I hope everyone is enjoying the new format of our newsletter. Our goal is still to keep in touch with the many families that have touched our lives. We continue to hope you have received a fresh start and a revived outlook on life.

| About Betsy Lynch
Betsy Lynch joined the Wagoner Group in 2007 as an associate attorney after clerking for the Honorable Robert L. Trout. In 2002, she received a Bachelors of Arts in Business and Finance from Westminster College in Fulton, Missouri and received her Juris Doctorate from the University of Missouri - Kansas City School of Law in 2005. She is originally from Sikeston, Missouri and decided to pursue a legal career after clerking for a small private law firm in her hometown. Her father has been in the banking industry for over 30 years, so it is fitting that Betsy chose bankruptcy as her concentrated area of practice. She is a member of the Missouri Bar Association, the Federal Bar Associations of both the District of Kansas and the Western District of Missouri, the Association of Women Lawyers, the American Bankruptcy Institute, and the Kansas City Bankruptcy Bar Association. Betsy and her husband, Jake, are members of Visitation Catholic Church, and the couple have a small home in Brookside. She spends a majority of her free time volunteering for philanthropic organizations, the Junior League of Kansas City and the Association of Women Lawyers. She helps raise and manage funds regularly donated to different projects and organizations around Kansas City. She serves on the Finance Council for the Jr. League and currently is the Chairwoman of the Investment Committee. She also serves on the Board of Directors for the Association of Women Lawyers as the Community Support Vice Chairwoman and is currently planning the annual food drive for Harvester's. Betsy is adding author to her impressive resume and you can find her articles published on the Examiner.com. She holds the position of Kansas City Women's Business Examiner.
In her spare time she also enjoys traveling and regularly visits friends and family members who live in Arizona and North Carolina as well as her parents who have relocated to Hannibal, Missouri.

Ingredients:
· 1 tablespoon unsalted butter · 2/3 cup superfine sugar · 2 eggs, separated · 2/3 cup reduced fat buttermilk · 2 tablespoons lemon juice · 1 tablespoon lemon zest · 1/4 cup all-purpose flour · 1/4 teaspoon salt
Garnish:
· 1 cup fresh raspberries · 1 cup fresh blueberries · 1 cup fresh blackberries · 2 tablespoons confectioners' sugar
Directions:Preheat oven to 325 degrees F. Butter and lightly sugar 4 ramekins (about 1-cup size). In a mixer, add egg yolks, buttermilk, lemon juice and lemon zest and beat until well combined. Reduce the speed to low and sift in flour, sugar and salt. Continue to mix until combined. Beat egg whites until you get stiff peaks then combine the 2 mixtures by gently folding them together, a little at a time. Divide evenly amongst ramekins then bake in a water bath - set ramekins in a roasting tray and fill with water halfway up the sides of the ramekins. Bake for 60 minutes until the top springs back when gently pressed and the cakes have a nice golden brown color. Allow to cool slightly, then carefully invert onto a plate. Serve with fresh berries and dust with powdered sugar. |
