News from Kushi Institute
This
year we are celebrating 30 years helping people improve their health, and their lives, through our outstanding macrobiotic programs.
Over
the years, more than 20,000 people from all over the world have
come to Kushi Institute to learn our natural approach to health and healing. The thankful testimonials we receive speak volumes on what macrobiotics has done for individuals who often were given no hope for recovery by medical professionals. We are honored that we are allowed to touch the lives of so many
people in such a positive way.
Michio
Kushi, founder of the Kushi Institute, has always been ahead of his
time. Long before the medical and governmental institutions recognized the fact that
degenerative illnesses such as cancer and heart disease were related to diet, Michio
Kushi spoke and wrote about it in his books. The Cancer
Prevention Diet and Diet for a Strong Heart are two examples among his many dozens of books on health and diet. More
than 25 years ago Michio predicted that by the year 2000
cancer would be an epidemic and that most everybody in America would either know
somebody who has cancer or has died of cancer. Sadly, his prediction has come true.
The Kushi Institute is a place of hope - some say a place of "miracles" - through which people have achieved a level of health beyond what was considered possible. (Which is why we named our new newsletter Extraordinary Health.) This is due to the effectiveness of our programs in teaching people how to adopt a healthier diet and lifestyle. Our Way to Health program is designed for those interested in using macrobiotics to help support recovery from serious illness. Our "Levels" are the most in-depth and comprehensive programs available, and many who attended this program have gone on to develop rewarding careers in macrobiotic fields. Kushi Institute weekend workshops are wonderful get-aways that combine a learning adventure with our scenic environment and great food. We have programs to suit most any interest and time frame, and invite you to join us at our scenic Berkshire Mountain campus for a program that can change your life.
As
we move forward into 2009, we look forward to a great deal of positive change here at Kushi
Institute. New developments for our campus and programs will provide even better service and share our vitally important teachings with more people than ever. We'll tell you about some of the upcoming changes in our next newsletter.
It's
been wonderful to serve our clients for the last thirty years and we are
looking forward to having a positive impact on individual lives - and the
world as a whole - for many more years to come.

Kushi Institute Diet Helped Me to Recover from Kidney Cancer by Glen E. Coffman

Anti-Aging Benefits of Lotus Seeds
The
beautiful blooms of the lotus flower produces an edible seed, which, in
traditional Chinese medicine, is said to be beneficial for the heart,
tone the spleen and kidneys, prevent insomnia, and calm the nerves. Lotus
seeds have astringent properties, which makes them helpful in relieving
the symptoms of diarrhea and improving appetite. In Buddhist traditions

Kushi Kitchen Corner What's Cookin' at Kushi
As the weather
changes, we change our cooking accordingly. Now that it's colder, we're baking a bit more and preparing more hearty, warming dishes and fewer raw
salads.
As always, the heart of our
food is whole grains, vegetables and beans. We cook our meals fresh
(essentially "home-style"), and we adapt our menu to the available fresh
fruits and vegetables. The last of the local sweet corn has given way
to ripe winter squash. Below are two seasonal recipes:
 Butternut Squash PuddingThis tasty pudding is made with the butternut squash, which is in season now. For the recipe click HERE. Macro Deviled "Eggs"At first glance, these look like real deviled eggs, (and even taste like them) but there are no eggs. The secret ingredient is lotus seeds.
