Achilles Tendonitis
The Achilles tendon is a large tendon which attaches the calf muscle to the heel bone and primarily helps to both propel and decelerate the lower leg during weight bearing activities.
Tendonitis is a condition in which a tendon becomes inflamed and the presence of inflammatory agents/chemicals occurs. Inflammation in the tendon results in redness, warmth, swelling, tenderness to touch and pain with movement. These conditions are typically the result of repetitive trauma to the tendon but can occur due to blunt trauma.
Tendons differ from muscles in that they have significantly less blood flow and hence their healing time is diminished when they undergo trauma.
Running is a repetitive activity and hence the occurrence of repetitive strain injuries, like
tendonitis, is more prominent in this sport. Multiple factors related to running can lead to Achilles tendonitis: improper fitting shoes, lack of arch support, progressing a running program too quickly, dramatic changes in running program (eg, mileage, hills, speed work, varying terrain) or the presence of other anatomical abnormalities can lead to tendonitis.

Initial self treatments consist of rest, ice and gentle stretching. Your primary care physician can recommend appropriate medications which may be beneficial as well. Physical therapy may be warranted if the condition doesn't resolve within a couple of weeks.

| Black Rice A SUPERFOOD

- Varietal rice from Asia, that gets it color from black heirloom plants.
- Rich in nutritional value; 18 amino acids, iron, zinc, copper, carotene and fiber.
- One spoonful of black rice contains more anthocyanin antioxidants than a spoonful of blueberries.
- Black rice takes longer to cook than white. Cook with more water to help tenderize. Soak grain about an hour before cooking it and add a ¼ cup more water than recommended.
Types:
- Chinese Black Rice is short-grain rice with a glutinous (sticky) property that can be used to sweet and savory dishes, as it packs a sweet and nutty flavor.
- Black Jasmine Rice keeps its outer layer of black bran. Because the black bran remains post production, black jasmine rice does not stick tougher like some other varieties of the black rice. Like Chinese black rice, it turns deep purple when cooked.
- Indonesian Black Rice is also glutinous. In Thailand, where it originated, it is often eaten in its sweetened form and not typically served as the main rice in a meal. Try serving it as an afternoon snack or several hours after a main meal, paired with fresh, seasonal fruit or by itself, as it is filling.
- Black Japonica Rice, when cooked, gives off a nutty mushroom flavor and often has a subtle, sweet spiciness and juicy texture. This type of rice works well as a side dish, in rice salads, in casseroles, as a stuffing for turkey or peppers, or in stir-fried foods.
