in body but heavily perfumed with a bright bouquet of strawberry and raspberry.  It is sweet without being cloying, and pairs perfectly with red berry or chocolate desserts. 
 
Vinchio Vaglio Serra "Nivasco" and Cantina San Pancrazio Brachetto are perfect for an after dinner drink.  With a low alcohol percentage they are a favorite for breakfast too!  Soak strawberries or raspberries in Brachetto and serve with fresh whipped cream and biscuits for an out of this world start to the day.
Break Out of (and into) the Box!
 
Kroara BIBI'll be honest, until recently I never thought this day would come.  Ionia Atlantic is now carrying boxed wine.  We will shamefully hide the spigoted box in the dark corners of our kitchens no more!

There are two basic types of boxed wine: Tetra Paks and Bag in Box.  Our Vinchio Vaglio Serra Kroara Barbera now comes in the Bag in Box variety, or BiB.  This tiny lightweight box is the equivalent of four bottles of wine.  It is composed of an airtight plastic bag inside a cardboard box, and a self closing spigot. 
 
Kroara is a fresh young red wine from Piemonte made from 100% Barbera grapes.  Its bright fruit and subtle acidity make it easy to pair with a variety of foods or just to relax with.
 
Environmentally BiB is a good option.  The cardboard can be recycled and the total package uses less material than the equivalent four bottles.  Additionally, its lighter weight requires less energy for transportation. 
 
The specially layered bag prevents air from reaching the wine after opening, therefore allowing you to enjoy an open wine over several days or even weeks.  Some people say the BiB helps them control their daily alcohol intake because they don't feel like they must polish off the bottle in one night to prevent waste.
 
I myself am extremely pleased that I can now relax with wine during my camping, canoeing, and beach trips.  Many parks, rivers, and waterways don't allow glass and this packaging makes it easy to take wine just about anywhere.  The weight is a bonus too on these active jaunts.  The Kroara BiB weighs 7lbs, while the equivalent four bottles would weigh in at 11lbs!
 
BiB wine is gaining in popularity.  That means more producers are offering BiB wine and therefore you are more likely to find good solid wine in a box.  It's not just boxed White Zinfandel anymore.  Now I'm not saying you'll ever see our Barolo, Brunello, or even mid-priced wines offered in a box.  Call me a traditionalist, but I think I'll always want my fine wine to come from a bottle (with a natural cork no less).  But for quality everyday sipping, the Kroara BiB can't be beat.  In most markets the Vinchio Vaglio Serra Kroara BiB will hit the shelves under $20.  Pick one up and enjoy today!  And tomorrow, and this weekend, and next week......
    
 
New Distribution! 
Illinois and Kansas

Ionia Atlantic Imports has signed two new distribution partners; Koerner Distributor Company in Southern Illinois, and Standard Beverage Company of Kansas. 

Koerner Distributor Company, Inc. is a locally owned company with ownership active in the day-to-day business. The Koerner family purchased the Effingham branch of Jul Fischer Distributors in 1982, dreaming of growth and prosperity. Relying on the hard work and dedication of their original staff of 12, Koerner began to show signs of success in its very first year of operation. That success continues today and now they have grown to be one of the largest distributors of fine wine and beer in the state, outside of Chicago. With one month of Ionia Atlantic sales behind them, Koerner has already exceeded our expectations by opening up dozens of new accounts! To our new friends in Southern Illinois we say Salute!

Recipe & Wine Pairing  
Pasta with Shrimp, Squash, & Mint
 
This is a pasta Kallie and I discovered outside of Palermo, Sicily, while driving towards Trapani to meet with our Sicilian producer, Curatolo.  Although it sounds strange to some, the mint works perfectly in this preparation, and despite the interesting method for preparing the base for the sauce, which I took from Rocco Dispirito, it is very tasty.  Enjoy this dish with a crisp white wine.  Curatolo produces two inexpensive whites: Mulinea Chardonnay and Mulinea Insolia.  Both wines would pair well with this dish, as well as Andrea Felici's Verdicchio dei Castelli di Jesi, and our newest addition, Castellari Bergaglio's "Fornaci" Gavi.  A last reminder: don't be afraid of the mint, and don't be afraid of the shrimp heads.  If you won't brave it, substitute the shrimp heads with 4-6 shrimp. 

1 lb pasta (preferably thick spaghetti)
1 lb medium shrimp, shelled with heads ON (about 20-24)
½ large yellow squash, sliced thinly into rounds
½ large zucchini squash, sliced thinly into rounds
1 generous handful fresh mint, chopped
½ medium sweet onion, finely chopped
3 T coriander seeds, ground
1 generous cup dry white wine (see recommendations below)
Olive Oil
Unsalted Sweet Butter (if desired)
Salt
Pepper


Heat your salted pasta water early, so that it's at a rolling boil when you need it. 
 
Heat a few T olive oil over medium high heat.  Season the shrimp with salt and pepper and sauté the shrimp until they're just pink (do NOT overcook the shrimp - better to be underdone at this stage).  Remove the shrimp immediately and set aside, leaving the oil in the pan. 
 
Remove the heads of the shrimp and reserve both the body and the heads.  In a blender, combine the heads and the wine and blend thoroughly.  Pass the blended mixture through a fine mesh strainer, reserving the liquid and discarding the solids.
 
Add another T or so of olive oil to the pan and heat over medium high heat.  Add the ground coriander and sauté quickly, while constantly stirring, until fragrant (a bit over a minute). 
 
Add the pasta to the water at this stage (or soon thereafter - the remaining cooking time is short)
 
Add a bit more olive oil and sauté the onions until translucent and soft, about 5 minutes.  Add the reserved liquid and the mint and simmer over medium high to high heat for about 5 minutes more, keeping an eye on your pasta.  If you desire a sweeter, creamier sauce, add a few T of unsalted sweet butter at this stage. 
 
Toss in the yellow and zucchini squash and cook for a few minutes (we like a more firm texture to the squash, so perhaps only a minute if you prefer firm texture as well). 
 
Toss in the shrimp to heat through, a minute or so, constantly tossing. 
 
Add the pasta to the sauce, tasting for seasoning.  Salt and pepper to taste and serve immediately.  ¡Buon Appetito!
 

Pair with Curatolo Mulinea Insolia or Chardonnay, Andrea Felici Verdicchio, or Castellari Bergaglio "Fornaci" Gavi.
