I actually love the energy of the holiday season - the twinkling lights, festive music, gathering of friends and family...but I know it can be a hectic time and it is really important to find time to balance out all the festivities with some YOU time so you can enjoy the JOY of the season and be truly present in each of these beautiful moments.

Tempting Tidbits

This is a super simple seasonal side dish or tasty meal! Serve with steamed greens and/or leftover turkey, top with a poached egg, add in more of your favorite veggies...endless options! A great way to use leftovers, and great AS leftovers.

Sweet Potato Hashsweet potato hash 
2 med/lg      Sweet Potato, peeled and diced
1 medium     Onion, diced
4-5 stalks     Celery, diced
1 cup           Mushrooms, diced
2 TBL           Butter
1+ TBL        Chopped Fresh Herbs (I used      Rosemary, Thyme, Sage)
Salt & Pepper

Melt 1 TBL Butter in saute pan on med/low heat. Add in Sweet potatoes, celery and onion, salt and pepper. Cover and heat for approx. 10 minutes to soften, stirring a couple of times. Turn heat up to med/high, uncover and allow liquid to burn off and vegetables brown and crisp, stirring occasionally but careful not to over touch or they will get mushy. Add in another TBL butter, mushrooms and fresh herbs. Saute for a couple of minutes more until, butter is melted, mushrooms soften and herbs wilt. Salt & pepper to taste.
