Greetings!
We are excited about all the new items being offered at our Farmer's Market and Co-op. In the next few weeks, look forward to our Market offering fresh all-natural cheese, kefir, and yogurt made from local milk, artisan breads and baked goods made with organic ingredients, and our Co-op offering organic bulk grains, dry goods and household items. Now that the weather is warming up, please remember us when planning birthday parties, home school outings, and our spring and summer horse and farm camps (yes - we are already enrolling!) We also have our 3,000 square foot event facility for celebrations and corporate events in our unique farm atmosphere.
Come visit us this Saturday from 10:00am to 2:00pm, rain or shine.

Robinson Family Farm and Saanen Goats
Saanens are the largest and one of the calmest of the dairy
breeds. The Saanen breed also produces the most milk on average and
tends to have a lower butterfat content, about 2.5%-3%. Our butterfat is 4.2%!!!
The Saanen temperament is as a rule, calm and mild
mannered; breeders have been know to refer to them as living
marshmallows. read more

What's for Breakfast?
Granola Pancakes from Goodness Gracious Granola
Makes 12-14
In a large bowl combine with a whisk:
1 ¾ cup unbleached flour
¼ cup cornmeal (preferably stone ground)
2 Tbs ground flax seed
2 tsp baking powder
½ tsp salt
Make a well in the center of this and beat in:
2 eggs
¾ cup buttermilk
¾ cup orange juice
1/3 cup canola oil or melted butter
Now stir in 1/3 cup granola.
(We like My Cherry Amour because it's not as sweet, but you can
put your favorite in. You Struck Gold would add a sweeter flavor. )
On
a lightly buttered skillet on medium heat, scoop out pancakes (I use an
ice cream scoop) and turn after a couple of minutes.
Enjoy with maple syrup or honey, or your favorite topping.

Co-op Box Spotlight - Shallot Shallots are similar in flavor to onions, and shaped like a large garlic clove. When a recipe calls for a shallot, they
are referring to an individual "clove" of shallot. They should be stored in a cool, dark place like an onion - not too tightly together as they are more susceptible to mold. A basket on your
pantry shelf should work fine. Prepare shallots by slicing off the ends and peeling back the thin skin. Chop them like an onion but slightly finer. They have a subtle, sweet flavor that is included in many French cooking recipes. Saute them slowly at a low temperature until soft and lightly caramelized, They are great companions to butter, white wine, and cream!

Salmon with Tarragon Shallot & Butter Sauce
4 (5-6 oz each) fillets of salmon
Kosher salt and freshly ground black pepper 1/4 cup olive oil 4 tbsp unsalted butter 3 tbsp chopped shallots Juice of 1/2 large lemon 3 tbsp chopped fresh tarragon
Season
the fillets of salmon with salt and pepper. Heat a large skillet over
medium-high heat. Add olive oil and then add the salmon, skin side
down. Cook until the salmon is cooked almost all the way through,
about 4-5 minutes. Flip the salmon and cook for about 2 more minutes,
or until the salmon is just cooked through. Place the salmon on a plate
and set aside.
Pour the excess oil out of
the pan and place the pan back on the stove, over medium heat. Add 4
tablespoons of butter to the pan. Once the butter melts, add the
chopped shallots and squeeze in the lemon juice. Add the chopped fresh
tarragon, season the sauce with salt and pepper, and cook for 1 minute.
Plate the salmon, spoon the sauce over each piece, and serve immediately. Serves 4.

All Johnston Family Farm milk is produced directly on the farm, from
