How Does My Garden Grow? 

L'Equip FilterPro Dehydrator This is the season for fabulous fresh veggies from the garden and abundance of fresh fruits. There is nothing like fresh tomatoes, ripe strawberries or later this summer sugary peaches off the tree. I find myself eating more than I need to get my fill of the fresh produce. I have made many attempts at gardening and usually grow the $50 tomato! I spend lots of time and money to prepare the garden bed only to get lots of green plants that produce only one or two tomatoes. :)

I have concluded, a gardener I am not, so I enjoy the produce from all you wonderful gardeners. The next question would be how do I preserve or extend this bounty past the summer season? Do I have a story to tell you!  :) Let me suggest....boldly encourage you, to consider dehydrating your bounty. Our family is hooked on fruit but you will probably be much better at preserving your veggie bounty along with the wonderful fruit.

We have three options to preserve foods: canning, freezing or dehydrating. With canning, you lose 60% of the nutrients. However, with freezing or dehydrating, you only lose 20% of the nutrients. So let's look at the how-to's of dehydrating...

What do you look for in a dehydrator?  You need to be able to control the temperature. The L'Equip Filter Pro dehydrator has this feature. When doing herbs you need 98 degrees; for most veggies and fruits you need 125 degrees; and for meat jerky, you need 165 degrees. So what is involved in dehydrating? You simply wash the produce, cut into the shape you would want it to be as a finished product, put it on the tray, turn on the dehydrator and let it dry! 

How long?....well, this depends on the water content of the food.  Watermelon is going to take 2-3 days!! Go figure! :)  Most items take 8 to 12 hours. This means you don't want to put your dehydrator in the center of the kitchen. It will also be warm. I usually keep ours in the utility room out of the way.

Summer Recipes

Grilled Fruits?  Go for it! :) 
Cloer Grill - $99.99 Special!Fruits are especially delicious on the grill because their sugars will caramelize over the heat, adding rich, mouthwatering flavor. You might was to spray your grill with a cooking spray before you place the fruit on the grill. Fruit tends to stick and then you lose the beautiful look of the whole grilled fruit. There is nothing like a grilled pineapple! For grilled pineapple: grill pineapple 4 min. on each side. 

Just saw a recipe the other day in Southern Living that challenged us to grill bananas!  They used the grilled bananas for a homemade banana split! Interesting. Here is Southern Living's recipe:
Peel and cut bananas in half lengthwise. Spray with cooking spray.  Grill 1-2 min. on each side till lightly caramelized. Suggests putting the bananas on the outer edge of the grill to prevent burning, if using a charcoal grill.

Make a regular banana split with the ice cream and all the trimmings....the twist to your new banana split...grilled banana!

Grilled Veggies!  Go for it! :)
With all the produce coming out of your garden this summer add to the enjoyment of eating the 'fruits of your labor.' We love grilled tomatoes, bell peppers and onions. You can purchase wooden skewers cheaply at the grocery store. Cut the veggies in chunks and oil them; then, grill. They cook fast and add great flavor to those veggies. You can enhance the flavors by adding garlic, salt/pepper, or other seasonings.

Note: When using wooden skewers and grilling meat, it is suggested to soak the wooden skewers 2 hours in water to keep the meat's moisture from going into the wood!

'Grilled Yams' from the Xagave Cookbook by Stephen Richards

Ingredients:
  • Yams
  • Olive Oil
  • Xagave

Steps:
Peel and slice yams (about 1/4" thick)
Brush with olive oil and grill on low heat about 5-8 min. per side
Drizzle with Xagave and serve!

Tips for the Harried Woman

I think one of satan's biggest ploys is to keep us so busy that we burn the candle at both ends eating up our time with all the 'urgent' and not the important. I have found that I have to make the choice to 'be still and know God.' In hearing His direction for the day, things seem to come into order and the urgent go to the back burner with the important getting done.

So what does 'being still and knowing God' look like for me? I am definitely not a morning person but couldn't help but notice that God's Word encouraging rising early to meet Him. I also noted that the great men and women of God also had the habit of meeting Him in the morning. With that said, I began several years ago to purposely rise early to have my devotions and prayer time with God. I must admit it was a huge hurdle and challenge for me at the beginning. I would groggily pull myself out of bed fighting the urge to get '5 more minutes.' :) Dear friend, how worth it is to spend those special times with God in the morning. It not only helps to calm your soul for the day but it mentors your children of what is important in life. It has been such joy to my heart to see my children taking hold of the same commitment to meet Jesus in the morning. First thing in the morning, they come downstairs and curl up in a chair with their Bible. Don't let this become a guilt or legalistic commitment but more have the attitude you are meeting a great friend for an early morning coffee! Yes, I have admitted my vice....coffee! :) I pour my cup of coffee, curl up with my Bible, journal and meet my friend, Jesus. Take the challenge to rise early and meet your friend Jesus! :)
