Welcome to the October E-Newsletter from the Hotel Arts Group!
Autumn has arrived with a crisp chill. While we're sad to say goodbye to the poolside patio vibe we enjoyed during our beautiful summer, we are excited about the new flavours and offerings that Fall provides.
This month's E-Newsletter highlights our new Flames Game Hat Trick Meal, Raw Bar Fall Cocktail Menu and a new Chef's Table Menu. We also shine spotlight on a host of events that Hotel Arts is helping to support over the next few months. We also profile Michael Lazarowich, Maitre D' at Chef's Table and also invite you to book your holiday events at Hotel Arts and Kensington Riverside Inn. Our resident fashionista, Bella Zapatos, pairs shoes with some of her favourite dining spots. Lastly, for those commuters looking to secure a downtown parking stall for what could be a chilly winter, we still have a few spots left.
Just like our hotels, it's a busy edition full of great new developments and stories which we hope you'll explore.

If your company ranks are of a smaller nature and you can't seem to find the right venue with all the "fixings" to host this year's holiday party, join in the fun of the "Big Venue Small Companies Big Fun" holiday party at Hotel Arts on Wednesday, December 7th. Raw Bar's Hat Trick on Flames Game Nights

Fall Cocktail Menu
Raw Bar is preparing to launch a new Fall/Winter Cocktail Menu.Colin Tait, Head Raw Bartender, has prepared an array of drinks inspired by some of the spices and flavours that accompany the cooler weather as well as the holiday season. Here are some highlights that you can expect on the new cocktail menu launching shortly.
- Autumn Song - A crisp juniper berry and tea syrup that's then mixed with G'vine Floral Gin, a touch of Aperol Italian Aperitif and elements of dandelion and burdock, balanced out with a little citrus that conjures up images of autumn at its peak.
- Deciduous - Taylor Tawny 20 year-old port mixed with a blueberry style shrub, kick in some spice with a little shiraz and a sweet style syrup that follows a Moroccan influence such as a little cardamom, lemon and cinnamon and it's a sure fire way to forget about the harsh Calgary cold.
- Apple Cart Daisy - Using Spice Tree whisky (jokingly referred to as the illegal whisky because of its second maturation in new French Oak Barrels), mixed with a potent apple and fig preserve that's lengthened out by our unique pink peppercorn caramel syrup; it doesn't get much better...

COCKTAIL RECIPE
Colin Tait is pleased to share one his recipes to fight the winter chill with some bolder flavours like Single Malt Whiskey.
As Thyme Goes By
- 2 oz Spice Tree Single Malt Scotch Whiskey
- 1oz Clement Creole Shrubb
- 1oz Benedictine Liqueur
- 1oz simple syrup
- 1 tsp fresh thyme leaves
- 3 dashes Bittermans Xocolatl Mole Bitters
- Ginger beer to taste
Add all ingredients except the ginger beer into a Boston Shaker. Dry shake, then add ice and give a hard shake for 15 seconds. Double strain into an ice-filled Collins Glass and top with ginger beer to taste. Garnish with a sprig of thyme (optional).

CHEF'S TABLE AND THE INN 
 Chef's Corner
Chef Craig Boje is excited about the wholesome comfort foods that autumn promises to bring and will be launching a new menu in mid-October. Chestnuts, root vegetables such as turnips and parsnips, heavy sauces, chutneys and gamier, braised meats are what we can look forward to on the new menu.
Maitre d' Michael Lazarowich recommends wines that are heavier, more full-bodied, with earthier tones such as Côte du Rhône. Varietals include Syrah, Grenache and Mourvèdre fall into this category and can be found on our wine list, recognized this year with an Award of Excellence by Wine Spectator Magazine. As well, Tuscan wines such as Sangiovese with blends of Cabernet and Merlot pair well with the autumn foods you will find on the menu. Michael also asserts that you can never go wrong with a classic Napa Valley Cabernet, which will be featured at our SOLD OUT Napa Valley Vintners Wine Dinner on November 3rd.

MICHAEL LAZAROWICH, MAITRE D', CHEF'S TABLE
Chef's Table is not only renowned for amazing cuisine but also for a brand of service that takes the dining experience to new memorable levels. Leading the charge from a service perspective is Michael Lazarowich.
Michael has been with Chef's Table since its inception in 2007, serving as Maitre d' since October of 2010. In his time as Maitre d', Chef's Table has seen tremendous recognition within the community, garnering many loyal followers, and raising its profile as one of the top restaurants in Calgary.
Michael has been profiled on Wedding Television for Chef's Table and has been responsible for many amazing weddings, private dinners, as well as executing the many winemakers dinners that Chef's Table has become so well-known for.
Michael started his professional food and wine career as a busboy at a friend's restaurant at age 11, claiming to be the richest Grade sixer he knew, earning $3.85/hour plus tips. He spent his teens working his way up through the ranks at the Calgary Winter Club, becoming one of the youngest servers at 17, when he had to ask his colleagues to deliver drinks to his tables. As a professional server, Michael gained experience in several well-known establishments progressing from Hy's Steakhouse to the Belvedere, Vintage Chophouse, Capo, and eventually, Chef's Table.
When he is not at Chef's Table, Michael can be found practicing his passion for golf, a sport he has played since he was 10 years old, competing in the Alberta Amateurs, and now serving as the "go-to golf pro" for the Hotel Arts Group.
Having been surrounded by food and wine for most of his adult life, Michael fuels his passion by cooking at home and trying new things. He loves grilling red meats and preparing well-balanced, simple meals with quality ingredients. Michael claims his mood influences his cooking style and he utilizes what's available to him rather than using recipes.
Outside of Chef's Table, his favourite food and wine experience was close to home, at the Rimrock's renowned Eden, one of only 5 diamond restaurants in Canada. The true showcase of unique dishes with classic ingredients, paired with wines of equal quality, an incredible setting, and beautiful China made for a memorable dining experience. Mike holds service standards to the highest level but says, although not perfect, they were pretty close!
Michael hopes to gain the 5 diamond rating for Chef's Table in the near future. Recently traveling to France, Italy, and Spain, he feels strongly that the Calgary dining scene is worthy of comparison to these and other well-recognized food and wine destinations and that we should be proud of what's available in our own backyard.

Model Milk is a brand new restaurant in Calgary and a welcome addition tot he neighbourhood. It takes its name from a former dairy that used to reside in the building in the old days but the colour of the walls looks like milk too. Event 1: The Gala
The gala will be held at Hotel Arts on October 27, 2011 from 6:00pm to 11:00pm. At the gala, Dan Millman will present "In the Spirit of Service" and share the simple things we can do each day to uplift the lives of others. Gala includes appetizers, full dinner and Dan Millman, intriguing guest speaker. Cocktail Attire is encouraged.

Event 2: Life-Changing Workshop

Grave Gala
Calgary Opera's Grave Gala takes place Sat, Oct 29th at Hotel Arts. This is arguably one of Calgary's best fundraising events of the year with a dizzying array of great costumes. CLERC Legal - Artful Bench & Bar
The Children's Legal & Educational Resource Centre presents The 6th Annual Artful Bench and Bar Event taking place Wednesday, October 19th, 2011 at 5:30pm. The event, held at the trendy Hotel Arts in downtown Calgary, features both a live art auction and silent auction, as well as live entertainment. All Proceeds from the event will support CLERC - and organization serving children and youth 19 and under, by providing free information, advice, referrals, advocacy and legal representation.

Read For The Cure - Calgary Fundraising Event
Read for the Cure will be held October 19, 2011 at Hotel Arts. This year, they will be featuring bestselling authors Marina Endicott, Joy Fielding and Catherine Gildiner. Over the past 4 years, Read for the Cure's author events have become a "must-attend" in Toronto and Ottawa; this year, they have expanded the cause to Calgary. The event will consist of the same format: bestselling authors, in events that can best be described as large-scale book club gatherings. The event offers readers a unique alternative to walking, cycling or running for the cure!
In addition to hearing the authors' speak, each attendee will receive a copy of their book. You can be sure to look forward to a great night, for a great value, for a great cause!
Read for the Cure's Calgary event will support the Alberta Cancer Foundation and the Cancer Research Society, to fund research into the causes and prevention of cancer, and especially environmental links to cancer. The organization is composed entirely of volunteers, allowing 100 per cent of funds raised to go to cancer research.
Education Matters

COMMUNITY INVOLVEMENT
Hotel Arts Group is actively involved in the neighbourhood around us. Every month, we are dedicated to giving back to the community that supports our businesses and helps to make Calgary such a great place to live, work and play.
Here are a few highlights of some of the groups we are trying to assist:
- Bocuse d'Or Canada: The Bocuse d'Or Canada is an organization that connects chefs in the culinary profession. Each year, a fundraiser is held to send one candidate overseas to compete in an international cooking competition. Hotel Arts is a proud supporter of the culinary industry and is involved with the annual fundraiser. For more information, please visit http://www.bocusedorcanada.ca.
- Society for Treatment of Autism: Society for Treatment of Autism is an organization that provides individual treatment for those children diagnosed with autism. Hotel Arts works with a variety of organizations making a positive difference in our community as well as abroad. From time-to-time, we receive updates about the impact of the different initiatives supported in part by Hotel Arts. We thought that you might enjoy reading some highlights:
Medical Mercy
- From Joanne Neweduk
On behalf of Medical Mercy Canada, I extend a huge thank you for supporting our organization by donating supplies for our 2011 medical/dental camp held each year in Nepal. This year, 24 volunteers will travel to Nepal to partner with Nepalese health care professionals and translators to provide services to thousands in the Chitwan region. Our clinics include medical, dental, pre/post natal, women's issues, water filtration and more. The supplies Hotel Arts is providing (soaps, shampoo, pens etc) will mostly be used in our extensive children's program that focuses on health and hygiene education through games, puppetry and lively fun. This is but one of the many projects MMC supports.
('Medical Mercy Canada Society' (MMC) is a registered, non-government, non-religious, charitable organization. It provides medical supplies, education, support and other supplies to India, Nepal, Sri Lanka, Burmese refugees in Thailand and to impoverished villagers in Ukraine. Projects include establishing and maintaining village health clinics, small country hospitals, chronic care centres for seniors, village schools and kindergartens; developing sanitation and clean water systems; providing medical supplies and medical training.)
We are also very grateful to Hotel Arts for being such a wonderful venue with exceptional staff in which to host our Annual Fundraising Gala. This year being held on Saturday, October 22. (medicalmercycanada.org)
It is an honour to work with such a dedicated organization and I am thrilled to be part of this year's volunteer team headed to Nepal. Thank you again to Hotel Arts for your multifaceted support.
