Stay On Track this Holiday!
It can be tempting to get off track this time of year with holiday parties, cookies and treats brought into the office and general holiday events and festivities.
During holiday celebration, it is acceptable to indulge on foods we don't normally have while on your MedTeam diet, but remember to follow portion control and savor the flavor. Eat what you'd like, but always remember to take sips in between bites and enjoy the foods you are consuming.

Flavorful Pork Dish with Sweet Potato Side
For those on the Maintenance Program
This flavorful pork dish goes great with the tasty sweet potato side. Complete the meal by serving this recipe with a side of steamed vegetables or a colorful garden salad.
Ingredients:
- 2 8-ounce sweet potatoes, pierced in several areas with fork
- ½ teaspoon ground cumin
- Paprika to taste
- 4 4-ounce boneless pork cutlets, trimmed of fat
Topping Ingredients:
- 2 tablespoons reduced-fat margarine
- 2 tablespoons packed dark brown sugar
- ½ teaspoon grated orange zest
- ¼ teaspoon vanilla, butter, and nut flavoring
- 1/8 teaspoon ground nutmeg
- 4 small oranges, quartered
Instructions:- Cook potatoes in microwave on HIGH setting for 10 to 11 minutes or until they are fork-tender.
- Meanwhile, place a large nonstick skillet over medium-high heat until hot. Sprinkle cumin and paprika evenly over pork chops and season lightly with salt and pepper if desired. Cook pork chops 4 minutes on each side or until barely pink in center.
- In a small bowl, stir together the topping ingredients until well-blended.
- Cut potatoes in half lengthwise, fluff with a fork, and spoon equal amounts of topping mixture on each half. Serve with quartered oranges alongside.

Carrot Cake
For those on the VLCD Diet

Minutes to Cook: 40
Number of Servings: 12
Ingredients:
- 3/4 whole wheat flour (or half whole wheat half white)
- 1 tsp baking powder
- 1 large carrot
- 2 egg whites
- 2 tbsp unsweetened cocoa powder
- 1 cup unsweetened applesauce
- 1 serving kellogg's all-bran cereal
- 3 tsp splenda
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
Directions:
Preheat oven to 350 F. Spray a 9-in. square baking pan with non-stick cooking spray. In a small bowl, mix together flour, baking soda and cocoa powder. In a separated bowl, combine shredded carrot, egg whites, applesauce, cereal, splenda and spices, mix well thoroughly. Stir all the ingredients and mix well. Pour the batter into the baking pan. Bake for about 40 min. (or until a wooden toothpick inserted in center comes out clean) and enjoy!
Top with light whipped frosting if wanted.
