Chocolate Chip Meringues with Strawberries
Ingredients
1 large egg white 1/8 teaspoon cream of tartar Dash of salt 1/4 cup powdered sugar 1 tablespoon semisweet chocolate chips 1/4 teaspoon vanilla extract 1/2 cup sliced strawberries 1/2 teaspoon granulated sugar
Preparation
Preheat oven to 250°.
Cover a baking sheet with parchment paper. Draw 2 (3-inch) circles on paper. Turn paper over, and secure with masking tape. Beat egg white, cream of tartar, and salt at high speed of a mixer until foamy. Gradually add 1/4 cup powdered sugar, 1 tablespoon at a time, beating until stiff peaks form (do not underbeat). Fold in chocolate chips and vanilla.
Divide the egg white mixture evenly between the 2 drawn circles. Shape the meringues into nests using the back of a spoon. Bake at 250° for 1 to 1 1/2 hours or until dry. Turn oven off, and cool the meringue nests in closed oven for at least 3 hours. Carefully remove the meringue nests from paper. Combine strawberries and granulated sugar. Spoon the strawberry mixture evenly over meringues.

Campers Respond Positively to New Instructors and Fitness Regimen
At Peoria ABC, we are continually striving to provide more quality instruction. We asked our campers how their experience has been. The feedback has been awesome, and it's important to us to know what we need to keep doing, and where we can grow. We desire to provide the most effective instruction, as well as offer the most variety in times and types of classes.
For those of you who have been hesitant to join or return, let this be an inspiration to you in knowing that you can progress toward your fitness goals, too.

ATHLETIC SHOE DRIVE FOR FOSTER CHILDREN |
Campers team up to collect new or gently used athletic shoes to encourage physical fitness for foster children.
"Happy Feet, Healthy Heart."" That's how the Peoria Adventure Boot Camp Director and Instructor, Lisa Olona, describes the 1st Annual Athletic Shoe Drive, created to promote physical activity among local foster children.
Olona and her team of instructors will be conducting a Saturday boot camp class open to the community. The admission for this event is a donated pair of new or gently used athletic shoes. Campers are teaming up with Sunshine Group Homes (www.kidsrsunshine.com) to encourage their foster children to get fit and active. Sunshine Group Homes has 22 homes in the Glendale, Peoria area, housing over 220 foster children.
"We believe that exercise is not only a great way to maintain a healthy heart, physically, but it is also an incredible way to keep your heart healthy, emotionally," Olona shares. "I also believe exercise, with other healthy outlets, helps to build a solid self esteem. These children have been through experiences that have hurt their hearts, emotionally, as well as damaged their self esteem. We would like to bless each child with a great pair of shoes that could motivate them to get out, get moving, and be proud of who they are!"
The group's goal is to collect 300 brand new or gently used athletic shoes for the children of Sunshine Group Homes. In this quest, Peoria ABC (www.PeoriaBootCamp.com) is offering a free boot camp class on Saturday, March 1st at 1:00pm at Paseo Verde Park, 75th Avenue and Greenway. This class is open to all ages, all fitness levels, male or female. This is a great opportunity for families to work out together, and give to an incredible cause.
Campers will be collecting shoes throughout the month of February. Donations are encouraged, even if there is no participation in the Saturday camp. To donate contact Johanna Callaway at jcallawa@peoriaud.k12.az.us.
