School has begun for many and it is back to the grind of errands, school projects, taxiing kids, etc. This newsletter has some tips on making some fast nutritious breakfast to help you get the day started right! Enjoy.
To celebrate September which is "Whole Grains Month," I brought back our past running feature of different grains. This month feature is Ezekiel Bread! Hope you enjoy the info on this mysterious bread.

Fast, nutritious Breakfast Ideas!

Remember June Cleaver with her little apron and pearls? She would have this massive breakfast to feed her little darlings before they headed to school. Sorry but those days are pretty much a dream world now. I still want to get my kids off with a nutritious breakfast so their little brains cells will work to the max. Here are some fast, easy ideas to get the nutrition into the kids and still fit into the fast pace we all seem to be running in.So what's for breakfast?.... Home made granola. I have posted this recipe on my web site (click here). This is a staple that is good for you, inexpensive, and easy to make. The kids can use this nutritious cereal in lieu of the store cereals. Hearty Muffins Selections. You can make these ahead and simply let them defrost over night or pop them in the oven. See an excellent breakfast muffin below.Pre-made frozen pancakes or waffles. You see them in the store...but make your own good for you pancakes and waffles. You simply make lots of extras the next time you make pancakes. Lay them on a cookie sheet to freeze. Once frozen, bag the pancakes/waffles. The kids can take out what they want for breakfast and pop them in the toaster. (click here for Bosch blender pancake recipe!) OR Blender Oat Pancakes from Sue Gregg's Breakfast Cookbook! (click here)Granola Bars. This is for the definite on the run breakfast that you need to put that protein and energy in the kids and there is no time for cooking! See recipe below! Omelets. So how does this fit? The mini skillet (click here to see more) is the perfect size for your kids to make their own omelet. My kids love to create their own. The stainless steel pan is light and easy to use. My kids are able to make a 'mean' omelet in no time flat. This has turned into a high protein fast breakfast for our family. Another great resource is Sue Gregg's Breakfast Cookbook. Ezekiel Bread!
Ezekiel Grain Bread is inspired by the Holy Scripture verse Ezekiel 4:9. This 2,500 year old grain/bread combination is made from six grains and legumes.
So Why is Ezekiel Bread Healthy? Ezekiel bread is actually a nutty sandwich bread that is a complete protein. The combination of grains makes a proper balance of amino acids to provide the complete protein.
Typically, Ezekiel bread contains wheat, spelt OR rye, barley, millet, lentils, great northern beans, kidney beans and pinto beans. This unique combination of ingredients is based on the Biblical verse of Ezekiel 4:9 which reads,"Take also unto thee wheat and barely and beans and lentils and millet and spelt and put them into one vessel and make bread of it."
To be honest there are different takes on eating this Biblical bread. Some scholars will tell you this was a protein bread designed by God to sustain you/us during famine. The Bible scholar will tell you that God had proved the sustenance of this bread as this is all Ezekiel ate for 390 days while laying on his side. Other Bible scholars will tell you this bread was all about judgment and the context of this passage is not to encourage eating this bread but purely there for the testimony of the dreaded judgment and famine to come.
Okay, with the two viewpoints, what do we do with the information. I think the bread would fit the need for us to have variety in our diet. I don't think it is a bad thing to eat this bread but I also don't think it is a call of God that this is the only bread He would endorse. There are too many other places in Scripture where Jesus fed the multitude with bread making no indication it was the mysterious Ezekiel bread.

Vitamins and Minerals: Thiamine: 8% Phosphorus: 8% Riboflavin: 2% Niacin: 6% Zinc: 4% Iron: 4% Vitamin B6: 4%

Ezekiel Bread & Breakfast Recipes
Ezekiel Bread from Shelly's Bread Cookbook (click here)
7 cups hot water 1 cup oil or melted butter 1 cup honey or molasses 1/3 cup pinto bean flour 1/2 cup soybean flour 1/3 cup lentil flour 1 cup rye flour 1 cup barley flour 1/2 cup millet (not milled into flour) 5 cups white spring wheat flour 4 cups red winter wheat flour 2 T salt 2 T dough enhancer (click here) 1/2 cup vital wheat gluten (click here) 5-6 T SAF yeast (click here) 8-10 cups additional white wheat flour
In Bosch bowl, add all the ingredient except last amount of white flour with SAF yeast on top. Pulse until flour is completely moistened. Turn off and let sponge for 15-20 minutes.
Turn Bosch machine back on to speed 1 while adding remain white wheat flour till dough pulls away from the sides. Turn speed to 2 and knead 3-5 minutes.
Divide dough and place in greased stainless steel bread pans. Let rise. Bake 350 degrees fro 30-35 minutes.
Yield: 6 loaves
Blueberry-Cranberry Granola Bar Muffins
from Delicious Meets Nutritious (click here to learn more!) Wet Ingredients: 1 cup Xagave (click here) 3 eggs 1 cup plain yogurt 2 T canola oil 2 tsp vanilla 1 tsp almond
Dry Ingredients: 1 cup whole wheat flour 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp salt 3 cups rolled oats
Fruit & Nuts: 1 cup blueberries 1/2 cup dried cranberries 1/2 cup chopped nuts (almonds, pecans, or walnuts)
Mix the wet ingredients in a bowl. Mix dry ingredients (except oats) in a separate bowl. Add dry ingredients to wet ingredients. Mix well. Add oats, one cup at a time. Fold in blueberries & cranberries.
Bake 325 degrees for 23-28 min.
Can substitute "Fruit & Nuts" with dried apricots & pecans or carrots, pineapple & shredded coconut!
Note from Paula: This is a good for you yummy muffin! My kids gobble them up! They are a filling breakfast muffin or perfect afternoon snack.
Granola Bars a favorite recipe of a friend of mine! :)
Basic granola (I use my home-made recipe click here) jam favorite nuts and seeds.
Mix ingredients in your Bosch bowl with the dough hook. When well mixed, place in your greased stainless steel cookie sheet and bake 350 degrees till golden. When cool; cut into bars.
Note from Paula: Humm....do you see a problem with this recipe? There really aren't measurements as much as what you like the mix to taste like. If you like heavy jam, load it up, well within reason that it is not a soupy consistency. If you like them more granola tasting, go easy on the jam. You do need the jam to hold the bar together. It is the 'glue' for the granola bar. The nuts and seeds may already be in your granola BUT it does give a beautiful touch to put them on top of the bar as well. You can also garnish the top with coconut or horrors...chocolate chips! Easy and fun.

Tips for the Harried Woman

In keeping with the theme of breakfast and family traditions, I thought I would share with you one of our 'first day of school' traditions.
When we first started home schooling, my hubby wanted the first day of school to be special for our little guy. He wanted the first day to stand out from the day before and bring anticipation to the first day of school. He told our son that on this special first day of school, dad would be fixing a BIG breakfast. True to his word, my hubby fixed a BIG breakfast. He fixed enough to feed an army. Remember, our son was only 5 years old. :) So this began our family tradition. Dad fixes a massive breakfast on the first day of school.
