Welcome to Paula's Bread
Dear Fellow Breadlovers,

Happy New Year!  Can you believe it is already 2011?!  I was just getting settled into 2010 and now that year is past and we are on to new adventures for this coming new year.

With the new year starting, you may notice a pattern of colds and flus hitting during the month of January.  Could this be from the high sugar consumption?  Probably.  In this issue, I have included some recipes for warm soups to bring health to your aching bones.  I hope you enjoy.

God bless you,
paula :)

A Great Accessory for your Bosch!slicer shredder

Have you wondered why this accessory is called a 'slicer/shredder?'  It is because FDA regulations require a locking lid for a kitchen tool to function and be labeled food processor.  The slicer/shredder does have a locking lid but will still work if the lid is not properly locked.  Why anyone would want to turn the slicer/shredder on with a spinning blade is beyond me!

The slicer/shredder is one of my favorite accessories for my Bosch Universal Plus mixer.   So, why buy the Bosch slicer/shredder? It has a 12 cup capacity which holds  a lot of shredded cheese, a real plus for me!  It has a shredding and slicing disks which do both thin and thick.   You can slice almonds and veggies to perfection.   The French fry cutter makes fabulous French fries out of your potatoes but I use it  to cut my veggies for stir-fry foods or shred iceberg lettuce for tacos!  It is so easy to use.  The slicer/shredder can be expanded with the julienne disk and/or the rasping disk.  The rasping disk makes perfect snow ice.  See my recipe below for great snow cones made easy.  (click here)

The best is that it can become a mini mixer.  I used ours Christmas day to make our whipping cream for our pies.   I had used my big Bosch bowl for our mash potatoes and used the slicer/shredder bowl with the mini whip to make home made whipping cream.  I simply poured heavy cream into the slicer/shredder bowl with 1/2 cup powder sugar.  I turned the Bosch mixer with the slicer/shredder attachment and whip to speed 3  and in minutes had perfect whipping cream.  Delicious.  whisk slicer shredder

The mini whisk does a great job mixing light batters or making whipping cream.

Some great soup for aching bones!

So we should be talking weight loss now but too many are suffering from viruses or flu symptoms to care about the extra pounds. I usually feature grains and breads in this column but somehow feel there are too many of us who suffer the from our 'sin' of way too much sugar during December.

Our family finds soups soothing and healing, when those aches come.  Here is an easy one to make using your Bosch blender.

You can make this soup and other even more filling and wholesome soups by serving the soup in a bread bowl!  The juices of the soup soak up into the wonderful wholewheat bread and it is so yummy to devour the bread soaked w/ soup broth.

Hope you enjoy the soup without all the aches of flu season!

Baked Potato Soup   potato soup
from my sweet daughter in law

2 (8 ounce) potatoes
4 tablespoons butter
1 medium onion chopped
2 tablespoons green onion, chopped
3 cups chicken broth
salt and pepper to taste
pinch nutmeg, grated
1 cup half and half

Garnish:
sour cream
shredded cheese
minced green onion
parsley

Peel potatoes.  Reserve pulp.  In a 2 quart saucepan, saute onions in butter over medium low heat until soft, about 8 minutes.  Add chicken broth, salt and pepper, nutmeg and potato pulp.  Stir to blend.  Transfer to Bosch blender or Bosch food processor.  Process until smooth (for chunkier soup, process only slightly).  Return puree soup to pan and stir in half and half.  Heat to serving temperature.  Garnish bowls if desired.

Serves 4

Garnishing:
sour cream
grated cheese
chopped green onions

Chicken or Turkey Rice Soup!   turkey/rice soup
A Sutton creation! :)

3 cups rice
8 cups Chicken broth + water to make watery soup base
1 cup half n half
2 cans cream of celery soup
1 small bag frozen peas & carrots
3 to 4 cups shredded chicken or turkey
salt n pepper to taste

Simply simmer the rice in the chicken broth till tender and the rice is almost a mush consistency.  I added water to the broth as the rice will soak up the chicken broth rather quickly.  Add as much water to get the consistency your family likes for soup.  Add 1 cup half n half; cream of celery soup; frozen peas & carrots.  Add shredded turkey.  I shredded the hot turkey with my Bosch gourmet whips!.

Serve in bread bowls!

Note from Paula:  This was my attempt at throwing together a soup to use up the left over turkey and soothe the aching bones from the onslaught of flu that pounded our family after Christmas!  Hope you enjoy.

Chicken or Turkey Broth
from "Soups and Muffins" by Sue Gregg (Click here)
1. 4-5 # chicken or turkey pieces with bone in pot with water and bring slowly to rolling boil.

2.  Add a couple of carrots chopped; 1/2 teaspoon marjoram leaves; 1/4 teaspoon sweet basil leaves.

You can also use your crock pot on low for 8-10 hours or high for 3 1/2 to 4 1/2 hours.

Note from Paula:  This is a great broth you can make ahead and freeze in 2 cup increments which is usually what most recipes require when needing chicken broth. Also, if you are interested in the cookbooks, I can adjust the shipping on cookbook purchases by mailing via USPS. :)

Snow Ice made with Slicer/Shredder attachment!

1.  Use the Bosch slicer/shredder rasping disk to turn 2-3 trays of ice cubes into a snow ice consistency.  You simply process the ice through the rasping disk and have snow ice! (click here to learn about the rasping disk)

2.  Place snow ice in cup and drizzle with:
Strawberry Syrup OR favorite fruit syrup

Note from Paula:  Let your imagination go when adding fruit syrups.  This is a fun treat and so easy to make! :)

Bosch Universal Plus Mixer

I love my Bosch and Nutrimill!  My husband was dead set on a KitchenAid mixer.  Thankfully, he hadn't purchased one for me yet.  I attended one of Paula's seminars at a home school conference and realized how much a Bosch and Nutrimill would make my life easier.  We wouldn't eat the homemade bread I made because it was heavy, dry, and just took too much time!  Now, I make at least one or two batches a week (5 loaf batches) and we use or give away almost all of it!  After e-mailing Paula because my bread was not like hers, it now turns out wonderful!  Paula was patient with me, answered all my questions, and walked me through making wonderful whole wheat bread!  I even had a minor issue with my Bosch mixer, and she contacted the company and got me a replacement part!  Her service is fantastic and the products she sells will last a lifetime!  Thank you and God's Blessings Paula!

Tips for the Harried Woman

These thoughts for the harried woman will come in a series that I will post on my blog, as I feel the burden of squashed expectations are probably great.  There is so much hype of the perfect Norman Rockwell Christmas; the perfect family traditions that we know everyone around the world is experiencing. except for us.  Perhaps you were one of those having the perfect family gathering or perhaps you were in my boat of dashed expectations.  Our 30 years of family traditions changed simply due to life circumstances.

I think as women we think way too much and have far too many expectations of what the perfect Christmas or family gathering must look like.  You would think with such a large family that we would have this massive family gathering for days on end.  This year was very different and broke all our traditions yet it was good.  Because only a few could come Christmas Eve, we changed our normal traditons into a quiet dinner.  It was a wonderful evening but so different from my traditions.  I guess that is a big lesson the Lord taught me that change is good and I guess God can teach this 'old dog' new tricks.

My admonition is to embrace change and look toward this new year with new eyes of what new things God wants to let you experience this year.

 Encouraging Thoughts:

"Farmers in ancient Israel used to train an inexperienced ox by yoking it to an experienced one with a wooden harness.  The straps around the older animal were tightly drawn.  He carried the load.  But the yoke around the younger animal was loose.  He walked alongside the more mature ox, but his burden was light.  In Matthew 11:29, Jesus is saying, 'I walk alongside you. We are yoked together.  But I pull the weight and carry the burden.'  I wonder, how many burdens Jesus will carry for us this year that we know nothing about?"

by A Love Worth Giving

The message of Christmas is Emmanuel: God with us!  Let us cling to that knowledge and hope this coming year!
