The beautiful fall foliage is a
reminder how creative God is when He simply spoke creation into
being. How good He is to give us such beautiful variety of seasons and
colors to enjoy. God has also given us such great variety of grains to enjoy as well. The changing of the season brings thoughts of hearty soup with fresh baked bread with all types of grains!

broken me out of my rut in baking the same old recipes. We have had
such fun using other grains. I hope you do as well.

Fun Bread Idea for your Soup!
Have you ever been to Panera Bread and had soup in a bread bowl? It is so easy to make yourself. Use your basic Bosch bread recipe and form the dough into a tennis ball size ball. Put the dough in an cereal sized bowl. Make sure the bowls are oven-tempered glass bowl or stainless steel bowl. Let rise once and bake at 350 degrees till golden brown! You can make these ahead to make meal time easy. Cut the top off much like you would cut the top of a pumpkin for carving. Pour your soup into the hole! You now have your very own soup in a bread bowl! Look out Panara; there is competition now!
If you cannot locate oven tempered cereal bowls, use a flat cookie sheet. Grease the pan and form hamburger size balls of dough. Let the dough rise and bake. Not as pretty as the cereal bowl, but works.

New Grains for our Diet!
This month's featured grain is Spelt. Adding a variety of grains to our diet helps to deter allergies that can develop to wheat. So with that thought, let's delve into Spelt and how to use it!
What is Spelt?
Spelt is a very ancient grain, similar to wheat. In ancient Europe
and Asia it was considered the tastiest grain with its nutty flavor.
After the 19th century it was forgotten, partly because of the lower
yield in comparison to wheat. Unlike wheat, spelt has retained many of its original traits and
remains highly nutritious and full of flavor.
Also, unlike other grains, spelt's husk protects it from
pollutants and insects and usually allows growers to avoid using
pesticides. Only in the last 20 years has there been a growing interest in Spelt grain in the U.S.Spelt flour
has a somewhat nuttier and slightly sweeter flavor than whole wheat
flour. Spelt contains more protein than wheat, and the protein in spelt
is easier to digest. This means that some people who are allergic to
wheat may be able to tolerate spelt. Spelt has gluten, just like wheat,
so spelt is not suitable for a gluten-free diet.How do you use Spelt?Just as you would use whole wheat flour, you can use Spelt flour. If your recipe calls for one cup of whole wheat flour, you use one cup of Spelt flour! Just a note: spelt baked products will be a little stickier to work with so don't add flour till it is not sticky to touch. This will make your bread doughs way too heavy. Your baked products will also have a darker color and have stronger grain flavor. Spelt is really delicious to cook with and will enhance your baked goods. Try milling your fresh spelt flour today. Remember spelt is just like any other grain and the nutrition will oxidize out of the flour so you want to mill your own spelt to get the full benefit of all the nutritients these fresh grains contain. Spelt Recipes Spelt Bread! Use the basic 5 loaf bread recipe. Substitute spelt flour for the whole wheat flour. Just a note. The spelt will be a stickier dough. It makes wonderful bread, pizza crust, cinnomon rolls, etc. We are loving change of taste from using only whole wheat. Try it today!
Chocolate Spelt Fudge Cake! From: Sensible Cooking Cookbook This is to die for chocolate cake! :) 3 cups spelt 3/4 cups raw sugar (can use Xagave!) 1/3 cup brown sugar 1/4 cup cocoa powder 2 tsp baking powder 1 tsp salt 3 large eggs 3/4 cup sour cream 1 Tbsp vanilla 3/4 cup butter (softened) 1/2 cup oil (unflavored) 1 1/3 cups cold water Preheat oven to 350 degrees. Butter and line bottom of two 8" cake pans with parchment paper. Mix dry ingredients in large bowl. Cream eggs, sour cream, vanilla, butter and oil in Bosch Mixer. Add dry ingredients. Pour in cold water and mix until blended. Pour into pans and tap several times to remove air bubbles. Bake 28-34 min. Do not over bake! Cool 5 minutes; then turn onto cooling rack. Ice with your favorite chocolate icing.
Spelt Crackers! From my good friend Ruby H.
1/4 c. oil
5 sprinkles of salt or less
if desired
3/4 c. water
4 c. spelt
Directions: Mix everything
well. On greased cookie sheets,
roll dough thinly; cut into cracker size and bake! Make like regular
crackers. Bake at 350 degrees until crispy.

Customer Corner

I had Paula do a demonstration at my home and everyone (including
myself) loved it!! It is amazing how many different bread items you can
make from one big batch of dough. Paula made: pizza (using the instant
pizza sauce mix and a small can of tomato sauce and cheddar cheese),
pull-aparts, 2 loaves of breads (one was "mock rye" bread), and
cinnamon rolls (gotta have 'em!). She gave us wonderful bread-making
tips, like how to know how much flour to add and how to tell when the
bread had finished rising. Everyone was so thankful they came and Paula
is now mentoring some of them on line in making bread, and saving
money. I highly recommend her website and products. We are learning how
to eat healthy and save money, and Paula is a gem.

Tips for the Harried Woman
Last month I encouraged all of us to "Take a deep breath and smell the roses?" As moms, it is so hard to stay focused on the eternal things which is our little people and now in my season of life 'big' people too! The obvious is to take one child at a time when running errands and letting them have your undivided attention. However, there are many other areas I have found to build sweet fellowship, bonding and memories. We work jigsaw puzzles, play multiple board games, but best of all we read aloud together. I pick a novel or missionary book and all gather round as I read a chapter or two. It has been great to increase our imagination rather than letting the TV squelch our interaction and imagination. We just finished the book, "Runt the Brave" by Dan Schwabauer.Very interesting book with lots of allegory. Check my blog for more things our family has done to build memories. :) My biggest admonition would be to concentrate on building memories with those precious gifts God has given us. comment on paulasbread blog |
