Fall is here and apples are in abundance.  Below are some delicious apple recipes you can make AND home made caramel!  YUM!!

I will be posting more crock pot creations this month on Paula's Bread social media.  The taco soup is easy and only the beginning of fun foods we have tried AND enjoyed.

Home Made Caramel!

 Fall brings the state fairs and make you want fair food...well, maybe not all fair food!  I love caramel apples which is a typical fair food.  If you ever read the ingredients of store bought caramel...you probably want to pass.  Here is a 'natural' recipe for you.  It does have a lot of sugar BUT you don't have the chemicals and additives.

You can make caramel dipped apples with this OR you can keep the caramel and mix it with...chocolate...dip apple slices in the caramel....refrigerate it for several weeks and use it with your right around the corner holidays!

Home Made Caramel
by Chef Lacey Delicious Caramel Apples

2 cups heavy cream
1# unsalted butter
16oz bottle light corn syrup
1/2 tsp salt
2 cups granulated sugar
2 # brown sugar
1 Tbl vanilla

In a heavy bottom sauce pan, combine 2 cups cream, corn syrup, butter and salt.  Heat on medium until butter is melted.  Add sugars and stir until all sugar has dissolved.  With a pastry brush dipped in water, brush down any crystal on the side of the pan. (This is an important stage as the crystals left on the sides will cause crystallization in the end.) 

Bring to a boil on medium high.  Do not stir after sides have been wiped down.  Place a candy thermometer on the side and boil until it reaches 238-240 (soft ball on a candy thermometer).  Remove from heat and stir in vanilla.  Dip apples immediately.  Hold apple over caramel until it stops dripping.  Place on prepared wax paper.

Crock Pot Taco Soup
Taco Soup
6 (frozen!) Chicken boneless Chicken breasts
3 cans Ro-Tel
1 cup dry black beans
1 cup dry kidney beans
3 cups frozen corn
1 onion chopped
1 qt. chicken broth
1-2 cups water
1 Tbs. garlic powder
1 Tbs. chile powder
1 Tbs. ground cumin

Tortilla chips
Sour Cream
Shredded Cheese

Put all ingredients from chicken to the ground cumin in your crock pot.  Cook on high for 4-6 hours or low for 8-9 hours.  The beans will cook and the frozen chicken will become cooked and tender!


Before you serve the taco soup, remove the cooked chicken and shred it in your Bosch Universal Mixer with the gourmet whips.  Add back to the soup. 
 
Serve over tortilla chips and top with a dab of sour cream and shredded cheese.  
This is a wonderful, warm soup for fall and soooo easy to make!

Whole Grain Carrot Apple Muffin
adapted from Chef Lacey  Carrot Apple Muffins


2 cups soft whole wheat flour (also called pastry flour)
2 tsp baking soda
2 tsp cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1 1/4 cup raw sugar
2 cups fine grated carrots (I used dehydrated carrots!!)
1/2 cup raisins (optional)
1/2 cup chopped pecans (optional)
1/4 cup sweetened flaked coconut (optional)
3 large eggs
1/2 cup oil
1/2 cup unsweetened applesauce
2 tsp vanilla
1 granny smith finely grated apple

In a large, bowl sift together whole wheat pasty flour, baking soda, cinnamon, and salt.  Whisk in raw sugar.  Add shredded carrots and all or any of the following optional ingredients: pecans, raisins and coconut.

In your Bosch Bowl, whisk together eggs, oil, applesauce and vanilla.  Peel and core apple coarsely shredded the apple in your Bosch Slicer/Shredder (this makes it really FAST!)  Add apple/egg mixture to the flour mixture.  Whip till batter is well mixed.  Don't over beat the batter.  Divide batter amount the muffin cups, filling them 3/4 full and bake till puffed or tester comes out clean.  Bake 350 degrees for 15-20 minutes.

Note From Paula:
A side note to the carrots.  I have dehydrated shredded carrots in 2 cup increments.  This holds the nutrition of the carrots, saves me a TON of space and I simply rehydrate the carrots about 30 minutes before I want to mix them into a cake or in this case, muffins!




Mini Apple Turnovers!
from Taste of Homes   Mini Apple Turnovers

1 8 oz cream cheese softened
3/4 cup butter softened
1 egg, separated
3 Tbs cold water divided
2 cups pastry flour sifted*
7 cups thinly sliced/cored apples
3/4 cup raw sugar
1 1/2 tsp ground cinnamon

Step One:
In your Bosch bowl, beat cream cheese and butter till smooth.  If you use the Bosch bowl scraper, it will enhancer the mixing.  Beat egg yolk and 2 Tbs water into cream cheese mixture.  Gradually add flour.  Shape pastry into a ball and refrigerate for 1 hour.

Step Two:
In large skillet, combine apples, sugar and cinnamon.  Cover and cook over low heat till tender for about 8-10 minutes.  This is a wonderful time to use your Bosch Slicer/Shredder attachment.  You will have the slicing task done in the blink of an eye!

Step Three:
Turn the pastry dough onto a lightly floured surface.  Roll 1/8th inch thick; cut into 4" circle; top each circle with apple mixture.  Fold pastry over filling and seal well.  Brush with water to help seal.

Step Four:
In small bowl, whisk egg white and remaining water; brush over pastry.  Sprinkle with sugar. 

Step Five:
Bake 375 degrees for 18-22 minutes. 



Great when served with vanilla ice cream!!  Yum!!

Bosch Universal Plus Mixer 

 

 

I bought (I should say, my husband bought!) the nutrimill, bosch mixer, blender and food processor with lots of other items this past summer. It has been a wonderful journey of learning to make bread for my family. They all love it and so do I. I am slowly starting to learn how to incorporate the bosch into my other needs in the kitchen as well. Everything is going well.

The Ordinary People Rule! 

 

The Little Brown Sparrow  

Have you ever wondered what it might feel like to be a brown sparrow in a world filled with red birds, yellow birds, blue birds and majestic eagles?  Perhaps that little, lowly brown bird might think, "Who am I in a world filled with beautiful creations and a big universe.  I might as well give up as I have no real significance in the grand scheme of this world."   

 

The sparrow might despair and convince itself of this false truth BUT God who created this huge universe has His eye on the sparrow!  The Bible tells us in Matthew 10:29 that not one small sparrow falls to the ground without His knowledge.  So, what is the point?  We may think we are insignificant, lowly, not as beautiful as others...we believe that ordinariness is the precursor to uselessness!  We then chase after the rainbow; the spectacular event; trying to make our 'mark' in this big world.  We don't realize or perhaps reject the fact that our ordinary, run of the mill, daily walk is noticed by God.  We don't need to have the spectacular events to be noticed by God nor make our mark.  You are special and have a purpose in this grand scheme of the world.  Take heart dear friend.  The mundane life you are trudging through is noticed by God...and others unaware to you!
