Organic Bubblies are Eco-Friendly, Great Value Champagne Alternatives

Tarantas Cava Brut & Pizzolato Prosecco Veneto

Nothing is more perfect for an eco-holiday celebration than a good bottle of organic bubbly. This holiday season we offer two worldly options made with organic grapes from Spain and Italy. These no-sugar bubblies are just right for a holiday toast and pair perfectly with elegant appetizers or dessert.

Tarantas Cava Brut -is elaborated with the three classical Cava grape varieties (organic Macabeu, Xarel·lo and Parellada) following the "champenoise method" and laid to rest for more than 9 months." The Cava is pale yellow, with small and constant bubbles. Gastronomy - special for toasts, celebrations and light meals. Its complex aroma is fruity (apple) with some spice notes. The softness gives a great elegance.

La Cantina Pizzolato's Prosecco Veneto is made from certified organic Prosecco Grapes. The grapes are handpicked and vinified using the Italian Charmat method, with temperature-controlled fermentation in stainless steel and secondary fermentation in sealed tanks for 30 days. The wine's color is pale straw-yellow with greenish tinges. The nose has a delicate, fruity, characteristic, and the taste is well-orchestrated, palatable and pleasant. Prosecco is ideal as an aperitif, dessert or holiday toast, as well as with a snack, or served with cold first courses including seafood and light pasta dishes. This wine recently won a Gold Medal at the 2008 Denver International Wine Competition.

Our Tarantas Cava is available exclusively through Whole Foods Markets across the country, but is also available for on-premise sales nationwide. Our award-winning La Cantina Pizzolato Prosecco Veneto is available for distribution in all sectors nationwide.

November 1 issue of Wine Enthusiast Magazine reviewed wines from Giancarlo Ceci's winery.
87     Pozzo Sorgente
Here's an organic Chardonnay from southern Italy done in a New World style. Toasted oak notes add aromatic intensity and aromas of butter, exotic fruit, roasted almond, apricot and yellow rose. The well-priced wine has a smooth and supple approach and can stand up to cream-based dishes.-M.L.
86     Agrinatura Chardonnay
2007 Agrinatura Chardonnay, Puglia
Straightforward and genuine, this Chardonnay made with organic grapes in Puglia delivers aromas of peach, fresh apricot and almond skin. The wine is clean, easy, refreshing and unpretentious on all levels. The winery has been handed down from father to son for eight generations.-M.L.

Meet the Grower-Biokult
 Biokult
 Werner Michlits, Biokult Winery, Austria

The Michlits family is one of the most creative and influential organic wine growing families in Austria. Their products and their production methods are revolutionary for the region. Not only have they been able to understand and implement the use of non-trimmed vines in the region, but the use of biodynamic methods and the translation of these into new production standards are awe inspiring. The family owned cattle herd of over 50 Angus beef combined with organic/biodynamic wheat production are the most important tools to improve the soils and the vines that grow on them. Over the last few years the soils have been able to regain their original vigor and diversity.

Biokult Egg Tanks  Biokult Gruner Veltliner
                                     Biokult Grüner Veltliner

In the cellar Werner Michlits has chosen to go in new creative ways. He was inspired by the egg the way it appears in nature. From his point of view the egg is nature's ideal form for growing organisms. In this sense he invested into concrete, egg shaped tanks. Michlits believes that the wines need to stay in these tanks to develop the finest aromas and, most important, the highest rate of natural stability. His understanding of nature's laws and the logical deductions from this have proven right, his wines have proven to be highly stable without any major fining agents or induced stabilization processes. The wines stay in the tanks for over nine months, again a parallel to nature. During their stay in the tanks the wines develop their complete aroma profile and can be bottled with the least amount of sulfur necessary.

Biokult family

The Michlits family has understood the use of traditional wine- growing and wine-making techniques and has developed them in a modern ways. Their search for establishing the best conditions and thus letting nature do its best work for the wines without too much human intervention is very innovative and modern. The family has become a world-renowned producer of high quality organic wines from Austria.
