One more day before school is out! I know all the kids out there, including mine are so excited and looking forward to a fun filled summer. We have our Summer Camps ready to go. Janice still has some spaces available for Horse Camp. Be sure to contact her for any questions related to Horse Camp. The week of June 28th is filled  for Farm Camp, so be sure to call and reserve a spot for one of our other weeks. We are still waiving the registration fee so be sure to get in on the savings.

We are so excited to finally see our road signs put out by DOT through the Department of Agriculture, Agritourism Dept.

We had a great start to our Sustainable Living discussion group. We hope this will evolve into a great support group to research and educate on the broad topics Sustainable Living encompasses. Last week we learned from the Goat Lady of how she has evolved with her dairy herd and milk parlor. Our next meeting will be June 23rd from 7-8pm.

The Farmer's Market is still here every Saturday from 8:30am-12pm, and we hope you will continue to visit as many of the growers begin with their summer crops. It will be a few more weeks for our "pick off the vine" tomatoes, along with many other veggies and herbs.

As some of the growers get their accounts set up on our Gwinnett.LocallyGrown.net, we will open that market up to everyone in June. Be sure to sign up your email on that site for up to date information.

We have some wonderful workshops and speakers lined up in June, so make sure to mark your calendars.

The deadline to order organic produce boxes was today. If you wanted a box and did not get a chance to order, please call us as a few extra boxes were ordered. We will need payment information to hold a box for you.

Slide eggplant into 1 inch horizontal slides. Oil and salt the eggplant. Put on a baking sheet with parchment paper.

Bake for about 20 minutes at 350 degrees. The skin will fall off easily.

In a skillet, add minced celery, garlic and onions. Cook on medium heat until onions soften. Add eggplant back in with salt and pepper. Add tomato sauce or crushed tomatoes.

Add:
Pimento
Olives
Capers
Vinegar and teaspoon of sugar

Stir gently as eggplant tends to break up.

Cover lower heat for 15-20 minutes simmer.
Serve over bread or chilled.
Lasts several days in refrigerator.
