Perfect Bread for your Summer Salad!   Garlic Flat Bread

 

Flat breads, croutons and crackers are usually the typical bread served with a salad.  Just as you don't want people to notice the frame rather than the picture, you don't want your bread to overwhelm your salad.  Having a flat bread gives an added touch to your salad enhancing the salad rather than taking center stage.

 

Here is a fun flat bread...

 

Roasted Garlic Focaccia

4-6 garlic cloves

1 cup hot water

2 Tbs salt

2 Tbs olive oil

1 Tbs salt

2 Tbs raw sugar

1 cup semolina

2 cups whole white wheat flour (Click here) 

2 Tbs SAF yeast (Click here) 

1 Tbs rosemary (dried

Koscher salt

 

Note from Paula: Kosher salt is free of added ingredients but adds a coarser salt topping for your bread! In this recipe, I used all whole white wheat flour and it did just fine.  The garlic flavor is sooo good and you will love it with your salads and goes well with grilled steak or chicken.  Enjoy! 

  

Homemade Croutons!heart croutons

  

Why make a beautiful salad only to top it with stale store-bought croutons?  You have got this wonderful whole wheat bread you made but unfortunately it has gotten stale.  This is the prime time for a crouton! 

 

4 slices of bread, about 1/4" thick
2 T unsalted butter
2 T oil
1 T finely chopped parsley

Cut the bread into cubes or shaped pieces. Heat the butter and oil in a frying pan over low heat. Add the bread cubes/shapes to the pan in a single layer. Saute on each side until golden, about 5 minutes. Dress up your croutons by dipping one side of the crouton into finely chopped parsley.

Another option for making croutons!
You can also simply butter sliced bread on both side and place on cookie sheet. Bake 350 degrees for about 5 min. It will make a crispy melba toast that you would simply cube into croutons. You will want to freeze them as they will mold because they are natural bread.

Making croutons with your bread is a great thing to do with your failed bread.  Think bread crumbs, croutons. Neither of these require light fluffy bread. Dense bread will work just as well as light and fluffy. :)

Summer Salad Recipe Ideas!

Pear Salad!Pear Salad

Ingredients:

1 head leaf lettuce, torn into bite-size pieces
3 pears (peeled, cored and chopped)
5 ounces blue cheese, crumbled
1 avocado (peeled, pitted, and diced)
1/2 cup thinly sliced green onions
1/4 cup raw sugar
1/2 cup pecans
1/3 cup olive oil
3 Tbls red wine vinegar
1 1/2 tsp raw sugar
1 1/2 tsp prepared mustard
1 clove garlic chopped
1/2 tsp salt
fresh black pepper to taste

Directions:
In a skillet over medium heat, stir 1/4 cup of raw sugar together with the pecans. Continue stirring gently until raw sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, and break into pieces.

For the dressing, blend oil, vinegar, 1 1/2 teaspoons raw sugar, mustard, chopped garlic, salt, and pepper.

In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Pour dressing over salad, sprinkle with pecans, and serve. Serves 6


Strawberry Salad

Strawberry Salad

Ingredients:

1 head Romaine lettuce

   (tear in bite size pieces)

2 cups strawberries

1 medium sized purple onion (chopped)

1/2 cup slivered almonds (toasted)

 

Raspberry Dressing:

1/2 cup mayonnaise

1/3 cup raw sugar

1/4 cup milk

2 Tbs raspberry vinegar

1 tsp poppy seed

 

Combine mayonnaise, raw sugar, milk, vinegar, and poppy seeds in a jar with tightly fitting lid and shake until blended.  Chill for 4 ours.  Combine lettuce, strawberries, onion, and almonds in a bowl.  Pour dressing over the lettuce mixture.

 

Serves 4-6

Tips for the Harried Woman

Words, Words, Words

I have been posting a series on WORDS on my Paula's Bread blog and/or Paula's Bread face book.  This month, I share one of my  thoughts on the power of words inspired by a book I read, The Power of a Woman's Words by Sharon Jaynes. 

 

"Have you ever hugged someone and ended up wearing her perfume? We will leave a fragrance, so to speak, by the words we speak." The Power of a Woman's Word by Sharon Jaynes.

 

When I read this statement, it really hit home how my words/our words really do affect others around us. How many times I have hugged a dear friend or my grandma and come away with their perfume scent. The aroma scent would bring fond memories of the previous encounter. Then, I thought about how my words the good, the bad and the ugly words that would sink into the hearts of those they had touched sometimes not hours but perhaps years later. How devastating our bad and ugly words can/could become to those we speak and how uplifting for years to come those good words would grow.

Let me tackle words for the children in our lives. Notice, I said the children in our lives? This means the grandchildren, the nieces, nephews, the little people we encounter. We can impact them all with simple words. In fact, this book, The Power of a Woman's Words, challenge me as Sharon Jaynes shared numerous examples of children's lives touched by a school teacher words spoken into their lives.

Sharon Jaynes shares, "Our words do more than just make our children feel good.  Our words can make them feel like somebody who can accomplish great dreams or like a nobody who is destined to be a loser....The pain from constant criticism and correction can become a chronic source of insecurity long after the child has become an adult.  It is our job, our 'homework,' to instruct our children, but when we are continually pointing out their faults and failures, they tend to simply stop trying....  Oh friend, we should never be stingy when it comes to speaking good words to children, but rather sow them profusely.  Scatter compliments!  Plant affirmations! Sow courage! Water with kindness! Fertilize with prayer!"

Jaynes gave several suggestions on positive ways to give this affirmation and encouraging words.  I think many revert to flattery which is NOT what this is about.  Flattery in the long run destroys and really those who you are flattering see it as empty words.  The best thing I have found to encourage my kids has come in the form of surprises.  Leaving notes on their pillow, sending a note in their lunch; sending a text just to say 'I luv u'; telling them what they did right about a job that they did mostly wrong. :)
