Greetings!
There are lots of things happening at The Dacula Farmer's
Market. The Co-op is taking on a new
organizational structure to better meet your needs. New vendors are joining the market. Existing members are developing new products. Every week brings us something new.
As the Co-op takes shape, our inexperience has become quite
clear. It's not a co-op at all but
rather a buyers club. A co-op is run by
the membership, and management runs a buyers' club. Since none of you has to do any work, it's a
buyers' club. It's amazing what you
learn when you take on new projects. In
light of this we have chosen the new name Dacula Natural Buyers Club. The next pickup day for the buyer's club will
be Saturday, February 20. You can place
your orders at this coming Saturday's market or call them in to Pilar at (770) 339-3065
by next Tuesday at 2pm.
Our newest vendor, Hope, baked muffins Saturday morning,
which were the big hit of the day. Along
with the addition of coffee at the market, I can enjoy my ideal on-the-go
breakfast of coffee and a pastry. The
difficulty is choosing between Hope's muffins and Steve's scones.
This coming Saturday, Jon and Summer of Goodness Gracious
Granola will be kicking off Valentine's Day with gift boxes of coffee almond
toffee and gift bags of specialty nuts.
Those bags will include sweet cinnamon almonds and savory rosemary
roasted pecans. Also watch their booth
for upcoming organic Popping corn.
We hope to see you there Saturday.
Best regards,
Anthony Stokes Market Manager

Farmer's Market Pie Eggs and
milk are plentiful at the market as spring approaches. Parsley, chives, green onions and spinach
will start to appear over the next month from local garden and a versatile
quiche can make use of these ingredients and more. This master crust less quiche recipe would
be great for using farm fresh eggs, Johnston Dairy whole milk or half and half,
and any combination of veggies from your Dacula Natural Buyers Club box. You can use almost any herbs growing on your
windowsill.
Filling:
2 cups half-and-half or whole milk 3 large eggs 1/2 teaspoon sea salt or Himalayan salt Freshly ground black pepper Freshly grated nutmeg (optional) Pinch cayenne or paprika 2 to 3 cups prepared vegetables, such as braised
leeks, brocolli, sautéed onions, mushrooms, spinach, peppers, tomatoes 4 ounces, or about 1 cup grated or crumbled cheese,
such as Cheddar, goat cheese, Gruyere, provolone, mozzarella, Gouda or any
combination 1 to 4 tablespoons minced fresh herbs, such as
parsley, chives, green onions, basil, 3/4 cup chopped crisp bacon, diced ham, chicken,
seafood, turkey or tofu 1 tablespoon all-purpose flour (this helps
with vegetables that release liquid during cooking, such as zucchini and
spinach)
Optional Quick Crust:
1 1/2 cups (1-inch, day-old) bread cubes, preferably
sourdough
2 tablespoons unsalted butter or extra-virgin olive
oil
9-inch glass or ceramic pie pan
Directions
Preheat
oven to 350 degrees F. For an optional
Quick Crust, pulse bread into crumbs in a food processor. Heat butter or
oil in a large skillet over medium heat; add breadcrumbs and stir until evenly
toasted, about 5 minutes. Evenly spread crumbs in a 9-inch glass or ceramic pie
pan. Place pan on a baking sheet.
If not
using quick crust, butter the pan. You also may use any piecrust of your
choice.
Whisk the
half-and-half or milk and eggs in large glass measuring cup. Season with salt,
pepper, nutmeg, cayenne or paprika to taste. Spread half the desired filling
evenly in buttered pan, top with about half the cheese; repeat with remaining
filling and cheese. Pour the custard over the fillings. Top with more herbs or
cheese as desired.
Bake until
the quiche is just set in the center, about 40 to 50 minutes. Cool completely
on a rack before serving.
