beetsEach week our farmers bring a new bounty of locally grown produce to the Dedham Farmers Market. This week you'll find summer squash, zucchini, spring onions, beets, kohlrabi, wax and green beans, cucumbers, all types of lettuce, sugar and shell peas and oh so much more!

Community TableGreen City Growers will be on hand to give out free seeds.   Learn more about having a raised vegetable garden in your own backyard.   Whole Foods Market Dedham will have free samples of Pirate's Booty and 365 juice boxes.

Use these recipes to help turn your farmers market treasures into savory dishes!  Enjoy!

sugar snap peasBeet and Sugar Snap Salad
Ingredients:
· 1/2 small red onion, halved lengthwise, thinly sliced
· 3 tablespoons rice vinegar
· 1 teaspoon ground coriander
· 2 teaspoons sugar
· 1 teaspoon salt
· 2 tablespoons extra-virgin olive oil
· 8 whole small beets, steamed for 30 mins, peeled and sliced
· 1 pint sugar snap peas, strings removed
Instructions:
1. Soak onion in cold water 10 minutes. Drain in a sieve.
2. Whisk together vinegar, coriander, sugar and salt in a salad
bowl, then add oil in a slow stream, whisking.
3. Toss onion and beets with dressing.
4. Blanch sugar snaps in boiling water for 1 minute, transfer to a
bowl of ice water to stop cooking, then drain well in a sieve and
toss with beet mixture.
serves 4 as a side dish

Nutrition  Information:
Beets are a good source of vitamin C, fiber, and lycopene. The
red pigment phytonutrients in beets help protect against heart
disease and lower the risk of certain cancers. Beet greens are
also great for you: they are an excellent source of vitamins A
and C, as well as folic acid. Sugar snap peas provide your body
with fiber and vitamins A, C, and E.

local strawberriesSalad with Strawberries
Ingredients:
· 1/2 lb. strawberries, hulled and sliced 1/4 inch thick
· 4 oz mesclun greens
· 1/4 cup thinly sliced leeks, washed in a bowl of water and drained
· 1/2 cup mild fresh goat cheese (2 oz)
· 1 T brown sugar (optional)
· 1 1/2 tsp. fresh lemon juice (optional)
· 1/4 cup toasted pistachios (optional)
dressing:
· 1 T fresh lime juice
· 1 tsp. balsamic vinegar
· 1 tsp. maple syrup
· 2 T extra-virgin olive oil
· Salt and freshly ground pepper, to taste.

Instructions:
1. Combine the sliced strawberries with the brown sugar and lemon juice, and let macerate while you are preparing the rest of the salad. Omit this step if berries are flavorful.
2. Whisk together maple syrup, vinegar, lime juice, salt, and pepper. Add oil
gradually and whisk to combine well.
3. Toss mesclun greens, strawberries, leeks, pistachios, and dressing. Crumble
the goat cheese on each serving.
serves 4

Nutrition Information:
Locally grown strawberries are an excellent source of vitamin C, a very
good source of dietary fiber, and also contain potassium and folate. The
phytonutrients contained in the dark greens of a mesclun mix may reduce
the risk of certain cancers and the risk of age
