Greetings!

We have been surviving the heat, and we now see the light at the end of the tunnel.  It's been a great summer with lots of sweat!  With that sweat has come some awesome results!  The ladies have overcome some grueling temperatures, but we survived and the cooler temperatures are approaching!
Featured Camper - Tami Zornes

Tami Zornes, 41, is a wife and mother of two.  She has a son, 16 years old, and a daughter, 22 years old. In addition to managing a successful business Tami has committed herself to building a healthy body. 
 
She has been involved in Peoria Adventure Boot Camp since November 2006.  In her 8 camps, Tami has only missed 3 classes. Therefore, she has attended 157 of the 160 classes for which she signed up.
 
This commitment and dedication has paid off. Between November and May, she lost 30 pounds, dropped 2 pant sizes, taken 3 minutes and 8 seconds off of her timed mile, and can now do 30 full body push-ups.  In November she struggled to do modified (on your knees) push-ups.
 
Tami joined boot camp because she was looking for something different, "I needed the motivation to feel good again. I knew exercising would give me more energy and losing the weight would be a bonus," she said.
 
When asked how boot camp has impacted her life, she said she has seen positive rewards physically, mentally, and socially.  She said, "I have made some great friends in our group.  We have an awesome bunch of ladies that encourage and support each other.  I now feel stronger than I have in years and I love it.  I look forward to it and it gives me my daily boost."
 
Tami is a great example of how committing to a plan can reap incredible benefits!  Awesome work, Tami!  You are an inspiration to many!!!

"The journey of a thousand miles begins with one step."
 
Fitness is a day to day journey.  Each day you have a choice of taking a step forward, standing still, or stepping backwards.  You can come up with many reasons and excuses to step backwards or simply stand still. The bottom line is whether or not you are a day closer to the end of your thousand miles. During your journey you will see results that will motivate you and launch you forward.  There will also be those days when you aren't seeing the results you desire, and you feel like stopping.  When your head hits your pillow at the end of a day, ask yourself, did I step forward backwards, or stand still today?  Did you give your best, despite how you felt, or what you saw on the scale?  If so, then you are on the path, moving toward the end of your thousand miles. Believe in yourself, believe in your goals, and know that nothing can stop you from being all that you can and want to be.  A little focus and a lot of heart can take you places you've always dreamed of going.  FOCUS ON THE GOAL!

SPICE-CRUSTED SALMON
WITH CITRUS SAUCEsalmon
SAUCE:
 
1 (6-ounce) carton plain fat-free yogurt
1/2 cup fat-free sour cream
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon grated orange rind
3 tablespoons fresh orange juice
1/2 teaspoon crushed red pepper
1/2 teaspoon grated lemon rind
1/2 teaspoon grated lime rind
1/4 teaspoon salt
 
SALMON:
 
2 tablespoons fennel seeds
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1/4 cup panko (Japenese breadcrumbs)
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
12 (6-ounce) salmon fillets (about 1 inch thick), skinned
cooking spray
fresh cilantro sprigs (optional)
 
1. Preheat oven to 400 degrees
2. To prepare sauce, spoon yogurt onto several layers of heavy-duty paper towels: spread to 1/2-inch thickness.  Cover with additional paper towels; let stand 5 minutes.  Scrape into bowl using a rubber spatula.  Add sour cream and next 8 ingredients ( sour cream through 1/4 teaspoon salt). Cover and chill.
3.  To prepare salmon, place fennel, coriander; process until finely ground.  Combine spice mixture, breadcrumbs, 2 1/2 teaspoons salt, and black pepper in a shallow dish.  Dredge skinned side of Salmon in spice mixture.  Heat a large nonstick skillet coated with cooking spray over medium-high heat.  Add half of salmon, crust side down; cook 3 minutes or until golden brown.  Transfer salmon, crust side up, to a baking sheet lined with aluminum foil. Repeat procidure with remaining salmon.  Bake at 400 degrees for 8 minutes or until fish flakes easily when tested with a fork.  Serve with sauce.  Garnish with cilantro sprigs, if desired.  Yield 12 servings (serving size: 1 fillet and 4 teaspoons sauce).
