Happy New Year,

This time of year is generally a time of reflection and goal setting.

Have you reflected on what our unity has produced? A Food Buying Club.  People from all walks of life are coming together to provide for ourselves a basic need. That is a major accomplishment. I hope we continue to work together and bring more people into this endeavor.

As for goal setting, 2011 is the year of the farm. A farm is land or water devoted to the raising of animals, fish, plants, etc. Hence, there are no spatial limitations (minimums or maximums). If you can devote at least 1 container... do that. We have to begin to practice doing for self, no matter the scale. Image this, all of us that are already united around the need and desire to feed ourselves wholesome food, if everyone had something to bring to a produce bag event. Not necessarily to put into the bags (there are a lot of us, :)) but to have a table where we can share. This would enhance the club. And maybe one day all of our urban farms combined could provide the contents of the bag. Image if the tomatoes (squash, green beans, etc) came from the farms of our members. We can do it, united  of course. I encourage you to devote yourself to the planting, maintaining, and harvesting of at least one edible plant this year.

We are on the right track with the Buying Club. Now lets do it bigger and better in 2011.

The Health Benefits of Cauliflower

Colorful fruits and vegetables are an excellent source of DNA protective antioxidants; but there's another vegetable that's white in color that has similar disease fighting power - the versatile cauliflower. Cauliflower is a cruciferous vegetable in the same family as another veggie with powerful health benefits - broccoli. Cauliflower lacks the chlorophyll that gives broccoli its green color because its large leaves shield it from the direct rays of the sun. Cauliflower is believed to be the descendent of the wild cabbage plant that originated in Asia. What are the health benefits of cauliflower and why is it such an important addition to the dinner table?

Health Benefits of Cauliflower - It fights cancer Cauliflower

Cauliflower is a cruciferous vegetable, it has many of the same cancer fighting properties of broccoli, kale, and cabbage; vegetables that have become poster children for cancer prevention. The isothiocyanates formed when cauliflower is chewed activates liver enzymes that detoxify cancer causing chemicals. The isothiocyanates along with another chemical known as sulphoraphane stop proliferation of cancer cells in the laboratory. A diet high in cruciferous vegetables such as cauliflower is thought to lower the risk of various types of cancer including those of the lung, colon, prostate, and pancreas. Cauliflower is a also good source of indoles, chemicals which subtly alter estrogen metabolism so that weaker estrogens are produced that are less likely to cause breast and prostate cancer.

Cauliflower is a surprisingly good source of vitamin C, an important antioxidant vitamin, one that helps to maintain a strong immune system, promote wound healing, and prevent skin aging. A single serving of cauliflower provides over half of the recommended daily requirement of vitamin C.

Vitamin C isn't the only vitamin found in cauliflower. It's also a good source of the B vitamins and folate. It also has respectable quantities of potassium and magnesium, minerals which help maintain normal blood pressure.

At only twenty calories in a 3.5 ounce serving and no fat, cauliflower can be enjoyed in abundance without tipping the scales. Because of its low carbohydrate content, it's a good substitute for potatoes for those on a low carb diet. Steamed cauliflower can be prepared in the same way as mashed potatoes at a considerable savings in carbs and calories. Cauliflower is also a good source of heart-healthy soluble fiber. Cauliflower is as versatile as it is healthful and is a great addition to any meal. It's a veggie you definitely want to add to the grocery cart.


Roasted

Roasted Cauliflower

Ingredients

  • 1 head of cauliflower
  • 2-3 cloves of garlic, peeled and coarsely minced
  • Lemon juice from half a lemon
  • Olive oil
  • Coarse salt and freshly ground black pepper
  • Parmesan cheese

Method

1 Preheat oven to 400°F. Cut cauliflower into florets and put in a single layer in an oven-proof baking dish. Toss in the garlic. Sprinkle lemon juice over cauliflower and drizzle each piece with olive oil. Sprinkle with salt and pepper. If the oven hasn't reached 400°F yet, set aside until it has.

2 Place casserole in the hot oven, uncovered, for 25-30 minutes, or until the top is lightly brown. Test with a fork for desired doneness. Fork tines should be able to easily pierce the cauliflower. Remove from oven and sprinkle generously with Parmesan cheese. Serve immediately.

Serves 4.
