Greetings,
If you're looking for something to do with a surfeit of peaches, poach them! Or, check out this blog for a step-by-step, with photos, of how to can/jar peaches.
Here's a basic recipe for Poached Peaches
2 cups semisweet white or blush wine 1 cup water 1/3 cup sugar or 1/4 cup honey, or a combination 1 vanilla bean, split lengthwise strip or two of lemon and/or orange rind (use a vegetable peeler to remove rind from citrus) 6 firm ripe peaches (unpeeled)
Bring first 5 ingredients to simmer in heavy medium saucepan, stirring to dissolve sugar and/or honey. Remove from heat. Scrape seeds from vanilla bean into syrup*. Return bean to syrup. Cover and continue simmering 5 minutes.
Add peaches and poach until just tender when pierced with tip of sharp knife, about 4 minutes. Transfer mixture to bowl and refrigerate until cold, at least 3 hours. Remove skins when cool enough to handle. Peaches will keep for several days refrigerated.
Enjoy peaches with sugar cookies on the side or on top of vanilla ice cream!
* After poaching, you can remove vanilla bean, dry it off and place it in a jar with sugar--to make vanilla sugar.
