Is An Alkalizing Diet Right For You?
Did you know the acid/alkaline balance of your body and blood plays an integral part in your overall health? An overly acidic body is the perfect breeding ground for all types of disease, which thrive in a low-oxygen, acidic environment, says Marian Buck-Murray, a health counselor and healing foods specialist based in Maplewood. "By adding mineral-rich foods and herbs to your diet, you help to alkalize your system," she says. " An alkalized, oxygen-rich environment promotes efficient bodily functions, metabolism, detoxification, and healing." Symptoms from eating such an acidic or "low-oxygen" diet include: Fatigue, poor digestion, low immunity, yeast infections, acid indigestion, weight gain and more. All of these symptoms can be improved and sometimes eliminated, simply by consuming a more alkaline diet, says Buck-Murray. Benefits include: More energy, improved clarity, improved mood, and increased immunity. To alkalize your diet, says Buck-Murray, simply add in more greens, vegetable juices, sea vegetables and low-sugar fruits. Eliminate or reduce sugar, refined carbohydrates, caffeine and alcohol. Balance each meal with an abundance of nutrient-rich leafy greens and vegetables, with smaller amounts of grains and protein. If desired, add in alkalizing supplements such as wheat grass juice or super greens. Buck-Murray suggests trying the following recipe. "It is alkalizing and delicious," she says.
Easy Bok Choy 1 bunch Bok Choy, washed and chopped into bite-sized pieces 1-2 cloves garlic, minced Handful shitake mushrooms (optional) 1-2 Tablespoons olive or sesame oil Salt 1. Wipe the tops of the mushrooms. Remove and discard stems. Slice into thin strips. 2. Heat the oil in a heavy-bottomed skillet. Add shitakes and salt and cook for 2-3 minutes stirring constantly with wooden spoon to prevent sticking. Add the garlic, cook 1 minute more. 3. Add Bok Choy. Stir fry for approximately 3 minutes, or until bok choy is tender, but not mushy. (Use this method for Kale and Collards. Remove leaves from stem, discard stems. Shitakes or other mushrooms are optional.)

What's so bad about disposable diapers?
Many Americans are now aware of the environmental implications of disposable diaper use. Disposable diapers are the third largest single consumer item in landfills, and represent about 4% of solid waste. But many are unaware of the health risks associated with using disposable diapers. According to The Real Diaper Association, disposable diapers contain:
- Traces of Dioxin, an extremely toxic by-product of the paper-bleaching process. It is a carcinogenic chemical, listed by the EPA as the most toxic of all cancer-linked chemicals. It is banned in most countries, but not the U.S.
- Tributyl-tin (TBT) - a toxic pollutant known to cause hormonal problems in humans and animals.
- Sodium polyacrylate, a type of super absorbent polymer (SAP), which becomes a gel-like substance when wet. A similar substance had been used in super-absorbancy tampons until the early 1980s when it was revealed that the material increased the risk of toxic shock syndrome.
Even diaper brands that promote themselves as "chlorine-free" or "fragrance-free" usually contain sodium polyacrylate, because it's what allows babies to still "feel dry" despite having a wet diaper. One way to keep your baby safe from the harsh chemicals in disposable diapers is to switch to cloth. "Cloth diapers are soft against your baby's skin," says Amy Biasucci, mom of two and cloth-diaper aficionado. Biasucci is also the owner of Acorn, a Maplewood store that sells natural products which, in addition to cloth diaper accessories, include organic baby apparel, maternity products, and babywearing gear. "Cloth diapers are free of the many chemicals contained in disposable diapers," she says. "And they are a lot easier to use than many moms think. An additional benefit, says Biasucci, is reduce in overall cost. "Cloth diapering requires a higher upfront investment, but in the long-run families can spend up to 1/10 less on cloth diapers than they would on disposables. Plus, babies in cloth diapers tend to toilet train sooner than babies in disposables." Biasucci is a great local resource for moms interested in making the switch to cloth diapering. She will be holding a cloth diapering workshop on March 28 at 10 am in Maplewood. RSVP to 973-761-6960. Visit Acorn's online store at www.acornplace.com.
