School is out and summer is officially here! Last week, Randy and I rented a house with family on the beach in Port Aransas. It was great - having grownup in the north-east, where going to the beach during the summer was (for me) almost an everyday event - I just love the beach. We had a group of 15 - ages 10 - and up. We have done this trip every year for many years. We have learned to bring all of the food and cook nice homemade meals at the house rather than trying to go out to eat with a big group. It's funny, but when it comes to the desserts that we have at the beach, they are totally different than what I make at home. We bake chocolate cookies - the premade kind from the refrigerator section. We have ice cream - the Blue Bell variety - not home made. And we roast marshmallows - from the bag and make s'mores with Hershey's chocolate bars and graham crackers. Goes to show you - there is a time and place for everything! Once we got home though, I hit the farmer's market for fresh berries and I have included a recipe here for blackberry pie and homemade ice cream. There is also a recipe for crunchy sugar cookies - I had to have Randy hide them from me - otherwise I would have just kept eating the batch that I just made. Hope you enjoy these recipes and also enjoy the simplicity of other classic dessert favorites that can help to make the summer more relaxing. We have so many classes coming up! I still have a few spots in my Cookie and Cupcake decorating classes with 4th of July and summer themes. Sallia will be teaching Buttercream and Fondant Project classes on Saturday, July 11th. We also have two classes scheduled in July specifically for young decorators. Click on the Class Schedule link at the left for more information about these classes and other classes and to register.
We have so many new things in the store! This is the time of year that Wilton comes out with their new products. The 2010 yearbook is here! There are some great new Wilton items that we already have in the store - a Transformers pan and decorations, a Hannah Montana pan and decorations, 2 new impression mats, a handy bag holder, new pearlized sugars, a new Spiderman pan and so much more. We brought in a new line of monograms - they can be used as a wedding topper, or a special occasion cake topper - they come in 2 sizes and are really pretty. We also have so many new sugar and gumpaste decorations - peace signs and fishes to beautiful orchids - so many options to make your decorating easier. The biggest news is that we now have a UT Longhorn pan! It is silicone and there is also a muffin pan and ice cube/candy trays. OK, OK, we also have A&M, Tech and OU pans! Come in to see all that is new!

Frosting Creators of San Antonio
Take the short drive to San Antonio and see the great demonstrations detailed below. We are going to be there as a vendor - I am trying to figure out how to bring the whole store there - Randy is trying to figure out how not to bring the whole store! Hope to see you in San Antonio!

Michelle Bammarito is staying in San Antonio to teach a class after the DOS - learn how to make her stacked antique books. Michelle has been featured on Food Network's Sugar Rush and six times in various "Challenge" episodes, taking home a gold medal in 2006. The class is being held on Monday, June 29th. Lorraine McKay
Hands-on Classes in Austin!
Lorraine will be staying in Austin after the DOS and teaching a series of hands-on figure modeling classes. Hailing from Bonnie, Scotland, she is a self-taught sugar artist and is quite possibly the best figure modeler in the world! She is a great instructor - and you might know her from some of her YouTube instructional videos.

Culinary Academy
of Austin
10 Year Anniversary Celebration
July 10th
5 pm - 10 pm
The Culinary Academy of Austin is Austin's local, "home grown" culinary school. It was started in 1999 by Steve Mannion, a local chef and owner of Private Affairs Catering and local food enthusiast, Glenn Mack. The Culinary Academy of Austin has two professional programs, a 15 month Culinary Arts Program and a 6 month Pastry Arts Program.
The 10 Year Anniversary Open House Celebration will take place at CAA's campus at 6020 B Dillard Circle in Austin. There will be food and beverages served along with viewing an Iron Chef style competition and other demonstrations. Various local food related businesses will also be participating in the event.
I am a graduate from CAA and I continue to remain active with the school, serving on their advisory board. We will be going to the celebration and we will be bringing a variety of cupcakes for attendees to enjoy!
Make plans to attend. If you or someone that you know is interested in attending culinary school, attending the open house will give you an opportunity to see the facilities and meet the chef instructors and current and former students.

The French Pastry School
The French Pastry School at City Colleges of Chicago announces plans for expansion - they are adding a new Professional Cake Baking and Decorating Program - L'Art du Gâteau!
L'Art du Gâteau 16-week program will be taught by internationally renowned master chef instructors, Sébastien Canonne, M.O.F., Jacquy Pfeiffer, Nicholas Lodge, John Kraus, and Laura Ragano to name a few. This full-time certificate program is accredited by the Illinois Community College Board, and designed to meet the needs of students who want to specialize in the art of cake baking and decorating. This unique, hands-on course will focus on all aspects of creating wedding, celebration, and specialty cakes. For career changers, professionals, and novices, L'Art du Gâteau - The Professional Cake Decorating and Baking Program will help students build a solid foundation of knowledge and skills needed to achieve a successful career. Students will be prepared to excel in the cake industry after only 16 weeks.
I have had the chance to meet and get to know many of the instructors and to see the other facilities at the French Pastry School. This is truly a world-class operation with renowned instructors and top-notch facilities. I will be visiting the school after ICES this year, and I can't wait to see their new expansion.
"There is no program anywhere in the world that offers all the elements of cake baking, taste profiles, cake decoration and design for the wedding and specialty cake industry," said Master Cake Artist Chef Nicholas Lodge, one of the instructors of the program, "There is a huge need for a program of this caliber. Students will have a wealth of information that will enable them to successfully set up a wedding cake business. It's so exciting to be part of a program like this because people will really benefit from it."
The first session of L'Art du Gâteau - The Professional Cake Decorating and Baking Program will take place August 30 to December 18, 2010. Applications to the program will be accepted beginning August 1, 2009.

Sunday Decorating Classes
The Capital Confectioner's Club is hosting several classes at the store on selected Sundays. For the June class, Lisette Vergara taught her unique fondant layering technique that yields a really cool design that can be used for so many applications. The class was so much fun!
The next in the series will be on July 12th. Class is from 1 pm -4 pm. The cost is $50 and all supplies are included! The topic is Baby Shower Cakes and Yvette Humbert and Irene Hackbarth will be the instructors. I know they have some really cute baby blocks planned. You will not want to miss this hands-on class!
