This month's feature presentation is red cabbage. Delicious. High in Fiber. Beautiful. Those are the reasons I enjoy. Below is an article that is more scientific to either convince or confirm why you are, or should be, eating red cabbage.

The Health Benefits of Red Cabbage

In the delightful world of fruits and vegetables, red usually means healthy, and few can deny the health benefits of a shiny, red apple or freshly picked tomato. Red cabbage may not be the first red veggie that comes to mind, but this easy-to-find vegetable has some very convincing health properties that make it a good addition to the grocery cart.

Health Benefits of Red Cabbage: It Gives Cancer the Heave Ho

 

Red cabbage is a good source of phytonutrients that help to detoxify pollutants and other carginogens that most people are exposed to on a daily basis. Like other cruciferous vegetables such as broccoli, it's high in glucosinolates, compounds which are metabolized by the body to form powerful cancer fighting chemicals known as isothiocyanates. Isothiocyanates activate the P450 liver enzymes that break down carcinogens, allowing them to be safely eliminated from the body. People who consume high quantities of cruciferous vegetables have been shown to have a lower risk of certain types of cancer. Red cabbage is also a good source of indoles, compounds that may reduce the risk of breast cancer by altering estrogen metabolism.

Vitamins A and C are vitamins with strong antioxidant properties and red cabbage is a good source of both, particularly vitamin C. One serving provides three-quarters of the daily recommended quantity of this vitamin which is important for maintaining healthy skin and connective tissue. Who says citrus fruits are the only good source of vitamin C?

Red cabbage is a guilt-free food if you're a calorie counter. One cup of red cabbage has under thirty fat-free calories. The relatively high fiber content of red cabbage makes it a filling and satisfying side dish. No wonder the cabbage soup diet was so popular!

 

Health Benefits of Red Cabbage: It's Better than It's Green Cousin

Green cabbage may be healthy, but red cabbage is better. Would you believe that red cabbage has twice the vitamin C content of green cabbage? Plus, red cabbage is a rich source of anthocyanins, a type of flavonoid that gives red cabbage it's deep red- purple coloration. There's increasing evidence in animals that anthocyanins help to promote brain health as well as protect against cancer.


The Bottom Line?
There's little doubt that red cabbage is one healthy vegetable, but the indigestible fiber in those crimson leaves can cause flatulence and may need to be eaten in moderation. Enjoy the many health benefits of red cabbage!

 

How To Successfully Plant & Grow Cabbage

    Indoor Seed Startingred cabbage seedling

    Cabbage seeds should be started indoors 12 weeks before the last spring frost. When the seeds sprout move them to full sunlight. A second planting of cabbage seeds can be started 16 weeks before the first fall frost.

  2. Outdoor Planting
    The earliest you should transplant cabbage seedlings outdoors is 5 weeks before the last spring frost. If the transplants are too large when you plant them outdoors, the cabbage plants may not form good heads.

  3. Growing Season
    Spring and fall.

  4. Seed Storage
    To successfully grow cabbage from seed, seeds should be used within 5-6 years.

  5. Seed Planting Depth
    To successfully grow cabbage, plant each seed ¼-½ inch deep. Plant each cabbage seed in a separate compartment of a seedling tray. Keep the seedling trays in a warm area that is about 70 degrees.

  6. Plant Spacing
    Cabbage plants should be 24 inches apart, and rows should be 24-36 inches apart because they have large leaves that take up a lot of space.

  7. Location
    To successfully grow cabbage, plant seedlings in full sun.

  8. Maintenance
    To successfully grow cabbage you should water the plants regularly while the head is forming. Once the head has formed, reduce watering to prevent the head from growing too fast and splitting. Cabbage plants require a soil pH of 5.5 for best resRed Cabbage Ready for Harvestults, so you may need to add a high nitrogen fertilizer to the soil every 4 weeks. Weed cabbage plants weekly, and cut off any of the large bottom leaves that are yellow.

  9. Seed to Harvest/Flower
    Cabbage plants should be ready to harvest in approximately 16 weeks. Cut off the cabbage head when it starts to feel firm. If you wait too long to harvest cabbage the heads can split and go to seed.
