Greetings!
The garden is calling me, but alas, here I sit at the computer. From my
window I can see a verdant blanket of of turnip and radish greens spreading
across two raised beds. I've uncovered the 2 feet tall vidalia type onions, so
they won't overheat in this brilliant sunshine. And the lettuce already looks
like a giant box of salad. BUT NOTHING IS READY TO PICK! I'm awfully
frustrated but by mid-April we'll all be munching on the best local produce.
Since I can't harvest anything yet, I'm looking forward to my box of
produce from the Dacula Natural Buyer's Club this coming Saturday. Be sure to
get your produce and milk orders to Pilar (770-339-3065) by end of Tuesday (today). I'm so busy right now with planting that I'm
just preping lots of veggies which I keep in a big tupperware bowl to snack on
with a tasty home-made Italian dressing. Um Umm Good! I just wish I had
another loaf of Sharon Bicknell's whole grain bread to go with it my
crudite. She's a new baker at the market who grinds her own grains to
make delicious whole grain breads.
I can't say for sure, but I keep hearing rumors of local tomatoes ripening
in Anthony Brown's neighborhood. I can't wait for a few slices of fresh tomoto
on an oven toasted cheese sandwich. I just love when the skin begins to blister
and brown but usually have to wait until summer to enjoy that delicacy. With
any luck I won't have to wait that long.
So while the sun shines and my garden grows, I'll be offering my moral
support to Mother Nature as she brings in the Spring by buying my box of organic
produce, making a donation of canned goods at the farmer's market, buying a few
broccoli plants from Creative Enterprises and snacking on coffee and biscotti
with my friends and neighbors at this weeks market. See you there!
Best regards,
Anthony Stokes

Vegetable Crudites
This dish can be an elegant appetizer or a simple meal for busy folks.
Wash and chop any vegetables you like and put them in a plastice bowl with a
tightly fitting lid and store them in the fridge until you are ready to eat
them. I like to use any combination of cucumbers, radishes, celery, bell
peppers, carrots, rutabega, broccoli, cauliflower, kohlrabi, etc. My favorite
dip with these veggies is a simple, home-made Italian dressing.
Italian dressing
1/3 cup balsamic or red wine vinegar
2/3 cup extra virgin olive oil
1 teaspoon Italian herbs, rubbed between your palms to release the
aromas
1 teaspoon ground dry mustard
1/2 teaspoon brown sugar
2 or more cloves of garlic mashed into a paste (a mortor and pestle is
good for this)
1/4 teaspoon crushed red chilis
Salt and black pepper to taste
Put all ingredients into a jar with a tight fitting lid and shake until
emulsified. All the above ingredients can be adjusted to your personal taste.
Enjoy.
