One Stop Cookies! One Step Cookies

 

Your Bosch Universal is your power tool for your kitchen!  I can make up to 32 dozen chocolate chip cookies at one time.  Now, we don't eat that many at one time but freeze the dough and have fresh chocolate chip cookies when the whim hits us.

 

So at Christmas you might want to make a variety of different cookies to give as gifts or in my case EAT!  Here is the One Stop Cookie recipe.  You make the basic batch, then divide the dough into 3 parts.  Put one part of the cookie dough back into the Bosch bowl and incorporate the different ingredients to make totally different types of cookies.  Your guest/family will be ecstatic with all the choices of cookies and you won't be exhausted because you only made 'one' batch of cookies!  

 

Basic Cookie Dough

3 lbs unsalted butter, room temperature

4 1/2 cups brown sugar

1 1/2 cups raw sugar

12 large eggs, room temperature

2 Tbs vanilla

18-20 cups sifted pastry flour *

3 tsp salt

2 Tbs baking soda

Add the below combinations for cookie variety.

 

In the Bosch Universal Plus with the cookie paddles attached, place in butter and the raw sugar.  Cream together for about 2 minutes.  Add brown sugar and cream another 2 minutes.  Crack eggs in separate bowl and add the eggs slowly to the mixer at speed one.  Add vanilla.  

 

In separate bowl, combine flour, salt and soda.  Whisk thoroughly.  Add flour in small batches to the wet ingredients.  Do not over mix.  Only mix until the flour has been incorporated.   

Scoop out in 1 oz. balls.  Place on cookie sheet close together and freeze for 2 hours.  Once hard, place in freezer bag and store up to 2 months!  If baking now, bake 350 till golden brown.

 

Variety Cookie Combinations:

Craisin/white chocolate:  

1 cup craisins (presoak in water); 1 cup chopped pecans; 1 cup large white chocolate chips.

Chocolate Mint Cookies:

1 cup cocoa powder; 1 tsp peppermint extract; 1/2 cup mint chips 

Candy Cane Cookies:

3/4 cup crushed peppermints (about 36 peppermints); 1 tsp peppermint extract; 1 cup shredded cocoanut (optional) Use your Bosch blender or Bosch food processor to chop/crush the candy. 

Peanut Butter Cup Cookies:

1 cup Reeces chips; 1 cup cocoa.

Holiday Recipes

Sweet Dough for Wreath
Christmas Wreath
1 Tbs. yeast
1/4 cup warm water
1/2 cup warm milk
3 Tbs. sugar or Xagave
1 stick of butter
1 1/2 tps. salt
2 eggs
1 tsp. grated lemon peel (I usually leave this out)
3 1/3 cups white wheat flour

In Bosch mixer, dissolve yeast in water. Stir in milk, sugar, butter, salt, eggs, and lemon peel. On speed 1, add 3 1/2 cups whole wheat flour. Knead 6 minutes. Cover and let double in size (about 1 1/2 hours.) Note: the dough will be heavy. Roll dough into rectangle; add filling; roll up like a jelly roll; slice lengthwise; braid two parts. Let rise. Bake 350 degrees 45 min. or until golden brown.


Filling:
8 Tbs. butter melted
1/4 cup whole wheat flour
2 Tbs. sugar or Xagave
2/3 cup finely chopped almonds
1 cup chopped red and green candy cherries
1 tsp. almond extract.

Tips for the Harried Woman
Ginger Bread House Competition
Last month, I talked about family holiday traditions that I would share.  I have told about our Family Ginger Bread Competition and this year was no exception.  The Saturday after Thanksgiving everyone gathers to have yet another dinner; decorate the Christmas tree and have our annual Ginger Bread Competition.  I announced to the family that we were making the "Sutton Estates" and they needed to not only make their home for our estate but name their home. 

We pair up in teams.  The married couples are a  team and the rest of the kids partner to create their 'house.'  It is always a riot to watch the creative and competitive juices come out of my kids...even the adult 'kids!'  They all tore open their ginger bread box and started whispering their ideas with their perspective partner.  The whole thing last about 1 hour and they have so much fun bantering  to the others about their home being the best. 

I love the traditions that make us interact with each other and have a flare to them.  You should try this sometime. It is soooo much fun!
