This issue gives a fun idea for St. Patrick's Day to serve your guest or family.  My kids sure enjoyed taste testing for the newsletter.  They thought they would have to wait till St. Patrick's Day to eat this wonderful treat!  

 

I brought back our past running feature of different grains.  This month feature is amaranth!  Hope you enjoy learning about this unusual little grain.

A Fun Idea for St. Patrick's Day! St Patrick's Day Wreath


I used the basic bread recipe (click here for recipe) to make this fun wreath.  One difference in the recipe: I let the dough sponge  for 10 minutes.  Sponging  means to simply leave the dough in the Bosch bowl for the 10 minutes.  This will make the dough lighter and fluffier. 

 

Filling Ingredients:

1 stick of butter melted

1 cup sugar (you could dye the sugar green for a festive look)

1 cup cut green candied cherries.

 

Directions: 

Roll the dough into a rectangle.  Cover the dough with melted butter and sprinkle sugar over the butter.  Spread cut green candied cherries.  Roll the dough much like you would a jelly roll.  Form into a ring and use kitchen scissors (click here) to cut and twist the dough.  Let rise till doubled.  Bake 350 degrees till golden brown.   You can check out my Paula's Bread Blog or Paula's Bread facebook to see more pictures and details on making this wreath.

New Grains for our Diet!   amaranth grain
In continuing the series on different grains, I will feature an unusual little grain called amaranth.  

This is a tiny little seed some would refer to as a weed because it is so prolific as weeds.  It is about the size of a poppy seed and is highly nutritious because of its high proportion of lysine (an amino acid.)  It can be added to your bread for a great flavor but only 15% of amaranth to the rest wheat flour.  You can also add this little amaranth grain to soups and casseroles to provide a crunchy texture.

An interesting aspect of this little grain is that it can be popped! You can add nutrition easily to a recipe with the popped amaranth.  By placing about two tablespoons of the grain in a deep, dry, hot pan, it pops quickly.  One-fourth grain will yield one cup of popped amaranth.  Add this popped grain to dough to lighten the doughs texture.

So what do you do with this grain?  You can mill the grain or pop the grain.  It is a real plus for those with gluten allergies. This grain definitely qualifies for a gluten free diet.

I know I sound like a broken record in having your own  Nutri Mill Grain Grinder BUT you will save so much money, IF you grind your own flour.  To purchase these specialty grain flours at the health food store, you will pay a huge price and not be getting the nutrition from the flour.  Within 78 hours after milling your grains into fresh flour, ALL the nutrition oxidizes out of the flour.  To get whole wheat flour or any other grain with all the nutrients, you need to mill the flour and use it within 78 hours or freeze it.  Many buy the frozen flour at the health food stores but really they are still not getting the nutrition because the milling company don't quick freeze the flour. 


Amaranth Recipes

 

Amaranth Nut Bread amaranth nut bread

6 cups hot water
1 cup apple juice concentrate
1 cup oil
1 cup honey
6 cups fresh whole white wheat (click here)
3 cups rolled oats
3 cups amaranth flour
3 cups chopped nuts (walnut, pecans, sunflower seeds)
2 Tbs. salt
2 Tbs. dough enhancer (click here)
1/3 cup gluten flour (click here)
5-6 SAF yeast  (click here)
8-10 cups additional whole white wheat (click here)

1. In Bosch bowl add all ingredients, with yeast on top, except last amount of flour.  Pulse, until flour is completely moistened.  Turn off and sponge for 15-20 minutes.

2. Turn machine back on speed 1 while adding additional flour, until dough cleans the side of the bowl.  Turn machine to speed 2 and knead for 3-5 minutes.

3. Shape dough into 6 equal pieces.  Put in greased bread pan and let rise till doubled.  Bake 350 degrees for 30-35 min.

Makes 6 loaves.

 

Note from Paula:  This is a really heavy bread dough to mix!  The Bosch mixer is really the only mixer I would recommend making this bread.  This is the beauty of the Bosch Universal Mixer because its 800 watt motor has no trouble with this heavy dough or for that matter any heavy dough.  The Bosch can need 25 pounds of dough at a time!!  Humm....do I sound like I love my bosch? :) 


Blueberry Coffee Cake    amaranth blueberry coffee cake 

from Cooking with Chef Brad's cookbook

1/2 cup amaranth, popped*
2 1/4 cup kamut flour
1 cup sugar
1 1/3 Tbs. baking powder
3/4 tsp. cinnamon
1/3 tsp. salt
1 cup milk
1/3 cup canola oil
2 eggs (well beaten)
3/4 tsp. vanilla extract
3 cups blueberries (fresh or pan frozen)
1/4 cup sugar
3/4 tsp cinnamon
1/4 cup pecans, chopped.

*I used amaranth flour
** Better with a 9" pan.

Preheat oven to 350 degrees.  Lightly oil 8"x8" pan.**

Batter:

Combine first 6 ingredients in medium bowl.  Make a well in center. Combine milk, oil, eggs and vanilla.  Add all at once to flour mixture. Stir until dry ingredients are moistened and liquid is evenly distributed.  Pour batter in pan in stainless round cake pan. (click here)  

 

Topping:

Spread blueberries over top of batter.  Combine sugar and cinnamon.  Spoon over blueberries.  Sprinkle with nuts.  Bake 40 minutes or until wooden pick inserted in center comes out clean.

 

Note from Paula:  He recommends popping the amaranth grain.  I simply used 1/2 cup fresh amaranth flour as it was easy than trying to pop enough amaranth to make a 1/2 cup!  Another change to his recipe, the 8x8 pan is too small for this much cake!  It overflowed in my oven so a 9" pan would be much better!

Bosch Universal Plus Mixer 

I bought a L'Equip Dehydrator from Paula's Bread. I received it very quickly. In fact, it arrived so fast we were wondering what the package was at the door. We were pleasantly surprised to discover it was the dehydrator. I have made flax seed crackers, cookies from oat groats, fruit leather, and have dried fruit. Any time that I have had a question regarding the dehydrator, Paula has responded quickly.

Tips for the Harried Woman

I have lately thought about the need to be a woman of character and what it really looks like.  Everyone knows that great character is what we all need, desire to build in our children, look for in the people we work with or deal with in our daily lives.  So what does character mean or look like?  A great man of character to emulate would be Daniel of the Bible.  Many know the story of Daniel in the lion's den but there is really a great story of true character found in Daniel's full life story.  So bear with me as I give my take on character.  

     Daniel out of no fault of his own is brought into slavery under the godless King 'Neb.'  As you follow Daniel's life, he is promoted to top wise counselor for King 'Neb.'  Daniel holds this title through Daniel 4. Chapter 5 opens with King "B" now being king and having his godless party where the hand comes out and writes King "B's" doom on the wall.  King "B" calls all his wise men, sooth-sayers, astrologers in to interpret for him.  Daniel is not called by the King as Daniel is no longer the top dog wise-man nor even among the group of wise-men! Dan. 5:10-12 says how the queen remembers this wise man who was supposed to be the wisest discerner for dreams.  King "B" calls Daniel in, and sure enough, Daniel interprets right on the money the hand writing on the wall.  Chapt. 6 opens with Daniel once again being promoted to the top dog wiseman position only to have the other princes conspire against him out of their jealousy for losing their top rank.


You know the story but I want to challenge you with the Daniel character.  Daniel did not react with the normal character reaction to losing the title even when he was in the position and the most qualified for the position.  In fact, Daniel chapter 6 reveals the normal reaction that Daniel should have had ...Daniel should have reacted as the other princes did with jealousy, revenge, coveting, when losing his top position he once had under King 'Neb.'  The princes are bashed by the reader, and for good reason, for their conspiracy against Daniel.  However, the princes really had the normal reaction we all probably struggle with....jealousy, revenge, coveting, ...reacting to no appreciation, no recognition of our hard work, unfair treatment for all our hard work...ouch the list goes on and on.

  Think of this in modern day times.  You know all the ends and outs of your position at work and the innerworkings of your job and those around you.  You get the management position, you are now the top dog, and rightly are the perfect choice for the position.  Now, you are demoted to a position that no one even remembers who you are nor what great things you have done to help the company stay on track.  Hummm....this is too close to home, I think.  To be a Daniel would be to be content whether raised up or abased.  When looking in this light, the jealous princes really reacted like the normal reaction of most people.....to be a Daniel is really an extrodinary life to live.

I pray you and I take the challenge to mentor and try to follow in the godly footsteps of Daniel, as we meet the challenges of the world.  I was pretty wowed once again at the character of Daniel who had an 'excellent spirit'  May we seek to have an 'excellent spirit' as well to His glory and honor.  Take the Daniel Challenge! :)
