It's summer for sure now! Here's a spice rub recipe from Bruce Aidells, that you can use on anything--meats, fish, tofu, veggies--for cooking on the grill, in the oven or in a frying pan.
You can add your own variations--I like to add ground toasted fennel and coriander seed.

I recently used this rub to make delicious fish tacos. Rub the fish and grill or pan fry, and toss some rub with zucchini, onions and other summer veggies and grill or roast.

For tofu, drain and press firm tofu for 20 minutes. Cube tofu and marinate in Bragg's Liquid Aminos for 20 minutes. Drain if needed and toss cubes with spice rub. Heat grape seed or other high heat oil to medium high and fry tofu cubes until brown and crispy.

Heat corn or flour tortillas; assemble with fish or tofu, veggies, and shredded lettuce or cabbage. Stir a little rub into some mayonnaise or sour cream for a creamy topping. Add a squeeze of lemon or lime and enjoy!

 

Bruce Aidells Basic Rub 

 

2 Tbsp paprika

2 Tbsp chile powder

1 to 2 tsp cayenne pepper (optional)

2 Tbsp granulated garlic or garlic powder

2 Tbsp light or dark brown sugar

1 Tbsp ground cumin

1 Tbsp dry mustard

1 tsp ground sage

1 tsp dried oregano

1/4 cup kosher salt

1 Tbsp freshly ground black pepper

 

Mix all the ingredients together in a small bowl or jar. Make a double or triple recipe if you like, and store it for up to a couple of months in a tightly sealed jar. Makes about 1 cup.
