Dear Fellow Breadlovers,

Well summer is sweltering away and it is the time to think cool.  We pulled out our trusty Bosch slicer/shredder and made refreshing snow cones and frozen lemonade!  See the how to's below!

I included a gluten free bread idea.  This will be great for those with gluten intolerance but also give you a recipe to serve when you know your guest (s) is gluten intolerant.  What a treat to that guest to have a bread on the table they can eat too!

Fast Snow Cones!  Snow Cones

 

Now you don't have to run to a snow cone hut to get the pleasure of a cold snow cone.  These are sweltering days and a icy snow cone fits the bill to cool down.

 

Simply pull out the Bosch Slicer/Shredder attachment.  The rasping disk is perfect to make the shaved ice.  (Click here to learn more) You can also use the Bosch Food Processor with the bottom blade to make the shaved ice.

 

We served ours in Sundae cups but you can purchase the paper snow cone cups for authenticity, if you like.  Get your ice cream scoop to dish the ice in the serving container and then pour your topping.  Oh soooo good!

  

  

Toppings we used

For easy topping use Blueberry and strawberry pancake syrup!

 

Strawberry snow cone:strawberry snow cone

1 pint hulled strawberries

2 limes juiced

1 cup Xagave  (click here)  

1 cup water 

 

Puree in Bosch blender and then pour over snow ice.  You can also add the ice directly to strawberry mix and it makes a Strawberry Julius.

Here is a fun Bread recipe to make as a side dish especially when entertaining someone who is gluten intolerant.  People who have gluten issues never seem to have anything on the table, especially breads, that they can eat.  What a treat to serve these bread sticks to the gluten intolerant guest.  You will warm the heart of the gluten free person dining at your table.

 

Bread Sticks

from "Life Tastes Good Again" cookbook* (Click here)

   

3 cups French Bread Mix* (see mix recipe below)

1/2 cup dry milk powder

1 Tbs dry yeast

4 egg whites

3 Tbs. oil

1 tsp. vinegar

1 1/2 cup warm water

 

Mix flour mix, milk powder and yeast in a medium bowl.  In Bosch Universal bowl, mix the wet ingredients.  With mixer on speed 1, slowly add dry ingredients.  Beat for 3 1/2 minutes.

 

Spoon dough into a pastry bag or Ziploc bag then cut the corner off to a 1/4 inch opening. I used a press for ease.  Squeeze dough onto the greased cookie sheet in 4-5 inch lines about 2 inches apart.  

 

Brush with melt butter and let rise till doubled (about 20 minutes)

 

Bake 400 degrees for 10-15 minutes or until golden brown.

Best served immediately and then keep left over bread sticks in the fridge.

 

*French Bread Mix:

from Bette Hagman's cookbook

 

3 1/2 cups white rice flour

2 1/2 cup tapioca flour

2 Tbls. xanthan gum

2 (7 grams) packets unflavored gluten

2 Tbs egg replacer

1/4 cup sugar

Frozen Lemonade

Frozen lemonade
Lemonade Recipe
6 lemons*
1-2 cups Xagave
4-5 cups cold water



Freeze the lemonade in ice cube trays.  Use your Bosch slicer/shredder with the rasping disk (Click here) and you will have fast snow ice frozen lemonade.

 

*Use the Bosch citrus juicer for ease in getting the full juice out of your lemons.  (Click here to learn more)

 

A great treat on these hot summer days.

 

 

 

Orange JuliusOrange Julius
from Sensible Cooking Cookbook*  (Click here)

  

1 cup milk

1 cup water

1 (6oz) can frozen orange juice concentrate

1/2 cup Xagave

1 tsp vanilla

12 ice cubes 

  

Put all ingredients in Bosch Blender.  Jog "M" (momentary) switch 5-6 times.  Immediately turn to speed 4 and blend until smooth.

 Note from Paula: Tip for using your Bosch Blender!! When blending any frozen drinks, always jog "M" (momentary) switch to unlock food from blade assembly after ingredients have been added! 

 

 

 

 

 Grilled Pizza! Grilled Pizza

We use the basic bread recipe and make grilled mini pizzas galore.  We frozen grilled pizza then freeze the grilled pizza doughs to pull out of the freezer when we decide to have the wonderful flavor of grilled pizza without having to face the heat of the grill.

 

 

 

We then put our pizza sauce and toppings on the pre-made grilled pizza bread and bake it for about 15 minutes.  This is a heavenly twist to pizza and gives you the wonderful flavor of the great outdoors.

Bosch Universal Plus Mixer 

When I purchased my Bosch mixer, I had already been baking all my family's bread, pizza dough, biscuits, etc. from scratch at home. I enjoyed feeding my family such nutritious food, but I would get annoyed when my 2 year old needed to go potty, or my 7 month old woke up crying, and I had bread dough stuck all over my fingers. Also, I could never properly work my dough to give it a light texture, while still using 100% whole wheat flour. After my first batch of bread with the Bosch, I was totally sold. I had bread on the table in about an hour and it looked like REAL BREAD, not "bread cake," like my loaves before. Also, Paula's bread DVD taught me some basics, like how to let it rise just enough but not too much. I always had sinkers before, but with my Bosch, I had light, moist, full loaves the first time

Tips for the Harried Woman

 

Though a digression from a harried woman tip, I think it does us well to count our blessings to see what we have and appreciate those blessings as we read/hear of others around the world suffering.  If you have visited my web site you might have ventured to the "Spiritual Info"  At the bottom of the page, I talk about Gathering Hearts for Honduras which is a mission center meeting the needs of  the impoverished in Seis de Mayo. Gary Kuney, mission director, tells is a touching story of just one of the lives this Mission Center has touched:
     

"We first met Oscar Chavarria about a year ago when he came to the medical clinic. He had survived a machete attack (barely) and was in very bad shape.  It wasn't clear at that time just how bad, as we could only see what he was unable to cover up with his tight fitting clothes. We were able to see the gashes on both sides of his face where both ears had obviously been cut through; his wrist was strapped and without movement; and a metal plate that had been attached to a trachea that allowed him to breathe, as his throat had been cut. However, at that point, there was little we could do except give antibiotics to control the infection.

 

Oscar visited the Mission Center a couple more times between clinics and then again while a medical team of doctors from Colorado had arrived. After a quick exam, they said it was imperative that we get the trachea removed from his throat or he would likely develop further infection.

 

This would require surgery for which we were not prepared. The public hospital, due to sanitary conditions, was out of the question, even though they had saved his life the night of the attack; and the private hospital was much too expensive.

 

We had shared the need and several people were praying. Shortly thereafter, we were shopping for supplies for the manufacturing plant.   I noticed right next door there was an office of an ENT specialist. I thought, since I was already there, I would see if perhaps he could help. He was not able to do that kind of surgery but referred us to another surgeon who could. The surgeon was a kind and generous man who agreed to examine Oscar; and on the same day scheduled surgery.  Later that day, Cheryl asked me how much it was going to cost and I had to admit I didn't ask. I really didn't forget; I was  afraid if I inquired, the discussion would end there. However, we needed to know so I called and talked to the assistant. She said, "The doctor says it will be no more than 5000 lempiras; 2000 for the surgeon (about $100) and 3000 (about $150) for the hospital, including hospital room, surgical suite, etc. That's $250 for surgery at one of the finest hospitals you would find anywhere! It so happened that we had three checks that had not been cashed plus a donation from a dear lady that gave us the exact amount.  A coincident?  I think not.  God is painting His mural showing His precise power over all.  Incidentally, this is the hospital where the director of St. Francis Children's Hospital (Tulsa, OK) visits regularly to perform heart surgeries on needy children here in Honduras.

 

Oscar came through the surgery very well and is recovering, though not as quickly as he would like.

 

A heartwarming footnote: While his life was hanging in the balance the night of the attack, Oscar's sister witnessed to him all night long, and he accepted Jesus Christ as his savior. Since then, he has become, to say the least, zealous.  When he learned that the doctor's assistant was a member of a religious cult Oscar wrote Scripture verses in small print covering both sides of an 81/2 x 11 page explaining the fundamentals of the Christian faith. This is a young man who has no more than a third grade education."
