Greetings!
A few years ago I had a cooking lesson with vegan chef Lacey Sher, a talented vegetarian and vegan chef and cookbook author, and partner in the Jack London Square, Oakland restaurant, Encuentro, along with Eric Tucker, chef of Millennium in San Francisco, and Linda Braz.
In that lesson Lacey demonstrated the Wilted Kale Salad that has become a Real Meals staple. I took home her book, Down to Earth Cookbook, a great resource for vegan cooking, and the source of our Veggie Loaf recipe. It gets great reviews so I thought I'd share it with you. It's fairly easy to make, but it does have a long list of ingredients! She offers is as a patty but I make it in a single layer spread it in a sheet pan.
Lacey Sher's Earth Burger Yields 12 1 14-ounce block firm tofu, pressed 2 tbsp olive or other oil 1 medium onion, diced 2 cloves minced garlic 1 cup chopped carrot 1 c rolled oats 1 1/2 cup sunflower seed 2 cups cooked brown rice or other grain 1 tbsp chopped fresh parsley 1 tbsp miso paste 1 tbsp lemon juice 1 tsp dried, or 1 tbsp fresh thyme
3 tbsp Tamari soy sauce 3/4 cup breadcrumbs 6 tbsp water oil, for brushing In a large bowl, mash the tofu and set aside. Saute the onion, garlic and carrots until soft, add to tofu. Add remaining ingredients, except water and oil, and stir. Process in batches in a food processor until well blended, adding a little water as needed. Form into burgers and place on a parchment-lined baking sheet that has been brushed with oil. Or, using baking sheet with one inch sides that will just accommodate the entire mixture, brush sheet with oil and spread mixture evenly, about 1 inch thick. Bake in a 350 degree oven for 20-30 minutes, turning sheet halfway through, until mixture is firm and nicely browned. Burgers or loaf keeps refrigerated for several days or can be frozen for several months. · · · Thanks to all of you who enjoy the service, and for spreading the word to others--I appreciate it!
