We just received in a new line - Top Chef Knives. What's special about these knives you may ask? A few things! All of these knives are heated to about 2000+ degrees Farenheit and then rapidly cooled to about 450 degrees. That process provides a good hardness, flexibility and cutting edge. To optimize the steel they do an additional cooling of the knives to about 120 degrees BELOW zero, called ice-tempering. Each and every knife is ice-tempered.

In addition to ice-tempering, each knife is made with stainless steel with superior edge and sharpness retention (less sharpening needed), high hardness, longer life and excellent corrosion resistance!
