We've gotten lots of great feedback on our Vegetarian and Vegan Mushroom Nut Burger, so we thought we'd share the recipe.
 
Mushroom Pecan Burger

 

 

 

 

 

 

 

 

 

 

 









Mushroom Nut Burger

 

1 1/2 pounds cremini or portabella mushrooms

1/2 cup fresh parsley

2 tablespoons olive oil, divided

2 large-size yellow onions, finely chopped

3 large-size garlic cloves, minced

1 cup breadcrumbs or cracker meal (can substitute 1/4-1/2 cup tapioca starch for gluten free) 

3 tablespoons tahini

2 tablespoons hoisin sauce (optional) 

3/4 cup toasted pecans, walnuts or cashews, well chopped

3 tablespoons tamari soy sauce

1 teaspoon dried oregano

1/2 teaspoon dried sage

Salt and ground pepper, to taste

Your choice of burger fixings i.e., roll or bun, condiments, lettuce, tomato and onion, etc.

 

In a food processor, mince mushrooms and parsley. Place in a bowl large enough to accommodate remaining ingredients.

 

In a sauté pan over medium heat, heat 1 tablespoon olive oil and cook onions and garlic for 5 to 6 minutes. Add onion mixture to mushrooms, and stir in remaining ingredients.

 

Refrigerate mixture for an hour, if possible. Mixture will be soft. Add additional bread crumbs, tahini or tapioca starch if needed.

 

Preheat oven to 350 degrees. Carefully create patties by hand. In a sauté pan, warm remaining 1 tablespoon (15 ml) oil, and fry patties over medium heat for 3 to 5 minutes on each side, until lightly browned and crispy, taking care to keep patties intact.  

 

Transfer patties to a baking sheet and place in pre-heated oven for 15-30 minutes. Baking will help firm patties. Serve immediately, or refrigerate for several days and heat before serving.

Items are packed cold in returnable glass containers and delivered to your home on Tuesday afternoons, in a thermal tote.

Choose meats, fish and chicken, vegetarian or vegan. Portions are generous and usually yield some lunch!

Please inquire about special dietary needs, some requests are really easy! Orders which require completely unique preparations are available for a 10% - 20% charge. 
Spa Day at the Fairmont Sonoma Mission Inn
It's becoming a delicious monthly practice, Thursday afternoon yoga and lounging in the mineral pools at Fairmont Sonoma Mission Inn, on Hwy 12 in Boyes Hot Springs. 

Join Hannah Caratti and students of various levels of practice, on Thursday, November 3rd, for yoga from 2:00-4:00 pm. $45 includes all day access to soak in the mineral pools!
   
Enjoy yoga & deep relaxation accompanied by singing and flute music from 2pm-3:20pm, then meet in the watsu pool for water yoga 3:30-4pm. In the event of rain, enjoy more indoor yoga & relaxation...

Wine, Bubbles, Bites and Beer is Saturday, November 5, 2011 6pm* to 10pm, hosted by Soda Rock Winery in Healdsburg.

This fun-filled evening will include food, drink, live music and an auction!
