Dear Fellow Breadlovers,
Well it is here!! The month of high baking and holiday traditions. I
hope you will use your Bosch to the max as it will save your time in
the kitchen for you to enjoy your family. I have made the focus this
issue to help you with some ideas to make some fun and quick Christmas
goodies. The Christmas Wreath is a winner to any Christmas function,
not to mention delicious! If you have any questions, let me know.

Pastry Flour!
This is the month to use this special flour, if there ever was one!
Many emailed me wondering what is pastry flour I mentioned in my last
newsletter. Pastry flour is made from pastry wheat, also called soft
wheat. Pastry flour will make baked goods lighter and fluffier. This
is the type flour you would use for your pie crust, muffins, cookies,
cakes, pancakes, quick breads, etc. Pastry flour cannot be
used to make yeast bread. When you see all purpose flour in the
grocery store, this is made from pastry/soft wheat. I must admit, I
use white wheat for both my pastry products and my bread. However,
there is so much fun baking during this month, it is worth the time to
grind the special grain for the yummy foods. :) I am running a special
during this month on soft wheat. I have a limited supply of 50# bagged soft wheat during our high baking

Christmas Gifts & Christmas Wreath
Believe it or not the best gift is a loaf of homemade whole wheat bread! Several years ago, I used to make quick bread as Christmas gifts for my neighbors and my hubby's co-workers. One year I was really sick and couldn't get it done. In despair, I simply made a batch of whole wheat bread as their Christmas gifts. You would have thought I had given them gold! Never again do I slave over specialty quick breads. I give the whole wheat bread tied with a ribbon and Scripture. Some like to make wonderful cinnamon rolls as gifts as well. Put your Bosch Whole Wheat bread on your Christmas giving list today. Make life easy this year and give 'gold' for Christmas. :) A wonderful Christmas treat to take to holiday parties and 'wow' everyone is a Christmas Wreath. Our family tradition is to have this wreath for breakfast and use it as our 'birthday cake' to sing Happy Birthday to Jesus. You can use the basic bread recipe to make the wreath but the sweet dough recipe really is yummy. The filling is out of this world. See my paulasbread blog for complete step by step instructions to make this wonderful Christmas treat. Sweet Dough for Wreath 1 Tbs. yeast 1/4 cup warm water 1/2 cup warm milk 3 Tbs. sugar or Xagave1 stick of butter 1 1/2 tps. salt 2 eggs 1 tsp. grated lemon peel (I usually leave this out) 3 1/3 cups white wheat flour In Bosch mixer, dissolve yeast in water. Stir in milk, sugar, butter, salt, eggs, and lemon peel. On speed 1, add 3 1/2 cups whole wheat flour. Knead 6 minutes. Cover and let double in size (about 1 1/2 hours.) Note: the dough will be heavy. Roll dough into rectangle; add filling; roll up like a jelly roll; slice lengthwise; braid two parts. Let rise. Bake 350 degrees 45 min. or until golden brown. See paulasbread blog for better step by step instructions! :) Filling:8 Tbs. butter melted 1/4 cup whole wheat flour 2 Tbs. sugar or Xagave 2/3 cup finely chopped almonds 1 cup chopped red and green candy cherries 1 tsp. almond extract.

Christmas Goodies! Our Favorite Cheese Ball! Blend together: 16 oz. cream cheese 2 cups grated cheddar cheese 1 small onion finely chopped 1 can drained black olives chopped 2 Tbs worchester sauce 1 Tbs lemon juice Next: Form into a ball and roll in chopped pecans; OR chopped parsley; OR sprinkle with chili powder.
For Christmas fun: 1. Form the ball into a bell shape. 2. Make the cheese ball into a snowman. Two balls (one small/one large stacked; use pretzels for the arms and nose; black olives for the buttons and eyes; and stack crackers on top to make the hat.
Hot Mulled Cider! Holiday Menus by Sue Gregg Gregg
Amount: About 12, 6 oz. servings 1. Heat to boiling point, reduce heat and simmer 5 minutes: 1 1/2 quarts apple juice 1 stick cinnamon
2. Add and simmer 5 minutes longer: 2 1/2 cups (20oz) pineapple juice, unsweetened 1/4 cup honey or Xagave 3 Tbs. lemon juice 1/4 tps nutmeg
I usually put my cider in a crock pot where it is kept warm and keeps a wonderful Christmas smell throughout the house.
Christmas Pie!
 Use this Christmas tree pie topper to change all your Christmas pies into a festive decoration on your table! We cheated and used canned cherry pie filling. See my paulasbread blog for a step by step process using the pie topper!
Here is a from scratch apple pie recipe for those who have more time during the Christmas holidays. :)
Apple pie filling: 6 cups apple slices (about 6 medium cooking apples) 3/4 cup Xagave 2 Tbs. soft wheat flour 1 tps. cinnamon 1/2 tps. nutmeg 1/8 tps. salt.

Tips for the Harried Woman
This is the month many memories are made and family is key. The
biggest key for me is to not do traditions for the sake of
traditions. A common tradition is making cut out cookies. Moms make
the cut out cookies with their kids and find themselves snapping just
to try and get the project done or have the perfect cookie. It is not the destination (finished project) that is the goal but the
ride! When I have been too overwhelmed with life, I have bought the
store package sugar cookie mix! Horrors! Me?... the one telling
everyone to eat healthy? You guessed it! Remember, it is the ride not
the destination! We have several family traditions in the baking realm
that have become traditions: sugar cookies, gingerbread towns,
Christmas wreath and many more delectable desserts. See my blog for a
past gingerbread town. It will be a real surprise as it is not the
typical ginger bread town but my kids artwork via ginger bread dough.
It is their favorite tradition and are even planning what this year's
theme will be.
