Fresh French Fries!
America is known for hamburger and fries as their classic meal. McDonald's ring a bell? :) When you make this classic meal at home, you might think you need to run to the store for frozen fries to cook for this dinner. Wait!! Pull out your Bosch slicer/shredder accessory. With the French fry cutter disk, you can make perfect French fries with white potatoes OR sweet potatoes. The slicer/shredder makes potatoes into perfect fries. I simply fried these potatoes strips into crispy fries using coconut oil in my frying pan. They are fast and easy to make and soooo much better than any store bought fries. I left the peel on the potatoes to make them even more healthy! Look out McDonald's competition is coming.
This is just one more way to utilize your Bosch accessories. I love the slicer/shredder with its 12 cup bowl capacity. I use it to grate cheese, slice veggies, shred lettuce making perfect taco salad and the list goes on and on with the things you can do with this wonderful Bosch attachment.

Home Made Hamburger Buns!  Hamburger buns are so easy to make and they add wonderful flavor to your hamburgers. These can be flash frozen after they are formed on your baking pan without any covering. When they are completely frozen, then take them out of the freezer and place in bread bags or an airtight container. When you want to use them, take them out of the freezer, place on a greased jelly roll pan, and cover and let thaw and rise--8 hours or more. Then bake. You can also freeze hamburger buns after they are baked.

First the bread recipe: You can use the basic bread recipe or a multi-grain bread recipe for an enhance flavor.
Here is the basic bread recipe: Paula's Whole Wheat Bread (3 Loaves)
*3 1/2 cups warm water (about 120 to 125 degrees temperature) * 3 Tablespoons SAF yeast * 1 Tablespoon Dough Enhancer * 1/3 cup oil * 1/3 cup honey * 1 Tablespoon salt * 10 cups of whole wheat flour
Place all ingredients in your Bosch Mixer with only 5 cups of whole wheat flour. Turn Bosch Mixer on Speed 1. Add the rest of the whole wheat flour till the dough pulls away from the sides of the bowl..about 5 more cups of flour! Mix/knead for 4 minutes. Form into 3 loaves and place in Stainless Steel bread pans to rise once. Bake at 350 degrees for 20-25 minutes. OR MAKE into hamburger buns! Instruction for hamburger buns taken from Shelly's Bread Cookbook: Method #1- Roll your dough into a 10"x14" rectangle 3/8" thick on a greased counter. Using a large pastry cutter, cut into rounds. Place each bun on a greased jelly roll pan and brush with an egg-wash and sprinkle with sesame seeds. Let rise 20 minutes and bake 12-18 minutes at 350 degrees.
Method #2- Using 1/6 of your dough, divided your dough into 10-12 equal pieces. Roll each piece of dough into a ball in the palm of your hand, and press down firmly on a greased jelly roll pan. Brush with an egg-wash and sprinkle with sesame seeds. Let rise until doubled and bake 12-18 minutes at 350 degrees. Note from Paula: If you let the dough sponge (dough sits in the bowl for about 10 min. after kneading) it really helps to make the dough softer.

Summer Recipes
Tangy Ketchup from "Delicious Meets Nutritious" Cookbook (Click Here)* Ingredients: 1 6oz. can tomato paste 1 8 oz. can tomato sauce 1/4 cup water 1/4 cup Xagave 1 tsp. salt 1/4 tsp. cumin 1/2 tsp. garlic powder 1/2 tsp. onion powder 1/2 tsp. chili powder Pinch of cinnamon (optional) 3 tbsp. cider vinegar 3 tbsp. white wine vinegar
Steps: Mix all ingredients in your Bosch blender and blend until smooth. Store in a plastic squeeze bottle.
Will store in the refrigerator for several weeks.
Note from Paula: This ketchup is great for those fresh French fries! We made a lot to have it ready for our summer cookouts.
Natural Strawberry Jam from "Delicious Meets Nutritious" Cookbook (Click here) * Ingredients: 2 quarts strawberries 3 cups Xagave (Click here) Juice from 1/2 lemon 1 tsp. lemon zest Steps: Lightly blend strawberries, Xagave, lemon juice and zest in blender (you want to keep it chunky). Pour mixture into pot, bring to a boil and reduce to a simmer. Let simmer for 45 minutes, stirring occasionally. Pour jam into an air tight container. Jam will store in your refrigerator for several months. Note from Paula: This is a wonderful, soooo good natural strawberry jam you can make during this spring strawberry season. It is so easy to make and with Xagave you can cut the sugar highs eating jam! *I can manually adjust cookbook shipping costs. Tips for the Harried Woman

So spring has sprung and our garden is trying to spring. What does this have to do with a harried woman? Well, life happened and all my great plans of preparing a garden for a bountiful summer of produce did not happen in February...didn't happen in March. We had a wonderful friend see our need and rototil a plot for us in April. Under my assurance and guidance of no underground phone line in this little area, he proceeded to rotatil my phone line! Sound like a harried moment? Thankfully the phone line was repaired and buried the next day and my friend graciously didn't hold the 'blond' moment over me. Humm...I have heard that gardening is supposed to be relaxing and soothing? Well, I will still say yes. Even with our rocky start, the kids and I have enjoyed planting our little seeds and they are having a ball watching the new growth. Even if you only have a small plot or perhaps a raised bed, this is a great activity to do with your kids. I may be reap lots of weeds and few veggies but it will be worth the fun watching the kids enjoy the new growth from their labor and seeing God's wonderful creation grow. BTW, I do realize we have way too many rocks in our garden but we grow rocks. We will clear our plot only to have rock reappear days later. Our rocks are crying out praising God. :) I will be covering next month a great way to preserve and use your garden bounty! I may have to get my bounty from a farmer's market but it will still be fresh! Plant some seeds and have fun! Do you have a garden story?
