Greetings and Peace,
Eggplant! Many like it for its nutritional value and texture. I just started experimenting with eggplant, thanks to the produce bags. I have tried a few recipes in the past but my favorite is eggplant enchiladas. Sounds weird? I thought so, too. To my surprise, and my family's, they were good. Try the recipe and let me know what you think.
Thanks Shielvina Knight for submitting the article pertaining to slow cookers. I plan to use my slow cooker in the near future. All slowcooker experts, please submit recipes. This seems to be the perfect time of year to use them.

The health benefits of eggplant:
1. Nutritive value:
The eggplant has a lot of vitamins and nutrients. It
contains vitamins like B1 and B6. It also contains a good amount of
potassium, copper, magnesium, manganese, phosphorus, niacin, and folic
acid. This high nutritive value of the eggplant makes it one of the most
important vegetables.
2. Diabetes: The eggplant has been
found to have a great impact on the sugar levels of a diabetic person.
Eating eggplant is the natural method of controlling diabetes. This
effect of the eggplant is because of the low levels of carbohydrate in
the eggplant and also because of the fiber present in the vegetable.
The eggplant is especially useful in preventing and reducing glucose
levels of Type II Diabetes.
 3. Cancers: Eggplant also has
anti oxidants that help to prevent cancers. This is because the anti
oxidants present in the eggplant helps to clear off the free radicals
from the body of the individual. When the free radicals, which are the
cancer causing agents, are cleared off from the body there is very less
risk of the person getting cancer. The substances like Monoterpene,
nasonin, and anthocyanin that are present in the eggplant are the main
reasons for the prevention of cancers.
4. Cholesterol: Eggplant
has another important health benefit which is the ability of this plant
to lower the cholesterol levels of the individuals who consume this.
The cholesterol lowering effect of the eggplant also plays a major role
in reducing the risk of heart disease.
5. Weight gain: Eating
vegetables like the eggplant can help in reducing the weight of an
individual. The reason is nothing fancy, but very simple. The vegetable
contains a lot of moisture in it. It is also low in calories. So this
can be eaten regularly to effectively control obesity.
The egg plant is a very colorful vegetable (some people consider it to be a fruit). Almost
all colorful fruits and vegetables have been seen to have anti oxidant
effects. The eggplant as it is known can be cooked in many
different methods and so one does not get bored eating this vegetable. |
Eggplant Enchiladas Recipe
Ingredients:
1 TBS olive oil
1 cup diced onion
6 cups diced eggplant (peeled)
1 green pepper minced
4 cloves garlic minced
1 tsp salt
1 tsp black pepper
1 cup Monterey Jack cheese
2 cans Rotel (diced tomatoes and green chilis) or your favorite red/enchilada sauce
12 corn tortillas
Instructions:
1. Saute onion in olive oil for about 5 minutes on medium heat. Add
eggplant, salt and pepper and cover. Cook 10-15 minutes, stirring
often, until eggplant is soft.
2. Add green pepper and garlic and saute about 5 more minutes or until green pepper is soft.
3. Add cheese to egg plant mixture.
4. Roll 1/4 cup eggplant mixture in each tortilla and place in
casserole dish sprayed with Pam. After all tortillas have been used and
dish is full pour Rotel or sauce of choice over enchiladas. Top with
more cheese if desired.
5. Bake 350°F for 30 minutes. |
Slow Cookers a.k.a. Crock-Pots
Why use a slow cooker? A
slow cooker produces an even, low, moist heat that eliminates the need
for stirring, so you can simply prepare a meal, then leave it to cook.
And unlike an oven, a slow cooker is very energy-efficient. Plus, you
can leave it on all day, even when you're out of the house.  Is it safe? Food
is susceptible to bacteria growth between 40° and 140° F. A slow cooker
brings food through the danger zone so fast, bacteria cannot take hold.
But keep this in mind: If you brown your meat in advance, don't store
it in the refrigerator mixed with raw or partially cooked ingredients,
or you'll increase the risk of contamination. Will the cooker boil over? Fill
it at least halfway (for even cooking) but no more than three-quarters
full, and you'll be fine. Your real concern should be about losing
heat-and slowing down the cooking-each time you lift the lid. Always
keep the pot covered. (Buy one with a clear lid so you can peek
through.) If you must lift the lid, tack on 5 more minutes of cooking
time. Can I use a cooker with a conventional recipe? Go
ahead and make your aunt's famous barley stew. But cut back on the
amount of liquid by a quarter, since you have a much slower rate of
evaporation than in a regular pot. Follow cooking times used for
similar slow-cooker dishes. |
