Asparagus is one of nature's most perfect foods. I was happy to see asparagus in the produce bag. Asparagus is healthy, tasty, and simple to prepare. There are some simple recipes below. Please try them and add your own twist. My favorite is to bake them similar to the recipe below but I don't use salt and pepper.  Instead, i put shallots, garlic and green onions.  Simple, flavorful, and nutritious.


There are also some good sites that highlight all the health benefits, more recipes, growing asparagus, and Stockton's asparagus fest.

Health Benefits of Asparagus

Asparagus
Asparagus is a member of the lily family which also includes leeks, garlic and onions. Asparagus is one of the few vegetables that have a high content of nutrients that may help prevent and remedy some ailments. There are few hundred varieties of asparagus but only a few numbers is edible. When eating asparagus, it is best to just lightly steam, rather than boil it to retain its nutrient content. Avoid cooking asparagus in iron pots as the tannins in the asparagus can react with the iron and cause the stalks to become discolored.

Asparagus is packed with nutrients like Folic acid, potassium, fiber, vitamin B6, vitamins A and C, thiamine and rutin, a compound that strengthens capillary walls. Asparagus has no fat, does not contain cholesterol and is low in Sodium.

Health Benefits:
  • It is good in the case of neuritis
  • Hypertension
  • It can help prevent constipation due to its high fiber content.
  • May help prevent cancer in organs lined with epithelial tissues.
  • Asparagus is an alkaline food which is effective in reducing the acidity of the blood.
  • Asparagus has an abundance of an amino acid called asparagine that helps to cleanse the body of waste material.
  • Asparagus has an anti-inflammatory properties the helps relieve arthritis and rheumatism symptoms.
  • Asparagus is a prime source of anti-oxidant and glutathione that can help prevent the dreaded cancer.
  • Asparagus can help regulate blood sugar
  • Asparagus has its diuretic properties, which can prevent bloating.
  • Asparagus contain magnesium which can help relieve irritability, fatigue and depression.
  • Asparagus contain a good amount of folic acid and calcium that can reduce birth defects.

Baked Asparagus
Asparagus
Ingredients:

2 bunches asparagus, washed
1 to 2 tablespoons olive oil
Coarse grained salt and cracked black pepper

Directions:

Preheat oven to 400 F.
Place asparagus in a large plastic bag. Drizzle half the olive oil over the asparagus, seal the bag and shake until asparagus is coated evenly with the olive oil. If necessary, add only enough of the remaining olive oil to coat the asparagus. Place the asparagus in a single layer on a cookie sheet, season with salt and pepper. Bake until tender or crunchy depending upon your preference, about 12 to 20 minutes.

Simply Steamed Asparagus

Ingredients:
1 bunch asparagus spears
1 teaspoon butter
1/4 teaspoon salt
3 cups water

Directions:
Place water in the bottom half of a steamer pan set. Add salt and butter, and bring to a boil.
Trim the dry ends off of the asparagus. If the spears are thick, peel them lightly with a vegetable peeler. Place them in the top half of the steamer pan set. Steam for 5 to 10 minutes depending on the thickness of the asparagus, or until asparagus is tender.

Grilled Asparagus
Grilled Asparagus

Ingredients:

1 pound fresh asparagus spears, trimmed
1 tablespoon olive oil
salt and pepper to taste

Directions:
Preheat grill for high heat.
Lightly coat the asparagus spears with olive oil. Season with salt and pepper to taste.
Grill over high heat for 2 to 3 minutes, or to desired tenderness.
