Sun-Dried Tomato
Biscuit with Turkey
2 C flour 1T baking powder 1 T sugar 1 t salt 1 stick frozen butter(1/2 stick) 2 eggs � C buttermilk 1/3 C sun-dried tomatoes 1 T finely chopped fresh thyme (can substitute 1 t dry
thyme)
When making these, the most important thing to remember is
not to overwork the mixture or the dough.
Spray baking sheet with vegetable oil and preheat oven to
400. Combine dry ingredients. Cut in butter using a pastry blender or food
processor. Do not over mix. Mixture should resemble pea sized
clumps. In a separate bowl, combine eggs
and buttermilk. Add tomatoes and thyme.
Add this mixture to dry mix and combine by hand or in food processor. Turn out onto floured surface and roll to �
inch thickness. Cut into circles using 2 inch biscuit cutter. Bake for 12 minutes. We found using thinly sliced smoked turkey
breast from the deli is delicious with the se biscuits.
To make your Valentine table more festive, use pots of fresh
pink, red, or white flowers such as cyclamen or tulips which can be found at
your local grocery store for the center of your table. Surround them with a red feather boa and you
will have an instant centerpiece.
Consider giving these flowers to your guests as a memento of the wonderful
time shared by all. Garnishing you tea
tray with conversation hearts can also be quite entertaining.
