Hurray that Spring is here!  This is my favorite time of the year.  The budding trees and green grass give hope of new life and the end of winter.  I have included one of our Easter traditions that helps to focus on the true meaning of Easter...Jesus resurrection!  Hope you enjoy this month's issue.

Easter Tradition!        


As a fun dessert but also a vivid testimony of Christ's resurrection from the dead, we make "Empty Tomb" pastries.  Each person makes their 'empty tomb' before we begin Easter dinner.  The pastries bake while we eat .  After dinner, we rejoice that He is no longer there...He is risen as we eat our pastry.

This is not so healthy but easy which is really a plus with all the other hubbub going on that day! :)  I use Pillsbury crescent rolls.  I give each person one wedge; one marshmallow; and paper w/ tooth pick.

Place on the table several sets of bowls.  One will have melted butter and one with cinnamon/sugar mixture.  Each person will roll their marshmallow 1st in butter, then in the cinnamon/sugar mixture.  They then place the sugar coated marshmallow in the crescent dough and seal the marshmallow well.  My kids like to roll the finished bread dough creation in the cinnamon sugar mixture again. Each creation needs to have the person's name on their creation...thus, you have the toothpick and paper.  I have found the toothpick stays in the dough and the paper will endure the oven temp and survive the cooking process.

Bake according the directions on the package.

This is such a great picture of the resurrection as the marshmallow 'disappears' during the cooking process.  When we eat our dessert, we can rejoice that Christ has risen and the tomb is empty!

New Grains in Our Diet!       

On to a new grain this month to add variety to our diet, Millet!!  If this is your first newsletter, you can see previous e-newsletters on my web site to learn about other grains to enhance your nutritional endeavors for meals!

We in America think of millet as only a great bird seed or cattle feed but it is a dietary staple in India and Africa!  However, we have been missing out as millet is very close to being a complete protein and excellent for those with gluten allergies!  Millet has a very hard indigestible hull therefore, this grain must be hulled before it can be used for human consumption.  Hulling does not affect the nutrient value, as the germ stays intact through this process.  What you  find in the store is hulled millet. 

When cooking with millet here are some tips:


Before cooking millet, rinse thoroughly under running water to remove any dirt or debris. After rinsing, add one part millet to two and a half parts boiling water or broth. After the liquid has returned to a boil, turn down the heat, cover and simmer for about 20 minutes. The texture of millet cooked this way will be fluffy like rice. If a more creamy consistency is desired, stir frequently adding a little water every now and then.  Note: If millet is presoaked, it will cut your cooking time 5 to 10 minutes.  Some cookbooks will tell you to soak the grain overnight. 

Some cookbooks will tell you the flavor of millet is enhanced by lightly roasting the grain in a dry pan before cooking.  You would stir constantly for approximately 3 minutes or until a mild nutty aroma is detected.  Not sure I would have the time to worry about that extra flavor! :)

I have never tried it but have read that you can sprout millet!  Would be great addition for sandwiches and salads if you like sprouts.

Millet Grain Recipes

"Steamed Millet"
from Natural Meals in Minutes
(see my web site to purchase this amazing cookbook!)
1 cup millet
2 1/4 cups water *
1 teaspoon olive oil or butter
1/4 teaspoon salt

Rinse millet and drain in a strainer.  Place in a saucepan, add remaining ingredients and bring to a boil.  Reduce heat, cover and simmer for about 20 minutes or until all water has been absorbed.  Turn off heat and let stand, covered for 5 minutes.  Fluff millet with fork and serve.  Makes approximately 4 cups.

* Variation: Use vegetable or chicken stock instead of water and serve as a side dish.

Note from Paula:  We have made this for breakfast and added maple syrup and butter.  Just as you would 'doctor' your oatmeal, you can doctor you millet and have a great hot cereal!

"Almond Millet Muffins"
from Soups & Muffins by Sue Gregg

1. Blend together with wire whisk:
1/4 cup oil
2 eggs
1/3 cup hone
1 cup buttermilk
1/2 teaspoon almond extract

2. Blend dry ingredient in separate bowl:
2 cups millet flour*
1 1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chopped almonds

3. Blend dry ingredients into liquid ingredients until mixed.

Bake 350 degrees for 20-25 minutes.  Makes 12 large muffins.

*You can grind this small amount of  millet in your Bosch blender!!  (1 1/2 cup millet grain = 2 cups of millet flour!)

Perfect Almond Millet Muffins in your Bosch Blender!!
Follow the mixing procedure above.  In place of millet flour use:
1 1/2 cup millet grain. 
Pour batter in mixing bowl to blend in nuts, baking powder, soda and salt.

Note from Paula:  The blender method is a fast way to make the muffins, when you don't have millet already ground into flour!  We love these muffins.  Of course, I love almonds and anything that has almonds in it.  Very tasty, sweet muffin.  It makes a great breakfast muffin.  Goes  perfect with a fresh cup of coffee!  Yum.

Tips for the Harried Woman

A friend pointed out that songs and verbiage around Christmas is filled with the word "joy" but really this coming holiday should bring the greatest joy...Christ is risen!  When I was young, I couldn't figure out why older people would look toward eternity and heaven with such fondness.  Now in my older years, I agree with Solomon's assessment "all is vanity," when assessing life.  This coming holiday, Easter or as our family calls it Resurrection Day, brings great hope and joy for our future.  The daily grind will come to an end....there will be an end to Mt. Neverrest (my laundry pile) and all my aches and pains will be gone.  How can I be so sure?  The Bible gives us that promise to cling too as we trust Him as our Lord and Savior.  So take hope all you harried women out there this too shall pass and we will get a full night's sleep and eat to our hearts content without counting calories!  Hurray!  Did you know that Jesus even gave this promise of hope  with His   folded grave clothes?.....see my blog for the "rest of the story."
