Dear Fellow Breadlovers,

Yikes! The holidays are upon us.  My children are already counting down the days till Christmas!  With that said, I am going to divert from my series on whole grains to focus on our fast approaching holidays.  I am hoping to help you utilize your Bosch to its full potential this holiday season!
 
May you find during this Thanksgiving season many ways to see the goodness of God.  The great hymn "Count Your Blessings" is a great reminder of things to consider as our blessings.    Let's rise up and count the blessings from God along with our countdown to Christmas!

Thanksgiving Dinner a Nutritional Meal!

Everyone loves pumpkin pie, mash potatoes, the turkey and dressing.  When you look at the calorie count of a typical Thanksgiving meal...Wow!   So what can be done to help this high carb meal become more nutritious?
 

Here are a few tips:

Use whole grain flours to make your pie crust, dinner rolls, gravy, and dressing.  The high fiber helps to counter the high carb sugar challenge that processed flours cause.   The extra fiber will make you full faster so you will not be tempted to overeat.

Use Xagave in lieu of white sugar.  Make your traditional desserts but don't use white sugar.  Use ½ cup of Xagave for every 1 cup of sugar. Just as white sugar only sweetens  your baked goods, Xagave only sweetens and doesn't altar the flavor.  When using honey as your sugar substitute, you will find the flavor of the honey in the baked goods.  Xagave will not only cut the calorie count of that luscious dessert but also make it nutritional!  Check my web site for more Xagave info!

Utilize Sue Gregg's new cook book, "Holiday Menus."  Sue has taken the traditional Thanksgiving meal and turned it into a nutritious feast.  Emilie Barnes and Sue Gregg teamed up to write this cookbook.  I have been enjoying using the cookbook, I think you will too! Exchange shortening for butter.  Shortening is not good for us and butter works well in most exchanges.

Steam your veggies.  Boiling your vegetables you lose the nutrients.  Steaming or using waterless cookware will preserve the nutrients and makes your meal full of vitamins!



Holiday Kitchen Help!

Use your Bosch mixer to its max!  If you don't have one yet, now is the time to buy your Bosch kitchen mixer to help you with this high volume cooking during the holiday season.  Remember, the mixer is on SALE!   My Bosch is in constant use especially during the holidays. 
  • The gourmet whips make quick homemade whipping cream. 
  • Use your blender for chopping nuts.
  • Use your blender to make fast cornbread. for stuffing.  (see the recipe below.)
  • The slicer/shredder attachment's french fry disk is great to cube your wholewheat bread to make wholesome stuffing.
  • The Bosch food processor makes a perfect pie crust in 2 minutes! (see the recipe below)
  • The cookie paddles make perfect Christmas cookies!

One example for holiday ease is using your mixer to make your mashed potatoes!  I literally have 8-9# of potatoes creamed to perfection in about 2-3 minutes!  I boil the skinned potatoes till done.   Then, I drain and put the cooked potatoes into the Bosch bowl.   Add the following: 1 to 1 ½ sticks of melted butter, salt and pepper to taste, plus ¾ to 1 cup of milk directly into the Bosch bowl.  Using your gourmet wire whisks, set the Bosch mixer speed to 2.  You will have up to 8-9# of fabulous, fluffy whipped potatoes in minutes.    One more way your Bosch mixer will help your traditional meal take less time in the kitchen and more time with your family.
 

Holiday Recipes

Healthy Pie Crust   "Sensible Cooking" Cookbook

1 stick butter

2 cups whole wheat pastry flour

pinch of salt

1/2 cup cold water

Mix butter, flour and salt in Bosch food processor (bottom blade) until crumbly.  Add cold water slowly.  For a tart dough add 1/2 cup powdered sugar.  Roll out dough to fit pie pan.  Bake 10-15 minutes in 350 degree oven, if using crust for cream filling.

Hint  on pie making:  When making pie crust be sure all ingredients are cold and don't overwork dough or it becomes tough.  Your Bosch food processor brings ease to your pie making as you will have your fresh wholesome pie crust in 2 minutes!


My Aunt Fern's Famous Pumpkin Pie!
1 Large Can Libby's Pumpkin
4 eggs beaten
2 cups sugar*
1 teaspoon salt
3 1/2 teaspoons pumpkin spice
1 teaspoon cinnamon
2 cans Milnot**

*I substituted 1 cup Xagave for the 2 cups of sugar;
**I have sometimes used whole milk instead of the Milnot milk.

Bake 10 minutes at 400 degrees; Lower oven to 350 degrees and bake additional 50 minutes.  Makes two delicious 9" pies.


Bosch Blender Cornbread!
1 cup whole wheat pastry flour
1/4 cup honey or Xagave
4 teaspoons baking powder
1 teaspoon salt
1 cup fresh corn flour
2 eggs
1 cup milk
1/4 cup melted butter

Put all liquid ingredients in the Bosch Blender.  Add the dry ingredients slowly, except for baking powder.  Blend on speed 2.  When fairly mixed add the baking powder.  (Don't over mix/beat)  Pour into 9x9x2 stainless steel pan.  Bake 425 degrees for 20-25 minutes or until golden brown.

I use popcorn to make my cornmeal/flour.  Fresh corn meal/flour will make all cornbread recipes heavenly. 

Healthy Cranberry Sauce by Sue Gregg
"Holiday Menus" cookbook

1 cup water

12 oz. package (almost 4 cups) fresh whole cranberries
1/2 honey*

Bring water to a boil; stir in cranberries and honey.  Return to boil, reduce heat and boil gently for 10 minutes, stirring occasionally.


Cool thoroughly at room temperature; refrigerate.  Sauce will firm up more in the refrigerator.
Make about: 2 1/4 cups

*My kids like it but I prefer my cranberry sauce to be a little sweeter.  I would increase the honey OR Xagave to 3/4 cup.

Bosch Universal Plus Mixer

I'd been making bread for a few years when I heard about Paula.  I friend told me she's got the best prices around and it's so convenient to pick up.  The Suttons have even brought a Bosch and mill into town on a day that wasn't on their normal schedule so my mom could get her set before Christmas.  They continue to give us the best price available for the best grains and accessories.  They're a blessing to me and my family,

Tips for the Harried Woman

Today marks the beginning of our holiday blur.   Many rejoice holidays begin while others cringe and overfill their schedules with needless busyness just because that is what we are conditioned to do during this season.    Our family this year has taken a hard look at many of our traditions to decide if it really works with our growing extended family.   Traditions are great and conjure fond memories but if you find the tradition causing undue stress on the family to keep it going, it might be time for a change of directions.  Don't get caught in the trap but think outside the box!  On the subject of Thanksgiving, our immediate family celebrates Thanksgiving on Saturday after the "official" Thanksgiving Day.  We found it made for a less stressful day; no rushing to extended families homes; and a day to rest from overeating at other family members homes.  The goal is to make it a true day of thankfulness and not to get caught up in the all-American fervor of a holiday.  See my blog for one of our family traditions to encourage thankfulness.
