* * * We've gotten lots of great feedback on our Vegetarian and Vegan Mushroom Nut Burger, so we thought we'd share the recipe.

Mushroom Nut Burger 1 1/2 pounds cremini or portabella mushrooms 1/2 cup fresh parsley 2 tablespoons olive oil, divided 2 large-size yellow onions, finely chopped 3 large-size garlic cloves, minced 1 cup breadcrumbs or cracker meal (can substitute 1/4-1/2 cup tapioca starch for gluten free) 3 tablespoons tahini 2 tablespoons hoisin sauce (optional) 3/4 cup toasted pecans, walnuts or cashews, well chopped 3 tablespoons tamari soy sauce 1 teaspoon dried oregano 1/2 teaspoon dried sage Salt and ground pepper, to taste Your choice of burger fixings i.e., roll or bun, condiments, lettuce, tomato and onion, etc. In a food processor, mince mushrooms and parsley. Place in a bowl large enough to accommodate remaining ingredients. In a sauté pan over medium heat, heat 1 tablespoon olive oil and cook onions and garlic for 5 to 6 minutes. Add onion mixture to mushrooms, and stir in remaining ingredients. Refrigerate mixture for an hour, if possible. Mixture will be soft. Add additional bread crumbs, tahini or tapioca starch if needed. Preheat oven to 350 degrees. Carefully create patties by hand. In a sauté pan, warm remaining 1 tablespoon (15 ml) oil, and fry patties over medium heat for 3 to 5 minutes on each side, until lightly browned and crispy, taking care to keep patties intact. Transfer patties to a baking sheet and place in pre-heated oven for 15-30 minutes. Baking will help firm patties. Serve immediately, or refrigerate for several days and heat before serving. · · · Check out our home delivered meals menus below. Thanks as always for your support, |
