Hard to believe it is May, spring, life!! May is also the occasion to celebrate mothers or simply treat yourself to your own gift with the Mother's Day Sale. See all the different sales running through May 13th!
On the food front, I bring you fresh whole wheat crepes and some other light recipes perfect for a spring tea time or perhaps a Mother's Day brunch!

Whole Grain Crepes!
from "Sensible Cooking Cookbook" Click here
3/4 cup fresh ground whole white wheat flour (Click here)
3/4 cup milk
2 eggs
1 Tbls honey
1 Tbls oil
dash of cinnamon
Combine ingredients in the Bosch blender and process 1 minute. If time allows refrigerate about 30 minutes to 1 hour. Brush bottom of a 6" skillet* or crepe pan with oil or butter. When pan is hot pour about 3 Tbls batter into hot pan. Tilt pan in all directions until butter covers pan in a thin film. Cook crepe 1 minute. Turn or flip crepe and cook additional 30 seconds on other side.
*I love the mini stainless steel skillet. It is great for omelets and is the perfect size for crepes. (Click here to see this wonderful pan!)
There are many filling you can use but here is what I used to make a wonderful, light fruit crepe.
Strawberry/Cream Cheese Filling 
8 oz. cream cheese
5 chopped strawberries
1 Tbls Xagave (Click here)
Mix well and spread on hot crepe. Top with Strawberry Glaze.
Glazed Strawberries 
1/2 stick butter
4-5 cups washed/cut strawberries
3-4 tsp vanilla
1 Tbs Xagave
Directions:
Melt butter and vanilla in pan. When butter browned, add the strawberries & xagave. Saute. Serve warm over cake...crepes...scones!

One Recipe/Multiple Breads!
Basic Whole Wheat Bread Recipe (Click here for Whole Wheat Bread Recipe!)
This is so fun as this is one basic recipe BUT it will tastes like completely different breads. I love what is possible with a simple whole wheat bread recipe.
Directions: You simply cut in with the chopper/scraper the ingredients. You don't want to knead the ingredients into the dough as it will simple swirl through the dough. By cutting it into the dough, the ingredients will permeate the full loaf. With each loaf you cut in the ingredients; let it rise ONE time in the bread pans; bake 350 degrees about 25 minutes or until golden brown. They are delicious. I have step by step pics of this technique on my blog. So here we go with simple ingredients to make: Whole Wheat Cheese/Onion Loaf 
1/2 cup chopped green onions
1/2 cup shredded cheese
Cinnamon Raisin Bread
1 Tbs ground cinnamon
3/4 cup raisins (best if you soak them before cutting in)
1/2 cup chopped walnuts
Mock Rye Bread
1 Tbls dill weed
1 tsp anise

Note from Paula: This is called 'mock' rye bread as there is no rye flour in the bread dough BUT it will taste just like rye bread because of the herbs. For you rye bread lovers, you will love this!

Mother's Day Recipe Ideas!
Ginger Whole Wheat Angel Food Cake! INGREDIENTS: 12 large egg whites, room temperature
1/4 cup warm water
1 1/2 teaspoons cream of tartar
1/2 teaspoon salt
3/4 cup powdered sugar
1 tsp ground ginger
1 teaspoon vanilla
1/4 cup cornstarch
3/4 cup freshly milled whole wheat flour
1 1/4 cups powdered sugar
INSTRUCTIONS:
In the Bosch Universal mixer, using the wire whips, place the egg whites, warm water, cream of tartar, and salt. Mix on speed one until light and foamy. Add 3/4 cup powdered sugar slowly. Turn to speed 2 or 3 and continue whipping until medium to stiff peaks form. Add vanilla.
In another bowl sift flour, corn starch and remaining powdered sugar three times, or once using the L'EQUIP flour sifter. Remove egg whites from Bosch bowl and place in larger bowl. Fold in the flour in three parts. Gently place the mixture into an angel food pan.
Bake in a preheated oven at 325 for 45-60 minutes. Do NOT open the oven during baking. This could cause the cake to fall. When finished baking turn upside down onto cooling rack and allow to be suspended for 3- 4 hours before serving.Gingerbread Scones 2 cups whole wheat pastry flour
3 Table spoons brown sugar*
2 teaspoons baking powder
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup cold butter
1/3 cup molasses
1/4 cup milk
1 egg, separated
Sugar
In a large bowl, combine flour, brown sugar, baking powder, ginger, baking soda, salt, and cinnamon. Cut in butter until mixture resembles coarse crumbs. In a small bowl, combine the molasses, milk and egg yolk until smooth; stir into the flour mixture just until moistened.
Turn out onto floured surface; knead gently 6-8 times. Pat into an 8 inch circle; cut into 12 wedges and place 1 inch apart on a greased baking sheet.
Beat egg white until frothy; brush over scones. Sprinkle with sugar.
Bake 400 degrees for 12 to 15 minutes or until golden brown. Remember the molasses makes the dough darker and they will be hard to see them browning. Serve warm. Makes 1 dozen.Note from Paula: Sorry to have ginger as the theme for Mother's Day. I guess because of my love for ginger anything, my kids make ginger foods for my Mother's Day. They really are delicious. Enjoy!

Tips for the Harried Woman

In honor of Mother's Day, I found a quote out of the book, "The Power of Woman's Words." I think this applies to all of us whether a mother or not!
"You are going to meet an old lady someday. Down the road, ten, twenty, thirty years; she's waiting for you. You will catch up to her. What kind of old lady are you going to meet?
She may be a seasoned, soft and gracious lady. A lady who has grown old gracefully, surrounded by a host of friends - friends who call her blessed because of what her life has meant to them. She may be a bitter, disillusioned, dried-up cynical old buzzard, without a good word for anyone or anything - soured, friendless, alone. The kind of old lady you will meet will depend entirely upon you.
She will be exactly what you make of her, nothing more, nothing less. It is up to you. You will have no one else to credit or blame. Every day, in every way, you are becoming more and more like that old lady. You are getting to look more like her, think more like her and talk more like her. You are becoming her. If you live only in terms of what you are getting out of life, the old lady gets smaller, drier, harder, crabbier, more self-centered. Open your life to others. Think in terms of what you can give and you contribution to life, and the old lady grows larger, softer, kinder, greater.
These little things, seemingly so unimportant now - attitudes, goals, ambitions, desires - are adding up inside where you cannot see them, crystallizing in your heart and mind. The point is these things don't always show up immediately. But they will - sooner than you think. Some day they will harden into that old lady; nothing will be able to soften or change them then.
The time to take care of that old lady is right now, today. Examine your motives, attitudes, goals. Check up on her. Work her over now while she is still pliable, still in a formative condition. Then you will be much more likely to meet a lovely, gracious old lady at the proper time.
Father, may the words of my mouth and the meditations of my heart be pleasing in Your sight today. Help me to be all that You created me to be. Amen."
