Dear Fellow Breadlovers,
Many look at fall with a sigh of relief that school is beginning
which brings a more scheduled life. Humm...I haven't joined the band
wagon of rejoicing yet! lol However, fall does bring the beautiful
fall foliage, crisp weather and a desire to bake more. The oven will
no longer be the enemy of heat but bringing cozy warmth to our home.
Funny how seasons and weather can change even our mental disposition to
the kitchen. I am starting a series on grains to help you expand your
recipes and bring variety to your diet. Hope you enjoy the new ideas.

Fast School Lunches!
I get so tired of peanut butter and jelly sandwiches as the only
lunch I have to offer my kids. We have expanded our lunch cuisine by
choosing lunch ideas that required minimal prep. I make up the fixings
ahead and then keep them in the fridge or freezer for the kids to
prepare for themselves. It is simple and they enjoy getting to create
their own lunches. We have bean burritos (see recipe); wraps; hot
pockets (see recipe); soup; and barbecue roll-ups (see recipe). You
can also take your good old peanut butter and jelly, or any sandwich
for that matter, and make it fun. Simply use the egg rings to make
different shaped sandwiches! The kids always think it is a treat to
eat heart, star or flower sandwich. Throw in some fruit and veggies
and your kids will have a great nutritious meal without a lot of work
on your part. :)
One last suggestion is the cookbook by Sue Gregg, "Lunches and Snacks." A great cookbook for more fast, nutritious meals for your kiddos! Enjoy lunch!

New Grains for our Diet!
Many have been wanting to add
other grains to their diet. To help keep your body from developing
allergies keep variety in your diet. There are so many healthful
nutrients in all grains. A simple way is to add other grains is to add
7 Grain mix to your regular baking. You can mill 2 to 3 cups of the 7
Grain mix and add it to your basic bread recipe. Barley and oat flour
make wonderful additions for pancakes and muffins. They are a sweet
grain and will give new flavor to pastries. Remember most of the other
grains do not have a high gluten and you will need to use wheat flour
along side the other grains. The usual ratio is 2/3 wheat berries to
1/3 other type of grain. I will highlight some grains and how to use
them in the next few issues.
A fresh review on wheat. Red and White wheat, both 100% whole
wheat, are high in protein and great for making bread. White wheat,
also called Prairie Gold or white spring wheat, can cross over and make
pastries (cookies, muffins, pancakes, etc.) Red wheat has a more grain
flavor and makes a darker loaf. Many who are not used to whole wheat
flour do not like the strong grain flavor. Soft wheat, also called
pastry wheat, is great for pastries but cannot make bread! Good old
All-Purpose flour you find in the store is made from soft wheat. If
you have ever tried to make bread with your "AP" flour, this is why it
never turned out!
Many ask how long their wheat will last. As long as
the wheat in the wheat berry form, it is preserved. They found it in
King Tut's tomb and were able to sprout it and make bread out of it!
Wheat farmers will tell you that wheat berries will last 10 to 15
years. The three things that destroy your wheat are bugs, mice and
water, thus I sell wheat in sealed buckets! Once the wheat berry is
broken into flour it begins its nutritional loss. In fact 78 hours
after milling your grain into fresh flour, all the 39 vitamins and
minerals have oxidized out of the flour! You will still have the
nutritional benefit of fiber but not the nutrients. You can stay off
this nutritional loss by refrigerating and even freezing your flour.
Using freshly milled flour in your baking will make all your baked
goods taste better! Next month: spelt grain.

Lunch Recipes Quick Bean Burritos! Cook your favorite black or pinto beans. Drain and put in your Bosch Universal. Add 1 stick butter; 1 packet Taco Seasoning; 2 T salt. Mix with your Bosch whips till smooth.
I then keep the bean mixture in the fridge for the kids to make their own bean burrito lunches through the week!
Barbecue Roll-Ups! Basic Bread Recipe Roll 1# of dough into a rectangle (12" x 18")
Spread 1# to 2# cooked ground beef mixed with 1 cup barbecue sauce From
long side, roll-up like a cinnamon roll. Cut with dental floss into
1-1/2" thick slices. Place on Stainless steel jelly roll pan. Top
with grated cheese. Let rise to double in size. Bake 350 degrees for
20-25 minutes.
I make these ahead and have them in the fridge for the kids to heat one or two for their lunch. Nutritious and Fast! Sensible Cooking has some great variations for roll-ups!
Home-made Hot pockets! Basic Bread recipe: Pinch off 1/2 c. portions of dough and roll
or press into 4" circle. Place 1/2 cup filling in center and seal edges well. You can lightly rub the seal with water to make a tight seal
Bake at 350 degrees for 20-30 min. or until golden brown.
Pizza Filling:
1 1/2 c spaghetti sauce (I use the pizza mix with tomato sauce)
1/2 c sliced mushrooms
1/4 c chopped olives
1/4 c diced onions
Mix well and spoon into hot pocket dough. Sprinkle with Parmesan cheese.
(really you can substitute the veggies with pepperoni, cooked hamburger, other veggies your kids like topped with shredded cheese!). Delicious!

Customer Corner
I was
privileged to attend one of Paula Sutton's Bosch demonstration. Paula's
knowledge and enthusiasm about using the Bosch to make fresh whole
wheat bread to enhance my family's nutrition was contagious. She made
me feel that I, too, could make all these whole wheat and other healthy
foods and enjoy the process. I bought the Bosch and mill and have made
whole wheat bread ever since. I am now a missionary in Honduras and
brought all my Bosch "tools" and grain with me. Not only is my family
provided still with the rich nutrition in freshly ground wheat breads,
but I have the opportunity to treat other missionaries as well. Even
from here, Paula is still a ready source of advice and counsel. She
always has an answer for me or will find out how to get it to me. Her
enthusiasm is still alive and going and keeps me enthused.

Tips for the Harried Woman
Can I say, "Take a deep breath and smell the roses?" I think one of
the biggest threats to us as women is juggling many balls that quite
frankly we were never meant to juggle. I have a picture with this quotation, "One hundred years from now it will not matter
what kind of house I lived in, how much money I had, nor what my
clothes were like, but the world may be a little better because I was
important in the life of a child." This picture reminds me to
continually reevaluate my schedule and ask myself if I am really
investing in eternal things and in
particular the job God has given me in raising my kids. Sometimes at
the end of the day, I sigh and realize that I focused on the wrong
things that day and my little people were on the back burner. Hope
comes new every morning! Today is a new day to put our eternal little
people our number one focus. I find an easy way to give them my focus
is to take them on my errands. I will take one at a time and then ask
them if there is anything they have been wanting to talk to me about,
since they have me 'one on one.' This opens the door for a 'heart
talk' and many times very revealing to surprisingly deep thoughts even
my little people ponder. Next month I will give some tips I use to
make sure my little people are given top priority. Feel free to join
