Whew! Spring flew by - graduations are over, wedding season is slowing down and now we are moving into summer. Summer is such a fun time here at the store - lots of new products - lots of summer classes - the ICES Convention and lots of fun baking for summer parties.

New Product newsflash - The new Wilton 2009 Yearbook is in! That also means lots of new products. I will show you some of my favorites below.

We have some fun classes lined up for the summer - kids classes, cake baking, cupcakes, cookies and more - check the schedule below and sign-up for some classes.

The Capital Confectioner's has a great Day of Sharing planned for August 10th - see below for details.

A Two Sweet Sisters special class is being held on August 11th and 12th - look at the picture below to see the magnificent cake that you will learn to make and decorate - all while having fun with those Two Sweet Sisters!

Recipes, recipes and more recipes - look for links for some great cupcakes using seasonal and locally available ingredients, a great summery citrus cookie and pretty lemon fruit tarts. Summertime is a fun time to bake!

Don't forget - we will be closed July 4th and 5th for Independence Day.

The new 2009 Wilton Yearbook brings with it many great new products. Wilton has come out with a new line of tools - great spatulas, measuring cups and spoons, whip, scraper, blade and more. There are some fun new fondant/gumpaste tools - a great modeling tool set, impression mats and a cutter/impression set. Click below to see pictures of some of the new items!

Mark your calendar now! The Capital Confectioners Cake Club will be hosting a Day of Sharing on August 10th with some great demonstrations. The line-up of demonstrations includes:

Each newsletter we will put in some of the pictures of cakes that Kristie has done lately. Who doesn't like to look at pictures of cakes? This might give you some ideas for your cakes to decorate, or ideas for ordering a cake. If you want to order a cake, you can email Kristie at [email protected]. We only take-on so many cakes per week, and we usually max- out, so place your order as early as possible - at least two weeks in advance of your event. Class Highlights
Wedding Cake Construction

We have some great new classes coming up!

All in One Bake Shop Pastry Chef, Kristie Sasser is going to be teaching a Baking Class In the Baking Class, she will cover different mixing methods and different recipes in this mostly lecture class. She will prepare so that students will be able to see and taste them. In August she will also be teaching a special Present Box with Bow class..

In addition to a Cookie Bouquet Class coming up this Saturday, I will be teaching a Classic Petit Fours Class in early August. We will make and bake the cake layers, use chocolate ganache and raspberry fillings, top with marzipan, cut and then coat with poured fondant glaze. Students will leave with the petit fours that they make in class.

In July Sallia Bandy will be teaching a Gumpaste Flowers class. Learn to create beautiful seasonal flowers in this popular class. Also in early August Sallia will be teaching a Wedding Cake Construction class. This class is a must for anyone who wants to make a variety of wedding cakes. The class includes a great resource booklet and Sallia shares her experiences in the wedding cake business.

We have some great Kids Classes scheduled - Candy Making on July 14, Cookie Decorating on July 30th and Cake Decorating on August 4th. These classes are designed for kids 6 - 12. The kids will work on their own projects in class and then will take their creations home to share.

We made mini cupcakes for the Farm to Plate event on May 7th. Proceeds of the event benefited the Austin Farmers' Market and Sustainable Food Center. In the picture you see the lifelike veggie display cake created by our own Pastry Chef, Kristie Sasser. The ingredients used by all of the participating chefs were all from the farmers market. Our cupcake flavors included: Peach and Honey Cakes, Goat Cheese Cheesecakes with fresh berries and Chocolate Decadence mini cakes studded with cacao nibs. All of the cupcake flavors were a big hit - try these recipes for yourself! Don't forget to support your local farmer's market and buy locally!

Lemon - Lime - such a refreshing flavor for summer. This cookie combines those flavors in a light crispy cookie. Top the cookies with a drizzle of lemon juice royal icing glaze and these cookies will be sure to quench a sweet-tooth!

My Mom made the best Lemon Ice Box Pie. I remember many times that she would make it and my sisters and I would eat any leftovers (and many times there were none) for breakfast the next day.

This recipe is my variation of that pie. This time I made my own pie dough - but you can certainly use refrigerator pie dough to make the tart shells.

You can use any variation of fruit on the top - or even make a meringue and serve it that way.
